Oatmeal Scotchies
Ingredients: 1 cup flour 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1/2 cup softened butter 3/4 cup firmly packed brown sugar 1 egg 1 1/2 tsp water - this really makes all the difference 3/4 cup + 2 tbsp rolled oats (NOT instant) 6 oz (half bag) butterscotch chipe 1 tsp vanilla extract. Directions: Preheat oven to 375 degrees. In a small bowl, mix flour, baking soda and salt. Set aside. In a large bowl, or in your stand mixer, combine butter, egg, sugar, vanilla and water. Beat on high speed until fluffy - about 5 minutes. Gradually add in flour mixture, starting and ending with flour. With a wooden spoon, stir in oats and butterscotch chips. Place 1 tbsp balls of cookie dough on to a baking sheet lined with parchment and gently press down cookies with your fingers. Bake for 12 minutes. Remove from heat, and place on a wire rack to cool. momsbistro.net
