Le Baladin Panettone Alla Birra has been made in the traditional style of true Italian panettone, but has also been enriched with Le Baladin Xyauyu Riserva Beer 2007, a double-malt, savoury dessert beer. As an inspired collaboration between Le Baladin brewer Teo Musso and Max Albertegno from Albertengo Panettone, it took several experiments before the final recipe was decided upon that allowed the fragrance, colour and texture of the panettone to blend perfectly with the savoury-sweet note of the Xyauyu beer. Prepared in the traditional panettone style, it is decorated beautifully and simply with an almond glaze, and comes in two styles: with raisins or with raisins and candied fruit. A perfect gift for anyone who appreciates Italian heritage, panettone and craft beers. With extensive business experience and a long family history in wine and food he quickly saw the potential in Australia for Italian products. After importing quality Italian goods to Australia for almost 30 years, L.G. Di Santo had his first Enoteca Sileno retail showroom opened by the Italian Ambassador at 20 Amess Street, Carlton North in 1982. The shop attracted lovers of Italian food and wine from all over Australia and longstanding customers still remember the cramped and cluttered Amess Street store with great affection. In 2004, 14 years after opening the original Enoteca Sileno, the Italian Ambassador once again cut the ribbon, this time at 920 Lygon Street. The new building included a restaurant and wine bar which act as a showcase for specialty Italian regional foods and wines. About Le Baladin Brewery Teo Musso is the brewmaster of internationally renowned Birrificio Le Baladin. A modern day renaissance man who plays music to his ferments, he opened his brewery in Cuneo in 1996. Not wanting to be limited by regional influences, among his left-of-centre creations he set about making an oxidised beer in the style of sherries form Jerez. The result is the Xyauyu which is smooth and silky, like candied plums and caramel, infused with fino sherry. About Albertengo Panettone Panettone is a type of sweet bread loaf, originally from Milan, usually prepared and enjoyed for Christmas and New Year. As master panettiere, Max Albertengo uses the same fine ingredients (flour, yeast, eggs, butter and cane sugar) that his family have used since 1905. Panettone can be made with many different flavour combinations including fruits, nuts, chocolate, liqueurs, spirits and moscato. He is the first panettiere to add beer.
