Metalworking has a unique tradition in Sauerland. In 1950, BERNDES was the first company to successfully manufacture a non-stick coating for cast aluminum cookware. 4 Heinrich Berndes in 1921 at the age of 36. BERNDES – A HISTORY WITH THE HALLMARK OF GERMANY. When Heinrich Berndes opened his business in Arnsberg in 1921, the Sauerland region in western Germany already looked back on a long metalworking tradition. As far back as roughly 1800, this region ranked among the world’s largest industrial areas of the era and naturally had the capacity to produce pots and pans. In fact, ironworking was the core sector in Sauerland’s industrial development. BERNDES nevertheless tirelessly set about advancing the state of the art in cookware until aluminium was found to be the ideal material. Continuing in this vein, BERNDES was the first company to successfully produce a non-stick coating for aluminium cookware in 1950. This made it possible to harness the material’s multiple benefits – low weight, high stability and excellent heat conductivity – in producing pots and pans. Ever since, BERNDES has been regarded as a specialist and pioneer in the manufacture of premium coated cookware and has made a name for itself with its products around the world. Yet we have not stopped striving to advance our products and to live up to the legacy of our company founder and region. IT’S ACTUALLY THE RESULT OF 90 YEARS’ EXPERIENCE. What is so special about BERNDES cookware? Rolf Giese: BERNDES products have always been trendsetters. Our cookware in bright colours, with terracotta lids or premium induction bases, has changed the market for kitchen utensils. BERNDES was quick to pick up on the advantages of cast aluminium which, in combination with our specially developed non-stick coating, we ultimately made available to a broad user base. BERNDES is regarded as an expert in coatings. The company was the first to launch non-stick coated cookware on the market in 1950. How did that come about? Rolf Giese: Research into non-stick coatings first got underway at BERNDES as early as the 1940s. The aim was to develop cookware with all the benefits of cast steel but in a much lighter form. With its excellent heat conductivity, aluminium seemed like a prime candidate. Thanks to a sophisticated casting process, we achieved an intelligent material distribution that produced the necessary stability. BERNDES was consequently the first company in the industry to successfully coat aluminium with a non-stick layer. All the effort we put into exploring this relatively new metal from 1921 onwards paid dividends. How does BERNDES maintain consistently high quality? Rolf Giese: We test the mechanical and non-stick properties of every batch of our products in our very own laboratory. Any semi-finished castings whose surface quality fails to meet our exacting standards are not processed any further and simply melted down again. On that note, I should point out that we don’t waste any aluminium since the metal can be constantly recycled, 8 without any reduction in quality. What’s more, in 2014 all the materials we used – from handles through lids to semifinished coated cookware – were independently tested for food safety and rated as “excellent”. How does BERNDES manage to remain in tune with the times and meet consumers’ changing needs? Rolf Giese: By keeping in close touch with consumers, our expert sales team acts as an essential link between BERNDES and trade customers. Our online portals and the discussion forums there also provide a useful platform for responding to customers’ needs. All this information, together with buyers’ requests, local specifics as well as economic and technical feasibility assessments feed into new product innovations. All that is commonly known as market analysis boils down to simply keeping an ear to the ground and taking appropriate action, plus following your instincts when it comes to striking a chord with the market. In a bowl, combine the flour, eggs, vanilla sugar, pinch of salt and milk and mix until they form a smooth batter. Stir in the melted butter and tablespoon of rum. Allow to rest. Melt a little butter in a very hot pan before spooning in half a ladle of batter and frying for 3 minutes. Fold the cooked crêpe twice and keep warm in the oven (do not use convection) at 70°C. Repeat with the rest of the batter. Without stirring it, allow the sugar to caramelise in a tall saucepan. When it turns light brown, remove the pan immediately from the heat and squeeze the oranges and lemons into it. Be careful as it might spit. Add 1-2 cups of cream and bring to a simmer. Pour in the amaretto or Cointreau and slowly reduce until the sauce is sirupy. Briefly dip both sides of the crêpes that have been set aside in the sauce and put them on plates.
