dense, whole foods that contain protective nutraceuticals like antioxidants and essential amino acids.
Rediscovering Rice
For centuries, rice has been a staple food, but amazingly,
nobody ever knew how nutritionally powerful it was until a
recent technology unlocked its full nutritional potential.
Now, doctors, scientists and health practitioners around the
world are marveling at the surprising treasures that are
hidden within a tiny seed of rice.
Evidence suggests that rice was cultivated as early as 9000
B.C. Today it is the most consumed cereal grain and a
common staple for most households. To half the world’s
population, rice is life.
It provides more than one fifth of the calories currently consumed by humans and world production
exceeds 600 million tons per year. Rice has always been power-packed with protein, vitamins, minerals,
phytonutrients, and more than 120 antioxidants, cofactors and catalysts. But up until recently, only a tiny
fraction of its nutritional value was available for consumption because most of the nutrients were routinely
destroyed or discarded during the milling process.
When rice seeds are milled, the first step removes the outer hull,
resulting in what is commonly known as “brown rice.” The next
step removes the bran and germ from the kernel, leaving “white
rice.” This step strips most of the nutritional value from rice
because although the germ and bran comprise only 8% of the
kernel, they contain 65% of the nutrients. For centuries, white
polished rice (which only provides a meager supply of empty
calories) held prestige and cultural importance, while nutritious
brown rice was considered substandard “poor man’s food” or
animal feed.
Once people learned that most of the nutrients are in the bran and
germ, health conscious individuals started eating brown rice.
Some people even consume rice bran as a supplement. But this
still doesn’t yield the full nutritional value of rice!
When rice is removed from its hull, an enzyme called lipase is
released and immediately starts to turn the healthy oils in the rice
bran rancid. Within hours, bran that has been separated from the
kernel becomes unfit for human consumption and is discarded or fed to farm animals. Untreated whole
brown rice (with the bran intact) turns rancid very rapidly.
Rancid foods are carcinogenic (they can increase your chance of getting cancer), so to avoid this problem,
manufacturers starting treating rice. They halt the activity of the lipase enzyme by using chemicals,
microwave heat and other invasive methods. Unfortunately, these methods damage valuable, heat-sensitive

phytonutrients. The resulting rice bran and brown rice products have long shelf lives, but they are not
nutrient rich.

Free radicals are a natural by-product of metabolism in the body, but excess numbers of
them are created when the body is subjected to things like toxins, pesticides, cigarette
smoke, stress, illness, or physical exhaustion.
A free radical is a highly unstable molecule or atom with an unpaired electron. In order to regain molecular
stability, free radicals attack other molecules and steal electrons. When attacked molecules lose electrons,
they also become unstable and the damage continues in a downward spiral of destruction. Free radicals
play a fundamental role in disease and aging because they can damage any type of cell, including brain
cells and DNA.

Studies have shown that Sterol/Sterolins and Omegas 3, 6 & 9 can increase natural killer (NK) cell activity

Gamma Oryzanol (Ferulic acid) is known to be anti-mutagenic. Inositol, IP6, Polyphenols, Fiber,

Numerous epidemiologic studies reported an association between high fiber intake and reduced incidence
of colon cancer and breast cancer. A 1992 study by researchers at Harvard Medical School found that men
who consumed only 12 grams of fiber a day were twice as likely to develop precancerous colon changes as
men whose daily fiber intake was about 30 grams. Scientists theorize that insoluble fiber adds bulk to stool,
which in turn dilutes carcinogens and speeds their transit through the lower intestines and out of the body.
12 studies found a link between high fiber intake and reduced risk of breast cancer. In the early stages,
some breast tumors are stimulated by estrogen circulating in the bloodstream. Scientists believe that fiber
may hamper the growth of these tumors by binding with estrogen in the intestine, preventing it from being
reabsorbed into the bloodstream.
IP6 has been shown to exhibit significant anti-cancer activity and to inhibit tumor cell growth in colon,
intestinal, and liver cancers.
Carotenoids (including the Alpha Carotene, Beta Carotene, Lutein, Lycopene, Zeaxanthin and
Precryptoxanthin/Cryptoxanthin found in stabilized rice bran) offer powerful protection against many

Lycopene in particular has been associated with lower rates of prostate cancer.

Some people say “you are what you eat”. But everything you eat doesn’t get digested, assimilated and

and low in saturated fat are associated with a reduced risk of certain cancers, diabetes, digestive disorders,
and heart disease.
Doctors and scientists recommend an increase in fiber for disease prevention and treatment of the
following: Heart Disease, Constipation; Cancer (especially of the colon), Hemorrhoids, Diverticulitis,
Hernia, Varicose Veins, Obesity, Diabetes, and Hyperlipidemia. But experts say that most adults only get
about half the fiber they need to prevent type II diabetes, heart disease and other problems.
The suggested minimum intake of fiber is about 14 grams for every 1000 calories consumed. Men need
30-38 grams per day and women need 25-30 grams per day— preferably from whole foods. Most children
today are only getting about 20% of the fiber they need each day. That, along with poor diet, helps to
explain why there is an epidemic of children developing type II diabetes before they reach their teens.
There are two important types of consumable fiber. Soluble fiber forms a gel in the digestive tract and
slows down the digestion of carbohydrates so that sugar is released and absorbed more slowly into the
bloodstream. This is the type of fiber responsible for lowering cholesterol and regulating blood sugar.
Insoluble fiber passes through the intestines intact. It attracts and absorbs water which can speed up bulk
and promote regular bowel movements. It also helps to remove toxic wastes and maintain optimum the pH
needed to maximize digestive function and help prevent colon cancer.
