WWW. RI STORANTE ILP ORTO.COM 973 -729 -9901 February 2016 LETTER FROM THE GENERAL MANAGER Dear Members, As I write this letter, the temperature is eleven degrees and the winds are howling! Yet, I am prepping for a great season for my team – the NY Mets. The Amazin’s will open the season on April 4th at the Kansas City Royals. Home opener will follow shortly after on April 8 against the Philadelphia Phillies. As you may know, from my letters or from your own experience, the NY Mets came incredibly close last year. They won the Divisional Series versus the LA Dodgers and the League Championship versus the Chicago Cubs. We don’t need to mention the World Series, suffice to say – we were almost there! The key to our success this season will be in the preparation …practicing hard and smart, recruiting well and making some hard choices. The Mets have signed both Yoenis Cespedes and Alejandro DeAzu. Michael Conforto will become a full time starter and there will be more to come before Opening Day. Same here at Lake Mohawk Country Club…we are prepping for the season! It is in these “quiet” months that we lay the foundation for the summer ahead. I am pleased to report that the Capital Reserve Committee, headed by Jim Fernandez and new Board Member Phil Marcellus, met for the first time this year on January 18. The group set priorities for the coming year. Back in November 2015, Membership approved the assessment of $140 per year for 2016 and 2017. These monies will contribute toward the initial balance of the Reserve Fund. This initiative will be solely dedicated to capital improvements of our Reservation, and supports our overall goal of enhancing the property values for all of us. Also, our finance and legal teams have met to review our policies regarding delinquent accounts. This will be a major focus for our team in the first quarter of 2016 and beyond. Capital reserve funding and growth of our community is reliant on prudent collection policies for all. Bills were mailed out in early January, and payments may be made electronically or in person here at the Club. When necessary, payment plans can be arranged. The expectation is that the rate of collection will continue to improve. Thanks to all of you for your cooperation. We need our finances to be in strong positions so that we can build and maintain our plans for the future. And of course, to have a successful season, we need to build our team spirit! Come visit us in the new Members Room or have dinner upstairs at the Restaurant. Both of these newly renovated spots offer the opportunity to meet with your fellow Members and enjoy some time together. I look forward to seeing you in the Members Room to catch a game this season! For added flair, top your finished cheesecake with your favorite fruit topping or chocolate sauce! INGREDIENTS: 2 ½ pounds cream cheese (room temperature) 1 ¾ cup sugar 3 Tbsp. flour 1 ½ tsp. orange zest 1 ½ tsp. lemon zest ¼ tsp. vanilla extract 5 eggs 2 egg yolks ¼ cup heavy cream CHEESECAKE: Place the cream cheese in a bowl and mix until smooth (do not overmix!). Add the sugar and flour, mix well. Next add the whole eggs and yolks slowly, making sure it is well incorporated while mixing. Add the zest. Now add the heavy cream, scraping down the sides of the bowl while mixing. Pour into the prepared pan and bake at 425° for ten minutes, then reduce heat to 325° and bake for one hour. GRAHAM CRACKER CRUMB BASE: 4-ounce butter (melted) 1 ¼ cup graham cracker crumbs ¼ cup sugar 1 Tbsp. flour PROCEDURE: Rub crumbs and sugar together, mix in the flour. Add the melted butter. Press into the base of a 9” spring mold pan or other appropriate baking pan/mold. Bake for 7-10 minutes at 350°. Cool then add cheesecake ‘batter’ and follow above baking instructions. As part of our free tax preparation, United Way staff and volunteers help residents claim all the specialized tax credits available to them, like the Earned Income Tax Credit, Child Tax Credit, and Education Tax Credit. February 2016 SAVE THE DATE FOR SPARTA EDUCATION FOUNDATION’S DRAGON BOAT FESTIVAL Paddler’s during last year’s races T he Sparta Education Foundation presents their Second Annual Dragon Boat Festival on Sunday, May 15 at the Lake Mohawk Country Club. This fund-raiser for Sparta’s public schools is a perfect team-building opportunity that promises to be a fun and memorial day for all. Teams of twenty-one paddlers can include friends, co-workers, neighbors, church members, sports teams, clubs or any group of individuals who would like to participate in this exciting event. All skill levels can participate, making it the ultimate team-building sport, requiring synchronicity and finesse more than power to win. Visit spartadragonboat.com for additional details. Dragon Boat Races are held in forty-six foot long boats, and teams of twenty-one compete in 250 meter heats. A team is comprised of twenty paddlers and one drummer. Each team in this positive adrenaline-filled activity must include at least eight females and can include no more than ten participants between the ages of 15-17. A steersman is provided by the Dragon Boat Festival director. Each team will get an on-water practice session with a trained coach/steerperson prior to race day and compete in at least two heats on Sunday, May 15. Prizes will be awarded, but the real winners will be Sparta’s students. The Dragon Boat Festival coincides with Lake Mohawk Country Club’s annual Tasting on the Boardwalk, a gathering of local restaurants offering gourmet samples for a small fee. In past years over a dozen restaurants from the area provided everything from sliders to cupcakes. Tasting on the Boardwalk is a delicious accompaniment to the Dragon Boat Festival. Truly a unique event, Dragon Boat Race teams will raise money to help enrich the educational experience for students in our schools, and it is a spirited community day and great team competition. New York City, founded by the Dutch in the early 17th century as New Amsterdam, is bounded by interesting waterways that helped make it the great city of today. LMYC member Hank Jelinek had the good fortune of sailing on a 33 foot and 39 foot 12 THE PAPOOSE sloop rigged sailboats on Long Island Sound, through NYC down the East River and the Upper and Lower Bays. During a Long Island Sound passage, on a to Northport, New York, a humpback whale was spotted approximately half a mile off of Greenwich, Connecticut. At first it looked like a garbage can bouncing in the waves. But sailing closer, two distinct flukes appeared about six or seven feet above the water, for those of you who need proof, just look at the photo with this article. An October trip from City Island, New York to Raritan Bay for the annual winter boat layup was sailed on a beautiful fall day. The wind and tide were accommodating so the passage was done in less than six hours with the boat averaging five to six knots. Manhattan's cathedral building shown in the sun as a cormorant, about to dive for its next meal, was spotted near the Brooklyn Bridge. A majestic Statue of Liberty glistened in the sun as did the Robbins Reef Lighthouse, seven miles south of Lady Liberty. The lighthouse, built in 1886, is reputed to resemble a spark plug. February 2016 The Norwalk Aquarium has confirmed twenty-five whale sightings reported with one whale actually hitting a sailboat. Humpbacks are fish eaters and circles of Menhaden are abundantly available. Whales off Greenwich and cormorants in the East River are the harbingers of cleaner waters. Scallops are even being introduced into the New York waterways because of their filtering abilities. Who knows, maybe the "safe to swim" sign will someday be posted. W • THE PAPOOSE 15 16 THE PAPOOSE February 2016 LAKE LIVING 2016 BUDGET ANNOUNCED D uring the recent Annual Meeting, a Preliminary Operating Budget for 2016 was presented to the members. A final Operating Budget, substantially similar to the Preliminary Budget, was then adopted by the Board of Trustees at its last meeting in 2015. This final budget will guide the Club’s operations in 2016. The only difference between the preliminary budget and the final budget is the addition of the $140 per property special assessment for the Capital Reserve Fund that was approved at the Annual Meeting. This assessment does not change the “bottom line” of the Budget since the assessment is treated as income and then an equal amount is immediately transferred to the Capital Reserve Fund. The following tables illustrate the Club’s budget for 2016. For comparison purposes, the tables include the forecast of year-end 2015 results presented at the Annual Meeting. These forecast numbers should be reasonably close to the final 2015 numbers that will be available by late February or early March and will be posted on the Club’s website in the Member section. With respect to income, the following table reflects three important factors: • First, basic Common Area Maintenance (CAM) charge income (“dues”) will be unchanged. This is because the Board of Trustees’ determined that no CAM increase is necessary in 2016 and because there will be no automatic inflation increase based on the government’s Consumer Price Index (CPI) which is unchanged. (Members should expect inflation increases in future years when oil and gasoline prices go back up.) • Second, the increase in income from the recovery of unpaid dues in prior years is due to the efforts of the Club’s Management and Counsel to vigorously attack the problem of unpaid dues through administrative and legal channels. • Third, the substantial increase in Special Assessment income is due to the $140 per property assessment approved at the Annual Meeting to begin the establishing the Capital Reserve Fund. As the next table indicates, the 2016 budget calls for a modest $19,000 operating loss. Fortunately, this budgeted loss is small enough that the Board of Trustees concluded that no CAM charge increase will be necessary in 2016, particularly since the overall Net Income is positive due to the budgeted performance of the Club’s Food & Beverage operation. While the overall 2016 budget shows a positive net income from an accounting perspective, it is important to remember that the F&B’s profits are dedicated to capital and major repair projects. This means that F&B profits cannot be used to subsidize operating losses without returning the Club to the “robbing Peter to pay Paul” process that caused underinvestment in and substantial deterioration of the Club’s infrastructure during the Great Recession. Because even small operating losses are not sustainable year-after-year, during 2016 Management, the Finance Committee and the Board of Trustees will focus on ways to eliminate any structural operating losses, including continuous review of the Club’s operating expenses and whether a CAM increase for 2017 should be proposed. A great way to combat cabin fever in the month of February,” said Nick Savva, Skylands Stadium Director of Events. “Frozen in Ice celebrates the beauty and elegance of winter, with awe-inspiring exhibits and ‘cool’ activities for the whole family. First off, we are very proud of the new community center we created in the lower level of the library. This lovely room is designed for use by nonprofit and business organizations in Sparta Township. The use of the room is free to non-profit organizations, but there is a fee of $35 per hour for for-profit groups. The room will have a monitor, projector, conference tables and chairs, and other equipment that will make it a perfect spot for your next meeting. In addition to our Museum Pass program, which offers free passes to eleven museums and other sites of interest in New Jersey and New York, the library is now offering discounted passes to the American Museum of Natural History for $7.00 per pass, with a limit of four. PROGRAMS SCHEDULED FOR THE WINTER INCLUDE: • “Saturday at the Movies,” featuring newly released DVD’s. Check our web page spartalibrary.com for upcoming titles and dates. • “Winter Festival Wine and Beer Tasting,” a joint program of the Sparta Recreational Advisory Committee and the Sparta Library, will be held on Saturday, February 13, from 7:00 pm to 9:00 pm at the library. Ailbhe (Alva) Parisella and her brother Terrance Clarke will be opening a gourmet café for full breakfast, brunch and lunch later this spring. They are spending the time this winter on major renovations, which includes woodworking and the use of recycled materials. “We want to take a piece of everything and build something original,” according to the owners, “Our intention is to make this place your other home.” Look for them at Tasting at the Boardwalk in May. KROGH’S RESTAURANT AND BREW PUB is pleased to announce that Krogh’s Brewing Company has found a home in Newton. This new facility will allow larger scale production of their handcrafted beers by Summer 2016. Look forward to some great new brews from Krogh’s later this year. LAKE MOHAWK WOMEN’S GOLF CLUB S igns of the holiday were in full swing at the year end Holiday Party on December 9, it was wonderfully orchestrated by Leslie Plifka. The blazing fireplace warmed the oak paneled room which was beautifully decorated by Nina Booth and Julie Killen. Members brought gifts for the exchange along with toys to be donated to a local charity. Chef Doug prepared a delicious fare from hors d'oeuvres to entrée.
