to rain and late arrival,
they decided to head back
out
to
the
Windber
Sportsmen’s Club again.

Emily Fitzgerald joined AUCP at the end of May as
an Outcome Curriculum Intern and has been
assisting Joyce with the consumer activities program
by developing, expanding, and evaluating the design.
Emily has a passion for working alongside the
disability population. Growing up with a brother with
cerebral palsy, she decided early on that she would
obtain
a
career
in
recreational
therapy.

...our summer Administrative Intern
Lexus Simms joined AUCP in late June through a summer program, hosted
by Careerlink, which matches up youth
with local area businesses to offer work
experience. You can usually find her at our
Front Desk or making calls in the
Scheduling Department!
Lexus enjoys family outings to museums,
zoos, and amusement parks and one of
her favorite musical artists is J.Cole. Lexus
thinks the activities program is really great and she says what she likes
about AUCP is “the employees are all very nice and very helpful which
makes me feel welcome.”
After her internship ends in August, she plans to apply to AUCP and work
while she takes classes toward becoming a CNA.

To make the American Sign Language (ASL)
sign for hungry, take your hand and make it
into a c-shape with your palm facing your
body. Start with your hand around your
neck and move it down. The sign is a lot like
food going down into your stomach.
Cooking Corner
Crockpot Beef & Broccoli
2 lb Sirloin steak or boneless beef
chuck, thin roast
1 (12 oz.) bag Broccoli florets, frozen
3 Garlic cloves
1 cup Beef broth
1/2 cup Soy sauce, low sodium
Prep Time: 10 min
Cook Time: 5 hours
1 White rice, cooked
1/4 cup Brown sugar
4 tbsp Cornstarch
1 tbsp Sesame oil
4 tbsp Water
Directions
1. In the insert of the crockpot, whisk together beef broth, soy sauce,
brown sugar, sesame oil, and garlic.
2. Place slices of beef in the liquid and toss to coat. Cover with lid and
cook on low heat for 5 hours.
3. When done, whisk together cornstarch and water in small bowl.
Pour into crock pot and stir to mix well. Add the frozen broccoli over
the beef and sauce. Gently stir to combine. Cover with lid and cook 30
minutes to cook broccoli and thicken sauce.
4. Serve over warm white rice. Enjoy!
Sled Hockey in Johnstown
This month, we had a guest speaker from our local sled
hockey team the Sitting Bulls! Sled hockey is a full contact
sport and follows all the same rules as regular stand-up
hockey. The only difference is that players sit in specially
designed sleds and use two sticks with picks on the end to
propel themselves on the ice.
