Seoul
heart
Seoul is the heart of South Korea. It’s been an important hub in Asia for
hundreds of years and is situated central to some of Northeast Asia’s largest
cities. In fact, Seoul is just a short flight from Shanghai, Tokyo and Hong
Kong. As with my Korean Air Business Class feature in this same issue, I
was really in for a treat. The city delivered so much more than the limited
expectations that I arrived with. My time in Seoul exposed me to the contrast
between beautiful old-world mystique and a modern culture obsessed with
friends and good times. I was also introduced to their intensely fiery cuisine
that I immediately fell in love with. This spicy city has so much to offer, I was
left wanting more.

Whoever first said “first impressions matter” was onto
something. Your first impression of a place is usually one of the
most vivid memories you retain. That’s why arriving at an airport
after a long flight can be the difference between a mediocre trip
and the start of an exciting adventure.
Incheon International Airport ticks all the boxes – and then
some. It’s a superb introduction to Seoul, with efficient
processing and quick transfers to connecting flights throughout
Northeast Asia. This is even more amazing when you consider
that Incheon handles 35 million passengers and 230,000 flight
movements every year.
If you’re travelling long haul, you can use their free amenities,
including showers, Internet lounge, museum and children’s
playroom. Cultural art performances and classical music concerts
are periodically staged, to provide travellers with an experience
out of the ordinary. There are even transit hotels with rooms at
US$45 for six hours, so you can freshen up before continuing on
your journey.
“Seoul is a city of wealth. Its
streets and parks are meticulously
planned and groomed.”
But if Seoul is your final destination you’ll simply appreciate the
leading-edge facilities that make Incheon a great introduction to
the country. No wonder it’s won Best Airport Worldwide by ACI
for seven straight years, as well as the 2009 World’s Best Airport
award from Skytrax. We left the airport impressed and ready to
see what else this city had to offer.
Seoul’s slogan is ‘Infinitely Yours’ and this really sums up the
experience you’ll have. My short stay of just three days was
packed with activity and I just scratched the surface. The
uniquely Korean charms I encountered are literally inexhaustible.
From the beautiful and quaint art-focused markets to the
bustling central city’s vibrant nightlife, Seoul is a multidimensional city with a collective desire to constantly improve.
There is much construction on the go and the city has big plans
for the future.
Seoul is a city of wealth. Its streets and parks are meticulously
planned and groomed. You can tell the city has been looking
ahead ever since they hosted the Olympics in 1988. The city
has never looked back and the development is considerable,
rivaling the likes of Dubai and Singapore. Seoul has invested
in developing an urban landscape that features hundreds of
parks and scenic walkways along the river. It’s on a massive
scale and on the weekends these urban park areas fill up with
local families.
Cheonggyecheon Stream and the Hangang River are great
examples of these very green parks that are taking form around
the city. Cheonggyecheon Stream goes for a very long way and
it’s a better place to cycle rather than walk. From here I took
a river cruise down the Hangang. You see the city landscape

it dances along the foot of the bridge. The light show is very
entertaining particularly as it’s done on a massive scale.

Seoul is a city that delivers. It delivers on so many levels. On one
hand it’s a cultural immersion, on the other it’s a modern and
vibrant city. All too often in our journeys around the world our
expectations are not met, sometimes they are met, and rarely
are they exceeded. While my three-day stay in Seoul was only a

South Africa’s best lodges
There’s something about the air in Africa. It’s almost magical. It has this way of making
simple moments, like sundowners on a deck near a waterhole, seem so much more vivid
and unforgettable than anywhere else in the world. Okay, true; sundowners, decks and
waterholes have a lot of their own charm... but it’s experiencing it in Africa that takes it to a
whole new level of astounding.
The same can be said for luxury safari camps – not many places in the world do lodges quite
as well as South Africa. The incredible location, the tasteful décor, the faultless hospitality
and of course, ‘the air’, all combines to create an experience that you’ll simply never get
enough of, no matter how many times you sample it.

Chitwa Chitwa Private Lodge,

This exquisite all-suite lodge owes its name to a majestic
giraffe bull who once shared residence at this African lakeside
retreat. His presence is still felt today in the beautiful surrounds
of the 63,000 hectare Sabi Sands, approximately 1.5 hours by air
from Johannesburg.
The setting is picturesque and borders one of the larger lakes in
the reserve, a popular drinking hole for wildlife. Lounging areas
in the main lodge area provide excellent viewing and an apparent
seamless transition into the natural environment beyond. The
lodge has a distinctive charm that takes elements of the natural
beauty of the bushveld and brings them inside to the inspired
interiors of the eight suites. An additional two bedroom suite
and the secluded ‘Chitwa House’ accommodation complete with
private butler provide for a variety of accommodation options to
suit both couples and families.
Experienced Shangaan trackers take twice daily guided safari
excursions to guide and seek out the ‘Big Five’ and other abundant
wildlife in the area. In between game drives the Chitwa Chitwa
wellness spa and fully-equipped gym beckon.
Children are welcome at the lodge and can enjoy a specially
designed eco-experience that will introduce to them the
beauty of the bush as well as foster a greater connection with
the environment.

Any question as to whether the fat lady has serenaded the

Musical notes not only unite to form to the logo of the hotel,
they also serve as handles on the entrance door. The Madison is

From the foyer to the rooms, the jazz influences in the hotel’s

Relax in New Orleans – Louisiana
Serenity is not often the first word that comes to mind when
describing New Orleans. After all, tucked into the heart of the
city’s French Quarter is Bourbon Street, one of the largest party
streets in the U.S. (even when not hosting the annual pre-Lent

Underbelly, a restaurant determined to tell the city’s story
through food.
The large Asian and Hispanic influence in Houston is represented
on the restaurant’s menu, which includes locally sourced produce,
meat and seafood. The Asian dumplings are one of Chris’
recommendations well-worth indulging in.
The food is nearly upstaged by the restaurant’s interior aesthetics;
a hall-of-fame style wall near the entry features photographs of
places and people that have inspired Chris, while a meat curing
room and wall of pickles spice up the visual pleasure in the
dining room.
Houston is a seemingly predictable business destination from the
freeways, though the city’s best spot may come in anything but
typical locations.

Four Seasons
Hong Kong
Revisiting a property is not something that we usually consider. We have already
conducted an extensive feature of the Four Seasons Hong Kong some four years ago
and there are a number of new properties that have been developed since. So on one
hand it would be natural to sample the newest and hottest properties Hong Kong had
on offer, but on the other hand, it was an opportunity to visit an old friend – a hotel
that still ranks among our top five ever featured in the magazine. We chose the latter.
We had heard that there had been some significant changes at the property and that
we should definitely check it out.

They make a concerted effort to get you

an 18-kilogram Pacific barracuda on a fishing charter, snorkel
amongst brightly coloured tropical fish and study marine life in

It’s surprising how much land-based adventure I’m able to fit
into my short stay on Niue. The island’s 64km ring road can
be driven in two hours and cycled in four, so access to the
interesting activity sites is easy. I have ample time to take a
guided tour of a limestone cave system, walk in the rainforest
with an expert ebony carver, visit a taro and banana plantation,
trek through coral-encrusted moonscapes to secluded fresh
water grottos and hunt wily coconut crabs in an eerie, dark
forest – the creatures a delicious midnight feast.
I attend a church service in Hakupu Village, home to former

beautifully with the powerful deep base tones of the men.
Eating my breakfast on the Matavai Resort sundeck with

For everyone who watched TV in the 1980s, the city of Miami left an indelible
impression. We’re talking pastel tones, Art Deco buildings and sun-baked beaches, all
accompanied by a throbbing rock soundtrack. Crockett and Tubbs may have handed
in their detective badges since the end of the Miami Vice era but the city they roamed
retains its flashy glamour. Miami is one of America’s favourite playgrounds and the

found the service ultra-attentive but were
left slightly flat by the food. The menu is
ambitious – promising much but not quite

Amangani, Jackson, Wyoming, USA
If you’ve ever been lucky enough to stay in an Aman resort, you’ll know all about
their transcendent level of comfort and magnificent settings. If you haven’t yet had
the pleasure – well, why not head to Amangani next time you’re in North America?
Over 2,000 metres above sea level, Amangani is surrounded by the Teton Range and
overlooks blissful mountain meadows. Imagine sinking into its heated swimming pool
on the terrace at sunset, or unwinding beside a roaring fire as the snow drifts past
your window. This may not be how The West was won, but it’s certainly a great way
to soak up its unique ambience in the 21st Century.
Chalet White Pearl, Val-d’Isère, French Alps, France
You’ve decided to take that long-awaited skiing holiday in the Alps, which is perhaps
not an every-year occurrence. Flying that little bit further to the snow calls for some
extra luxury on arrival. Look no further than the designer chic of Chalet White Pearl
in Val-d’Isère, just a 10-minute walk from the Funival funicular in La Daille. Architect
Philippe Capezzone has created a fabulous combination of minimalism and classic
luxury spread over three floors. It sleeps up to 10 guests in five ensuite bedrooms,
so you’ll be set for the ultimate Alpine house party. For après ski, there’s a magnificent
indoor swimming pool with jets to massage your aching muscles.
Copperhill Mountain Lodge, Åre, Sweden
The Swedes know a thing or two about superb design, as well as making the most
of winter. Combine the best of both and you have Copperhill Mountain Lodge. Part
of the Design Hotels™ Group and perched on the tree line, this sleek modern lodge
was built in an area that’s been attracting tourists since the late 19th Century. Come
in winter for the skiing, or take advantage of the superb natural setting and fabulous
landscapes during summer. Furnished with artworks from leading Scandinavian artists,
Copperhill Mountain Lodge gives off an air of refined tranquillity and tasteful luxury.
The food draws inspiration from the local area, with sustainably produced ingredients
from the surrounding fields, forests and lakes.
Cervo Hotel, Zermatt, Switzerland
We’re huge fans of boutique hotels. Done well, they offer a hospitality experience
that’s hard to match, with highly personalised service and immaculate attention to
detail. Now imagine a boutique hotel in one of the world’s most spectacular settings
– in the heart of the Swiss Alps, with views of the jagged Matterhorn. That’s the
package on offer at Cervo, which is part of the Design Hotels™ Group. The style could
be described as ‘chic chalet’ with clean lines, smooth grained wood and welcoming
fireplaces. There’s an excellent restaurant on the premises, but what really grabs
our attention is the outdoor terrace with views through the pines to the looming
Matterhorn. Bring your camera.
The St. Regis Deer Valley, Park City, Utah, USA
Ski fanatics will need no second invitation to visit Park City in Utah. One of the world’s
top ski areas, this is the perfect venue for an action-packed holiday. Deep, dry powder,
long downhill runs, stunning mountain scenery – Park City has it all. Naturally, you’ll
want to stay in style, so book yourself into The St. Regis Deer Valley. Utah’s premier
mountain retreat offers spacious suites with views of the Wasatch Mountains. The
look is a blend of rustic elegance with modern style. And right outside your door is
Deer Valley’s 2,026 acres of prime ski and snowboard terrain. No wonder it’s been

outdoor pool, full service ski operations and a restaurant, it really delivers to the

Very few people gain entry to Bhutan, as this tiny Buddhist kingdom in the Himalayas
is determined to preserve its traditional culture and awesome natural environment. If

Unlike its pompous neighbours in South America, Chile
takes on a quiet and unassuming role in travel and tourism.
However, one step into this country will make a believer out
of any traveller. Being the longest country in the world, Chile’s
climate varies as you travel from one point to the other, and
its land straddles desert climate in the north, Mediterranean in
the centre, and tundra climate in the south. Bordered by the
Pacific Ocean and the Andes Mountains, Chile also boasts long
stretches of beach and soaring alpine ranges.
The best base for exploring the region is San Pedro de
Atacama. San Pedro is a small village that used to be the centre
of Atacama culture, and you can learn all about the local history
and cultures dating back to the Atacameño, the Incas and
Spanish colonials. The Padre le Paige Museum is where you can
see mummies and other local archaeological finds. The Pukara
of Quitor is a fortification of the Incas that they built to protect
themselves from other neighbouring tribes. The Village of Tulor,
discovered in 1956, dates from between 800BC and 500AD,
and was once home to one of the oldest human settlements in
the desert.
Just a few kilometres outside of San Pedro, visitors have
plenty of beautiful natural wonders to visit. The Los Flamencos
National Reserve is divided into seven sectors to make planning
your itinerary easy. Each sector is very different from the other
and they are all worth visiting. The Valley of the Moon or Valle
de la Luna is so named because of its similarity to the surface

of the moon. The rock, salt and sand figures were formed from
years of wind erosion and provide a surreal experience to the
traveller, particularly during dawn and dusk, when shadows
move slowly across the pastel coloured landscape. The Valle
de la Muerte lies next to it, with reddish rocks and human
skeletons dotting its landscape. The sick and elderly of the
indigenous people are believed to have come here to die.
The El Tatio geyser field is one of the world’s highest, spewing
steam ten metres into the air. The best time to visit is early in
the morning when there are changes in atmospheric pressure,
encouraging the geysers to erupt. Once the boiling water
evaporates, mineral deposits form interesting sculptures on the
surface of the field.

The city of Marseilles – second largest in France after its famed capital, Paris – lies
on the Mediterranean Sea. Its strategic location was historically advantageous,
and contributed to its current status as a ‘melting pot of cultures’. As a port
city, it attracted waves of migration from the Mediterranean and beyond: North
Africans, Armenians and Italians, among others, populated the city, and although
many of the descendants from these migratory movements now proudly identify
themselves as French (some going as far as calling themselves Marseillaise first,
and French second), traces of their cultural heritage impregnate the city. From
the sounds of the bustling market in Noailles, strongly reminiscent of the chaotic
medinas in Morocco, to the taste of hearty spaghetti alle vongole from a seaside
restaurant, best savoured alongside a glass of a fragrant and ice-cold rosé.
As the oldest city in France, founded around 600BC, Marseilles’ rich history
contributes to its charm. Among the fortifications enclosing the Vieux Port lie
centuries of history that have forged the landscape of Marseilles and the character
of its denizens. Fort Saint Jean, in particular, has borne witness to the feisty
personality, which is to this very day, characteristic of the Marseillaise people.
The fort was built by Louis XIV to ensure that the city’s rebellious spirits were kept
in check. This, as we now know, cost him his head, since his foolish move only
served to fire-up the Marseillaise people, who didn’t just march into Paris and start
a revolution, but also composed a very well-known song on their way there,
La Marseillaise – the French national anthem.
Yet a walk across the Vieux Port is a ‘must do’, not just for history buffs: some
of the Provençal capital’s famed sights and internationally renowned restaurants
attract visitors hungry for a good picture, or a mouth-watering bouillabaisse –
the star of Marseillaise gastronomy. Originally a seafood stew only preferred by
sailors, it’s now a local delicacy elaborated from different varieties of fresh fish,
vegetables, broth and Provençal spices, slowly stewed to perfection for hours,
which explains its average price tag of 40 Euros.

Sport lovers can also easily indulge themselves while in Marseilles. The city’s
stadium, known as The Velodrome, is the proud home-base of the local soccer
team, l’Olympique Marseille (OM). Its supporters are reputed for their passion
and fervour, which is exhibited at each match that their team plays, be it on their
home turf... or abroad. Enjoying a French football match is easy for visitors and

the perfect way to soak up the passion and enthusiasm of true
‘OM’ football fans. This would also be a good opportunity to try
the local drink of choice: pastis, a green anise-flavoured liquor
traditionally from Marseilles.
Lovers of the outdoor can also profit immensely from a visit
to this bustling city with magnificent hiking trails fit for every
level that are just minutes away from its sometimes chaotic
centre. Most of these can be found surrounding the calanques,
breathtaking natural coastal rock formations precipitously
dipping into the sea, and can be enjoyed by amateur hikers and
professional climbers alike. For those who prefer a more relaxed
setting to enjoy the natural wonders nestled near Marseilles,
there are boat tours available with regular departures from the
Vieux Port.
No visit to Marseilles could be finished without a visit to its
crowning jewel, the basilica of Notre-Dame de la Garde, which
stretches into the heavens atop a hill overlooking the city.
Lovingly nicknamed la bonne mère by locals, this basilica is
an impressive example of neo-byzantine architecture, and it’s
a landmark that represents very much the same as the Eiffel
Tower does to Parisians: local pride. Its strategic location on top
of a hill was meant to inspire and call out to the faithful below,
although given its prominence in the city’s landscape it also
suffered some heavy bombing by the Germans during World
War II. To this day, a US tank that defended the Marseilles’
beloved basilica is on display on the road leading up to
Notre-Dame de la Garde as a sign of gratitude.
Marseilles has been undergoing an overwhelming amount of
change. Albeit its rich cultural history, it has held a reputation
as a dirty crime-ridden city for some time. As a result of its
nomination for European Capital of Culture in 2013 as well as
its preparation to host the European Football Championship in
2016, it has been given an extreme lift, far beyond its façade.
Visitors will be glad to know that Marseilles is now not only as
safe a city as any other in France, but also that its infrastructure
has greatly improved. The city now boasts a tram linking the
central neighbourhood, besides its regular metro and bus lines,
making it easier to go about the city. A tourist mini-train is also
available to easily access all major tourist sites in the city. It has
regular departures scheduled from the Vieux Port. The city’s
traffic still leaves a lot to be desired, but locals are proud of
their fame as the most daring drivers of the country. Test this
claim at your own risk!
Marseilles St. Charles, the main train station, is centrally located,
just atop a hill that leads straight into the Vieux Port by one of
the city’s main arteries, La Canebière. The train station provides
easy access to and from the local airport, and is well-linked to
the French capital (just over three hours by high-speed train), as
well as to other major cities in France and abroad (mainly Italy
and Switzerland), and of course, to smaller, quaint locations
throughout Provence. Marseilles shares an international airport
with Aix-en-Provence, which has just been expanded, and now
offers a wide array of national and international flights.

Lombok,
Indonesia
A different kind of luxury
Indonesia has around 18,000 islands, with people living on 6,000 of them. Yet most
international visitors venture no further than the world-famous holiday spot of Bali.
That’s easy to understand when you look at Bali’s unique combination of 5-star resorts,
tropical landscapes, surf beaches and Hindu culture. However, there’s an island to the
east that offers many of the same things – but with some intriguing differences.
Getting there is literally a short hop. Lombok sits directly to the east of its more
famous neighbour, about halfway along the chain of islands stretching from Java all
the way to New Guinea. There are plenty of flights linking the Indonesian islands, so
it’s simple enough to make the brief journey by air from Bali’s Denpasar airport to
Mataram on Lombok. Or else you can do as I did, and take a day or two to unwind
on the Bali beaches before heading up the east coast to the charming little port of
Padangbai being the main launch pad for Lombok trips.
I was booked on one of the ‘fast boats’, a slimline modern craft powered by a rack
of giant outboards, rather than the old-style ferry. The difference is a one-hour
crossing rather than four hours chugging across the strait. The voyage was perfectly
comfortable, with attendants passing out complimentary water and snacks and it
was certainly a suitably dramatic way to approach the rugged landscapes of Lombok.
The island is dominated by Mount Rinjani, a hulking volcano that’s the second
highest mountain in Indonesia. For the three million inhabitants of Lombok, that
means rich volcanic soils supporting plentiful crops of rice, fruit and vegetables. For
visitors, Rinjani offers the chance to try some variations on the usual beach holiday
activities. Towering waterfalls, lush jungle landscapes and awesome vistas are there
to be discovered, as well as the usual palm-fringed beaches and coral reefs.

A word with Karine Thomas
Karine Thomas has made a career out of helping luxury-seekers find the perfect holiday. Through her role on the advisory
board of Luxperience (an experiential travel trade event that connects the world’s most exclusive travel providers) and her
work with Navigate Oceania, the premier marketing consultancy for boutique lodges and resorts in New Zealand and the
Pacific, she has introduced thousands of travellers to unforgettable experiences in our part of the world. What she doesn’t
know about luxury travel isn’t worth knowing. We asked if she could share some of her insights.
LUXURY: Karine, how would you define luxury?
LUXURY: What do you see happening in the future?
LUXURY: We’ve talked about the different experiences
KT: For me, there are two dimensions. One is time. So many
people live busy lives these days, and are extremely time poor. A
true holiday is one that gives them time to drop all their cares and
simply do something they enjoy.
KT: There’s a real trend towards extended family travel, where
travellers seek out. But what is true luxury in your book?
parents, grandparents and children have a once-in-a-lifetime
KT: For me, it’s being able to curl up on the sofa in my own home
experience together. It is as if New Zealand and the Pacific is

a politically correct destination for a big spending holiday, as
in the world. Work is rewarding but it can be very busy. So like

many people, I appreciate having the time to relax with no work
environment. The other trend we’re seeing is the educational side

The other dimension is pursuing a personal interest. It could
be horse trekking or wine tasting or garden design. It’s about
exploring an interest with absolutely no pressure of time, but
with the chance to discover something special.

KT: Of course, the facilities, the setting and the standard of service
are very important. But a great lodge or resort understands that
its role is to go beyond the norm. It makes the extra effort to

LUXURY: Has the economic turmoil of the last few years
changed anything?
KT: The core of our business is promoting top-end resorts and
lodges to foreign visitors. We realised the world was changing, and
that we needed to be pro-active. Three years ago we introduced
an added value incentive for the guest called ‘Something for
Nothing.’ It’s an exclusive offer, only available through a travel
agency booking, whereby each Navigate property guest receives
an added value amenity, which can range from a complimentary
bottle of wine on their first night to a hosted half-day farm tour
valued at $350.

a part of Fiji I’d never visited before. I’m a keen diver at home, but
it’s always about diving with a purpose – to catch the crays, or
collect scallops for dinner. This time, I had no purpose. I just dived
on the reef and was amazed at the soft and hard corals as well
as the beautiful sea life. I had forgotten how beautiful it could
be to just explore the undersea world. That’s an experience I’ve
never forgotten.

Conrad
Cotai Central, Macau
We have been to Macau before and discovered the vibrant city that has dramatically
risen from the ground up in just a little over ten years. We have played the casinos
and frequented the clubs, but this trip was to be different. We were heading to
Macau to stay at one of its hot new properties and we chose the Conrad. Not for
its casino or its glitsy disposition, but for its chilled out, effortless charm.
