Looking Back,
Launching Forward
It’s a new year, and we at Pilgrim’s Market are celebrating 16
years of serving our amazing North Idaho community. This
past year, we have rejoiced in growth, braved challenges,
considered the past, analyzed the present and anticipated
the future. Here are just a few happenings that were significant in 2015, as well as some new stuff that is coming up
in 2016.
• In November, Pilgrim’s Market was granted a special use permit by the City of Coeur
d’Alene’s Planning Committee to establish a “market garden” on a residential plot behind the store. We will utilize the produce grown there in our Deli. As we build this
garden, we hope to establish a model that will inspire an amendment to the City’s
code, allowing anyone in the city to “market garden” their own property. This is significant for our community! (See Wikipedia for the definition of “market garden.”)
• Cole, the Cultured Mama, has been creating a lineup of fermented foods that have
become popular with staff and customers alike. Read more on Page 3.
• The remodel continues, with new tile in the Deli, expanded Bulk and Produce areas,
and a new look for the front of the store. Change can be exciting and eye-catching!
• Our social media endeavors went into overdrive in 2015 as we launched our free
mobile app and commenced a monthly Facebook gift card giveaway that increased the
prize by $50 each month – January’s giveaway is a $450 card!
• Our Rewards Card Program has been decidedly successful since its inception two
years ago. In 2015, we rewarded our shoppers with over $85,000 in rebates, as well
as exclusive coupons and community business discounts. Now, you can also redeem
your rebates at Pilgrim’s Wellness Clinic, an integrated clinic located inside Pilgrim’s
Market. See Page 4 and Page 24 for more details.

Cole is currently working on creating an
abundance of future products for Pilgrim’s
line of fermented foods. She especially wants
to get creative with kraut. The first krauts she
put on the Pilgrim’s shelves were just plain
cabbage and salt.
“A goal of mine would be to really make some
killer kimchi,” she said. “I think I would like
to do that and just get some really funky, fun
flavors of sauerkraut out there.”
Introducing:
Pilgrim’s Own Fermented Foods
Late 2015, Pilgrim’s Market began producing its own fermented food products.
Storeowner Joe Hamilton has enjoyed the
flavors and benefits of fermented foods for a
very long time, but when he met Cole Griffin,
his aspirations to create an in-house fermentation project materialized. Cole’s husband
Jason, Pilgrim’s grocery manager, rarely took
a sick day and talked about regularly eating
sauerkraut and drinking kombucha made by
Cole.
“(My family and I)
eat fermented food
at least twice a day,
sometimes three
times a day.” - Cole
“I just thought he was going to make my
house smell bad,” Cole said. “I had no idea
what was going on.”
Four years ago, after moving to Coeur
d’Alene, she met a farmer at the Kootenai
County Farmers’ Market who told Cole about
her use of a lacto-fermentation method to
preserve the harvest. Cole then went home
and researched this preservation method.
She discovered it was highly nutritious and
could add probiotics to her diet.
She is also eagerly waiting for winter to end
and spring to arrive so she can highlight local
produce in her fermentation. Soon, Pilgrim’s
will be building a market garden directly behind the store, and Cole will be able to use
produce from our own “backyard.” “The
whole local food movement is really important to me,” she said.

“I immediately tried a batch of kimchi,” she
said. “I destroyed it and it was awful, but I
didn’t give up and I kept trying.”
Shortly after, Cole became our in-house
“Cultured Mama” and has been hard at work
creating a Pilgrim’s line of products utilizing
fermented foods.
Cole is from the Pacific Northwest and
travelled a lot before settling with her husband and two girls here in Coeur d’Alene.
Throughout her travels she lived in Hawaii,
where she first experienced a process called
lacto-fermentation. She shared a house with
a person who constantly was fermenting
food beneath their kitchen counters, even
though she wasn’t quite sure what that meant
at the time.
Now, she’s a master of this unique process.
In the first few months of operation, Cole’s
lacto lab has produced krauts, carrot coins,
dips, chutney and the popular Pilgrim’s Fire
Tonic, a drink made of apple cider vinegar
infused with tonic herbs. Producing and selling fermented foods is important to Pilgrim’s
because it’s an efficient way to add important
probiotics to your diet…not to mention they
taste delicious.
“(My family and I) eat fermented food at least

Cole said. “We all crave it now. My 16-month
old slurps sauerkraut like it’s a noodle. She
just loves it.”

Quinoa Stuffed Red Peppers
Surprisingly, red peppers contain twice as much vitamin C as oranges. Vitamin C is
necessary to absorb the iron found in quinoa. A match made in heaven! Serves four
1 C quinoa, rinsed well
4 large red bell peppers
2 Tb extra-virgin olive oil
1 C sweet onion, diced
3 garlic cloves, minced
2 C mushrooms, sliced into bite-sized pieces
2 tsp ground cumin
1 tsp ground turmeric
1 tsp ground ginger
1 tsp ground cinnamon
4 C fresh spinach, roughly chopped
½ tsp sea salt
1 Tb fresh-squeezed lemon juice
¼ C shredded Parmesan
Directions:
Prepare quinoa and preheat oven to 350°F. In a large skillet,
heat olive oil. Add onions and sauté until softened, about 5
minutes. Add garlic and mushrooms, and sauté another 5
minutes or so. In the meantime, cut the tops off the red peppers and scoop out membranes. Add spinach to the sauté. Stir
continuously until spinach becomes a dark green. Don’t overcook! Remove from heat and combine sautéed vegetable with
cooked quinoa in a large bowl. Add salt, lemon juice and toss.
Stuff peppers and place in a glass or ceramic baking dish with
½ inch water in bottom. Bake for 35 minutes or until peppers are soft. Sprinkle 1 tablespoon of
cheese on each pepper and return to oven for 3-5 minutes.

Grain-Free Sunbutter Cookies
The main ingredients of traditional cookies are enriched wheat flour and sugar, which are pro-inflammatory, leading to abnormal glucose and fat metabolism. These cookies embrace the anti-inflammatory
properties of sunflower seeds and chia seeds, coconuts and cocoa powder to create a mindful indulgence
that is anti-inflammatory, nutritious and delicious! Makes 18-20 cookies
1 Tb chia seeds
3 Tb filtered water
1 C organic sunbutter (no sugar added)
2 Tb unrefined, virgin coconut oil
2 Tb grade B pure maple syrup
1 tsp vanilla extract
¼ C 100% pure cocoa powder
½ tsp aluminum-free baking soda
¼ tsp sea salt
Directions:
Preheat oven to 350°F. Combine chia seeds and water in a small mixing bowl, let set for a few minutes to gelatinize. Add all other wet ingredients to chia and
vigorously combine. In a separate small bowl, combine all dry ingredients, then slowly add to wet batter. Roll into 18-20, 1” balls and place on a cookie sheet.

Sweetly Green Detoxifier Smoothie
Starting the New Year with a detox? This delicious green smoothie is a great way to engerize and start your day.
Makes one smoothie
Handful of green grapes
1 pear
Juice of 1 lime
2 kale leaves, with or without stems
2-3 sprigs fresh cilantro (or mint!)
1/4 medium cucumber
Pinch of sprouts
Water
Directions:
Combine all ingredients in a blender and blend until smooth. Note: Using a high-powered blender, such
as a Vita Mix or Ninja, is best.

How did you come to work at Pilgrim’s Market?
I’ve worked here for nine years; I started in 2006. Natural foods
were something I wanted to learn more about, so working at a store
like Pilgrim’s could provide that. I’ve done nearly everything here. I
worked in cashiering, grocery, gifts, and now I’m the Bulk Department
Manager. I only planned on being here for a couple of years, but nine years later, here I am. I guess I
found myself a little niche that I really enjoyed.
What do you enjoy most about your job?
We have a collective group of people, who create a sense of community. I enjoy the way we get to share
ideas. Whether it’s a recipe or how to prepare something, I enjoy showing customers new ingredients
and awesome, new stuff that they may have never heard of before.
What experience do you desire for customers in the Bulk Department?
I want to offer our customers a friendly shopping experience. I want them to walk away feeling satisfied
and maybe that they’ve even learned something about their food.
What would you like customers to know about the Bulk Department?
Buying bulk allows you to buy quality food while reducing waste. You can also buy what you need
without buying any excess and save money while doing so, especially when it comes to things like spices.
