We have been operating our Italian
restaurants since 1996, but it was not until
2006 that we decided to franchise our
successful concept.
Our goal is to ensure that
we pass on our experience
and ‘know-how’, without
compromising any of
the original essence.
As restaurateurs of Sorsi e Morsi™ our
goal is not just to have “units”, but to
create more quality restaurants that have a
personality similar to our first establishment.

Our menus are inspired by traditional Italian
recipes, to which we add our own special
and contemporary touch.
We offer to our clients high quality
italian products under D.O.C. (Controlled
Denomination of Origin). This also allows
us to distance ourselves from stereotypes
unfortunately associated with many Italian
restaurants when setting up abroad.

As mentioned earlier, our focus is not
just to open franchise units, but to create
restaurants with soul and personality. One
of the risks when expanding through the
franchise system is the potential loss of
originality and ultimately becoming a mere
copy. At Sorsi e Morsi™ this is a risk that we
are not willing to take!
Each restaurant will have
a different personality,
depending on its location
for example, in a shopping
center, downtown or
next to the sea.

Our relationship with the franchisee would
not be to impose, but to cooperate, which
is why we would like to involve them
from the outset; listening and making
decisions together when appropriate.

Our
For the ‘Il Magazzino’ (Central Purchasing
Department) it is paramount that we
always obtain the best raw materials. Our
goal is to get the best product at the best
price for our network of restaurants.
In our central kitchens, the executive chefs
of Sorsi e Morsi™ consistently aim to create
new and original dishes, always striving for
the perfect combination of traditional Italian
cuisine fused with new flavors and textures.
It is through the creation
of our cookbook,
“il Ricettario”, that we
can offer, and above
all ensure, the highest
quality in our dishes.

“Il Ricettario” allows for the creation of
extremely tasty dishes. In order not to lose
any of the original flavors that are lost with
fourth and fifth range foods, we would
only ever use fresh ingredients and freshly
prepared products.
The recipes in our cookbook are priceless.
They are so thorough that we would not
require professional chefs, but rather
people with a professional attitude and a
desire to learn. To prepare a dish using this
very useful tool is extremely simple.
