Pears are Oregon’s official State Fruit. Volcanic soil, abundant water, warm days and cool nights combine to create the perfect conditions for growing pears in Oregon. Their principal growing regions are in Hood River Valley in central Oregon and Rogue River Valley in southeastern Oregon. Oregon Pear Bistro Salad 8 Cups Assorted Mixed Salad Greens 2 Fresh Bartlett or Comice Pears, Cored and Sliced 1/2 Cup Red Onion, Thinly Sliced 1/2 Cup Walnut Halves 1/2 Cup Crumbled Bleu Cheese Balsamic Vinegar Olive Oil Method: Line a large platter with greens. Top with pears, sliced onions and sprinkle with walnuts and crumbled cheese. Combine vinegar and oil to taste. Drizzle dressing over salad. Serve with crusty bread, if desired. Serves four. Enjoy! David Welcome Sheila! Born in Newton, Wales, Sheila is a delightful woman whose smile and hugs make the day brighter! Sheila was the oldest of six children who grew up in Dalfor and joined the British Air Force at nineteen years of age. She wanted to be trained as a radio mechanic, but soon became bored with that and went back to office work, which she had done in a bicycle shop before entering the Air Force. She also babysat at the American base in the evenings. Sheila had always wanted to come to America, and coincidentally the same day that the Andrea Doria sunk, she arrived in New York at 25 years of age. There she worked as an Au Pair. After a few years, she relocated to San Diego, and finally to Los Angeles for the next approximately fifty years. A chance meeting with a friend who called a repairman to fix her TV led to Sheila’s romance. This led to a courtship and marriage! The repairman asked her friend for Sheila’s phone number, called her and the rest is history! They were married for 29 years, and together they raised a son, Steve. Sheila is very clear that she does not like to cook and with her calculations, figures that her husband, who prepared and cooked all of their meals, made about 10,000 dinners for Sheila in the time they were married! Sheila tells a story that she and her youngest sibling are 19 years apart and in her father’s family, her father and his youngest sibling are also 19 years apart! Sheila and her son, Steve, relocated to Ashland four years ago. Sheila now calls Skylark her home and moved in here last month! We had a full lobby of eager residents waiting to taste the delectable fritters of corn sautéing on the griddle with Cori at the helm and Marsha as her assistant. Not only were they a tasty treat, but residents were reminiscing with stories about corn fritters throughout their lives. It really is interesting how food can serve as a diary in time and what fun it was to hear these stories! Be on the lookout for more “Cooking with Cori” adventures! _______________________ It is with great respect and lovely memories that we honor Helen Gardner, who recently passed away. She was the oldest surviving Ashland High School graduate and she loved to tell stories about Ashland.
