We integrate an approximate surface area of 2.500 hectares, within 350 and 600 meters above sea level. Land and climate are outstanding for olive grove development, allowing both great productions and excellent qualities. Our dominant olive variety is the Picual, which is also the most extended in the “Campinas de Jaen” (1), and very well adapted to the peculiarities of the environment. It’s characterized for producing fruits with a great oily content, and generates an olive oil with high antioxidant count, which in turn gives them a high durability. The harvest: the olive’s harvest begins on late November, by separating olives fallen to the soil from those above the tree. We separate in the field the healthy and ripe fruits, and transport them separately to the Almazara (2). In this way, food tracing gets started in the very field. Our oil mill and its environment Our Olive Oil Mill, located in the suburbs of the village, has implemented as a system of environmental management (ISO 14001:2004) that guarantees the scrupulous fulfillment of the environmental regulation, as well as the respect to the environment and to the nature that surrounds us. Production of the olive oil The olives delivered to our Almazara, after being classified either in the Trees or Soil categories, they’re submitted to a cleaning process and they’re ground the same day. The extraction of the oil is made by mechanical procedures by using a technology called “Continuous Process to Two Phases”. It consists of: batter of the olive paste, horizontal centrifugation and decantation of the oils. Later they are stored in stainless steel tanks. The final quality of the oil depends largely of the care with which these processes are realized. Among them, special importance is given to an extreme cleanliness in both the machines and the facilities. The implantation of quality management (ISO 9001:2000) and process’s tracing, allows us to check and to document at all times the fulfillment of the quality guidelines established. Our farmers are in a process of continuous education, adapting themselves to the most modern technologies of cultivation, and always bringing together the baggage of one of the zones with biggest olive oil tradition in the world. With sustainable production models we remain respectful to the environment. The final result is an exceptional extra virgin olive oil with outstanding organoleptic singularities. It is characterized for presenting an intense and complex, fruity aroma of effluvia of grasses (herbs) and fragrant plants, and showing a flavor that has clear but balanced bitterness and it is piquant, together with a long green apple taste. All this gives our olive oil a harmonious and elegant personality, which has allowed it to win “first class” awards, prizes and mentions. Bottling We produce by ourselves all the olive oil that we bottle, which allows us through the tracing management, to completely know its life cycle, from the field to the consumer. Aceite de Oliva Virgen Extra con Calidad Certificada Bottling processes are done in facilities of our own property, and they consist first of a filtering phase and then of a bottling phase and labeling. Each one with the guarantee of the Andalusia’s Government’s Certified Quality. Certified Quality Certified Quality is an essential sign of identity for bottled products. It is the only guarantee that allows the consumer to know with certainty that only Extra Virgin Olive Oil is going to be consumed. Our Olive Oils are certified by both our Quality Control Management Audit ISO 9001:2000 and by the Department of Agriculture and Fishing of the Andalusia’s Government. These two organizations authentically certify the tracing and quality of the content of each bottle that has been produced and bottled, fulfilling strictly with the regulation. For all these reasons, our company only bottles and commercializes Extra Virgin Olive Oil with Certified Quality. (1) “Campinas de Jaén” is the name of the land in the province of Jaen with the biggest olive tree plantations in the world, and it means a wide extension of olive tree fields. (2) Almazara comes from the Arab “Al-macera”: place where juice is obtained, and means in Spanish Olive Oil Mill or Factory.
