Our raw materials, the seaweeds, come from a
local collection. Wild seaweeds are collected by
professionals on the sea shore or in open sea,
in their natural habitat. The transformation
process respects the quality of the seaweeds
and the processes respect the environment.

Over time, ALBERT VIEILLE SAS, founded
in 1920, has come to embody the history and

for the exquisite moment when they become

NEW PRODUCTS
Our coffee takes the form of a small, bushy
shrub and is grown between 1,000 and 1,500
meters’ altitude on the volcanic range south
of El Salvador. Located between the Tropic
of Cancer and Ecuador, the volcanic soils of
El Salvador produce very aromatic beans.
Our absolute, the product of one of the finest
coffees, Coffea arabica L., has a powerful,
enveloping smell characteristic of freshly
roasted coffee. In the middle of spring, the
coffee tree produces white flowers with a
jasmine fragrance. The mountains, when
covered with these white blooms, make a
magnificent sight. It is not until November
that the first red fruits of the coffee tree
(called “cherries”) appear. Their centers
contain two seeds, or “beans,” surrounded
by a mucilage and fleshy skin. From January
to April, the cherries are stripped from the
branches: The mature cherries are the ones
selected to undergo a variety of processes,

including roasting. These roasted beans are what
we use to create our exquisite coffee extract. A
veritable explosion of rich pleasure, our coffee
absolute, with the characteristic notes of freshly
roasted beans, reveals a dry woodiness tempered
by cereal and vanilla notes.
At the time of harvest, the cherries of different
maturity stages coexist on the same branch of the
coffee tree. The green and red cherries are then
separated in water based on their differing densities
before being dried. Immature cherries are removed
from the production process, because they can
significantly alter the coffee quality. The red cherries
are taken to processing units, called beneficio, to
be wet processed, meaning washed, pulped, and
cleaned of the mucilage. The resulting beans are
then sun-dried for two weeks in patios. The beans
are next stripped of their membranes before being
roasted. Then they go through many additional
processing steps and filtration stages developed in
our research and development laboratory to create
our Café Sublime absolute.

HPBioTECH proposes innovative processes based on high hydrostatic pressure technology
(HHP). Such processes open new way to three main innovations. Active substances extraction
with ordinary temperature, even low temperature (opening the access to new substances)
with no aggressive solvents for the environment and very short times compared to thermal
processes. Microbial decontamination of Cosmetics while protecting their properties
integrates the COSMECLEAN approach with the objective to suppress preservatives. The
control of the texture is also an important challenge.
ACTIVITIES
HPBIOTECH can offer successively:

study of feasibility for the selected
problematic (as examples: a new HHP
process able to extract selectively an
active substance from a vegetable
or the development of a pathogen
reduction HHP process that will also
preserve most of the properties of the
Cosmetics). This study constitutes a
GO/NO GO step before the optimization
of the process.

he optimization of the process with
two main objectives: the objectives
of the process itself (for example
the inactivation of a broad range of
pathogens and the preser vation of
the constituents of the product) and
the cost of the investment (in this type
of process, these costs are mainly
correlated with the pressure level and
the process duration ).
T h e r e g u l a t o r y, e co n o m i c a l a n d
industrial validations of the process
at the pilot scale, representative to the
industrial equipment. This step will also
include the design of the packaging for
the product to be treated under high

Monoï de Tahiti is the first cosmetic product to have obtained an Appellation of Origin. Since
April 1992, Monoï de Tahiti ingredients and production process have been strictly defined
by decree:“Monoi de Tahiti is the product obtained by macerating Tiare blossoms in refined
coconut oil. This oil is to be extracted from mature coconuts gathered from Cocos Nucifera
trees growing in the coral soil in the geographic area of French Polynesia exclusively. Only
«Tiare» flower buds from the Gardenia Tahitensis species and of Polynesian origin are
acceptable.
