The meal was served to over 3,400 students and guests. The menu included chicken, home-made whole wheat rolls, mashed potatoes, salad, and fresh strawberries. The menu and meal was very well received by students, faculty, staff, parents of students, and school board members. Harrisonburg City Public Schools’ School Nutrition Director, Andrea Early, and the Food Service personnel are expanding the use of local lettuce and produce on salad bars in the City’s elementary, middle, and high schools to make local food an everyday occurrence and feature in cafeterias and the school system. Andrea and her colleagues are currently working with a local meat processor to source local ground beef for entrees and ingredients such as tacos and spaghetti sauce. These farm-to-school efforts and initiatives are important steps in supporting Shenandoah Valley agriculture, reconnecting students to the farming community, and educating people on where their food comes from. These schools, colleges, universities, and institutions have made an effort to use local ingredients from local farms when possible. They also support local food production in various other ways.
