Meet our guest editor Matt Moran, one of Australia’s most loved and awarded chefs, and owner of ARIA. Wow, how time flies! I can’t believe it’s been seven years since I opened ARIA in Brisbane. In 2009 I saw how Brisbane diners were really engaged with the industry and hungry for more, so couldn’t resist the opportunity to take on the site at Eagle Street Pier – right on the water at the edge of the CBD with great views to the Story Bridge. Since then, the Brisbane City dining scene has definitely shifted up a gear and it’s only getting better. There are more offerings now than ever before, whether it’s fine dining to something more casual, espresso nooks to cafes, or pubs to pop-ups. So I hope you enjoy the inaugural issue of Dish, The City’s food and wine guide, packed with the best places to eat while you’re in Brisbane. I am sure you will find a few favourites in your travels and don’t miss exploring the laneways for some hidden gems. Enjoy, “We are very lucky to be surrounded by some of the best producers in Australia!” Matt Moran #BRISBANECITYFOOD | 3 award winners Tip your hat to these critically acclaimed dining experiences Taking out top honours is Esquire, a degustation restaurant with all of the sophistication minus the pretentiousness. Promising a commitment between diner and kitchen, Esquire offers a multi-course menu that directly reflects market availability. Joining the three-hat brigade is Urbane, offering a delightful fusion of modern and traditional sensibilities with enticing menus that can’t be pinned to a genre. Image: e’cco bistro Image: Urbane. Photography: Scott Burrows THREE HATS TWO HATS The two-hatted club boasts exceptional offerings. Legendary chef Matt Moran’s ARIA is a fine-dining experience centred on a seasonal menu that oozes elegance. Patrons can look out over the river and Story Bridge for a view that perfectly complements the visual beauty of the food. Adding to the excellence is Esq., the more casual and à la carte other half of Esquire. Esq. provides a simple (but no less delicious) menu focusing on ‘hero’ ingredients that are locally and sustainably sourced. Just a little further out is chef Philip Johnson’s longstanding e’cco bistro, based around honest, no-nonsense food made with the best local ingredients. Image: BlackBird Bar & Grill ONE HAT The City is studded with one-hat gems, covering a huge range of tastes and genres. From international cuisine to local flavours, there’s a hatted restaurant to suit your taste. Along Eagle Street there is boundless Japanese elegance at Saké, modern Italian delights at Il Centro, gastronomic wonder at Alchemy Restaurant + Bar, and contemporary opulence at BlackBird Bar & Grill. Fun and finesse are what Public is all about, while Thomson’s Reserve in The New Inchcolm Hotel and Suites takes a progressive approach to its cuisine. Restaurant II focuses on advanced Australian fare with a French twist, and OTTO Brisbane brings Italian a new edge with modern flair. Finally, The Survey Co. serves inventive modern Australian dishes in a hidden industrial laneway setting. #BRISBANECITYFOOD | 5 breakfast to brunch Sit and stay, take away, feast or graze with the best breakfast and brunch spots The City has to offer DOUBLE DOSE Nestled near the Edward Street entrance of Wintergarden, Gramercy Espresso offers freshly prepared homemade eats and well-crafted coffee. CORNER QUEEN AND EDWARD STS | 07 3220 1888 #BRISBANECITYFOOD | 17 meet the locals Brisbane City is brimming with exciting locales, and we wouldn’t get to enjoy them if it weren’t for the brains behind the businesses. Take some time to meet the friendly faces behind your favourite inner-city eateries and local boutiques TIM JOHNSON Asian cuisine: It’s hard to beat Saké for its kingfish sashimi. Tim Johnson isn’t new to the Brisbane food scene, but his most recent success stories include Corbett & Claude – an eatery housed in the iconic Corbett Chambers where commercial travellers would once come together to eat and drink – and Latin-inspired Comuna Cantina in Albert Lane. Breakfast spot: Felix for Goodness – everything is fresh and healthy. Laneway secret: Super Whatnot on Burnett Lane is always a favourite. Born in Brisbane, Tim knew he was meant for the hospitality business at the age of 13. Beginning his career at McDonald’s, he managed 35 stores by the age of 22 before travelling the globe with a keen interest to learn about branding and what drives consumer needs when it comes to dining out. Riverfront dining: The use of local produce at ARIA is so impressive. NICK CHIU Nick Chiu, co-owner and operator of Apartment, Ben’s Burgers, The Bleachers and A Love Supreme Records, is all about providing quality products and building businesses that complement the city and foster Brisbane’s underground street culture. Nick, along with his brother Ben, started Apartment 10 years ago, when an overseas trip sparked inspiration to create a tiny boutique. Since then they have put in long hours and their business interests have grown significantly, proving hard work really does pay off. Meeting spot: Strauss or Felix for Goodness are my regular spots. 18 | BNECITY.COM.AU Dine and dance: Shake it at Brisbane Square Latin on Friday nights. Best secret bar: Super Whatnot does the good music thing! Budget bites: You can’t beat the Asian spots around Elizabeth Street. GIUSEPPE PETROCCITTO You could say that Giuseppe Petroccitto has hospitality in his blood, with an Italian heritage and a family history of business ownership. Giuseppe opened his first espresso bar in 2007, soon followed by Chocolate Soldier, Bellezza Espresso Bar and Espresso Veloce. He then diversified from macchiatos to margaritas, opening picturesque Bar Pacino on Eagle Street. Giuseppe has taken on new heights with his new venture Santa Monica Group, which features Espresso Emporium, Metropole and Santa Monica in the newly developed 180 Ann Street complex. Cheat meal: Miel Container has supported my cheat days for a while! Brekky on the run: A little place called Punch Espresso on Mary Street. LAURA CHONG It wasn’t too long ago that lawyerturned-fashion designer Laura Chong gave up the courtroom for fashion to establish local label 400 Co. The unique boutique specialises in women’s corporate fashion and is situated on Edward Street alongside the likes of Gucci and Hugo Boss. After initially launching as an online store, Laura realised that there was a lot to be said for bricks-and-mortar stores, where customers can feel the quality of the fabrics and see and try on the garments.
