Steely grey in colour, it is often the largest egg with notes of walnuts and cream and hints of both the sea and finest quality salt. 30g £375 50g £700 Vodka recommended: Beluga Gold Line £40 per 50ml ROYAL BELGIAN OSCIETRA Osceitra produces its eggs after 8 years. It has a nutty, mellow taste, which develops into a buttery sweetness similar to lobster, and a golden brown to slate colour. Bombay Sapphire Gin, Homemade Rhubarb and Raspberry Cordial, Aperol, Grapefruit Bitters, Lime Juice JALISCO SMASH The “Smash” family of drinks have deep roots in American cocktail history. These cocktails were created and defined in 1862 by Jerry Thomas, the father of cocktail making. Bacardi Superior, Shiso Leaves, Fennel Seeds, Lime Juice, Cucumber BONAPARTE MULE The Rue de Rivoli was the architectural inspiration for The Ritz London, which was named after Napoleon’s victory in Northern Italy. Here we pay homage to the French Emperor. The Bermudian national drink is reformed in this refreshing and spicy offering. Here we honour our labyrinthine cellars by composing a cocktail list that incorporates forgotten spirits from the 1950s to 1980s and some of the unusual, rare spirits from around the world. NEGRONI ~ £90 It was Count Negroni who first decided to throw an extra measure of Gin into his Milano-Torino (Americano), dissatisfied as he was with its lack of backbone. Here we pay homage to the Count by offering this unique take on an Italian staple. 1950s Gordon’s Gin, 1950s Campari Bitter, 1950s Martini and Rossi Red Vermouth EL PRESIDENTE ~ £350 It is the aristocrat of cocktails and is the one preferred by the better class of Cuba.
