ROMA VS. SAN MARZANO
Compared to the Roma tomato, San Marzano
tomatoes are thinner and more pointed. The flesh
is much thicker with fewer seeds, and the taste
is stronger, sweeter and less acidic. Many people
describe the taste as bittersweet.
The San Marzano vines are indeterminate and
have a somewhat longer season than other paste
tomato varieties, making them particularly suitable
for warmer climates. As is typical of heirloom
plants, San Marzano is an open-pollinated variety
that breeds true from generation to generation,
making seed saving practical for the home
gardener or farmer.
San Marzano tomatoes are considered to
some “the most important industrial tomato of the
20th century”; its commercial introduction in 1926
provided canneries with a “sturdy, flawless subject,
and breeders with genes they’d be raiding for
decades.” Though commercial production of the
San Marzano variety is most closely associated with
Italy, seeds for the variety are available worldwide,
often labeled as an heirloom variety. Canned San
Marzanos, when grown in the Valle del Sarno (valley
of the Sarno) in Italy in compliance with Italian law,
can be classified as Pomodoro S. Marzano dell’Agro
Sarnese-Nocerino and have the EU “DOP” emblem
on the label.
San Marzano tomatoes have been designated
as the only tomatoes that can be used for Vera
Pizza Napoletana (True Neapolitan Pizza).
One story goes that the first seed of the San
Marzano tomato came to Campania in 1770, as a
gift from the Viceroyalty of Peru to the Kingdom
of Naples, and that it was planted in the area that
corresponds to the present commune of San
Marzano sul Sarno. They come from a small town
of the same name near Naples, Italy, and were
first grown in volcanic soil in the shadow of Mount
Vesuvius.
In the United States, San Marzano tomatoes are
the genetic base for another popular paste tomato,
the Roma tomato. The Roma is a cross between a
San Marzano and two other varieties (one of which
was also a San Marzano hybrid), was introduced by
the Agricultural Research Service in 1955.

Dr. Andrew Turnbull had a vision in 1766,
to establish a 20,000 acre permanent colony
just south of St. Augustine in order to establish
plantations which would produce indigo, rice,
hemp, and cotton, some of the most valuable
commodities at that time.
We have some of our very own young
visionaries within our community even today.
Donald Fitzgerald and Justin Sikes were both
employees of That’s Amore from the day we
opened. We did not create these young men,
but we helped them to grow and mature into the
businessmen they are today. Donald started as a
busser and quickly learned how to communicate
with guests, learned selling techniques, the value
of a dollar, and then became one of our top servers
at a very young age. Justin joined our team as
our bartender at That’s Amore and showed us his
ability to direct people toward common goals,
and became our front of the house manager.

Don Senior. Justin Sikes and his father purchased
The Little Drug Store at located at 412 Canal
Street in New Smyrna Beach, (386) 428-9041. It
is the oldest independent pharmacy around that
offers a soda shop and pharmacy. These young
business men are not only inspiring to our youth,
but they are the future of our city.
FLAGLER IN FLORIDA
its service town, West Palm Beach, by 1894,
founding Palm Beach and West Palm Beach.
The Royal Poinciana Hotel was at the time the
largest wooden structure in the world. Two years
later, Flagler built the Palm Beach Inn (renamed
Breakers Hotel Complex in 1901) overlooking the
Atlantic Ocean in Palm Beach. By 1905, Flagler
decided that his Florida East Coast Railway
should be extended from Biscayne Bay to Key
West. Miami’s main east-west street, is named
Flagler Street, and is the main shopping street in
Downtown Miami.
In 1913, Flagler fell down a flight of marble
stairs at his residence, Whitehall. He never
recovered from the fall and died in Palm Beach of
his injuries on May 20 at 83 years of age.
Henry M. Flagler was born on January 2, 1830,
in Hopewell, New York. With only an eighth-grade
education he left home at 14 to work at his uncle’s
store. In 1862, Flagler and his brother-in-law
Barney York founded the Flagler and York Salt
Company, a salt mining and production business
in Saginaw, Michigan. In 1867, he collaborated
with John D. Rockefeller in developing Standard
Oil, named such in 1870. They put Standard Oil in
position to out compete other oil refineries. By
1892, Standard Oil had a monopoly over all oil
refineries in the United States.
On the advice of his physician, Flagler traveled
to Jacksonville for the winter with his first wife,
Mary Flagler, who was quite ill. Two years after she
died in 1881, he married Ida Alice Flagler. After their
wedding, the couple traveled to Saint Augustine.
Flagler found the city charming, but the hotel
facilities and transportation systems inadequate.
In 1885, Flagler began construction of the 540room Ponce de León Hotel in St. Augustine.
(The Ponce de León Hotel, now part of Flagler
College, opened on January 10, 1888 and was an
instant success.) This project
sparked Flagler’s interest in
creating a new “American
Riviera.” Two years later,
Flagler expanded his Florida
holdings. Realizing the need
for a sound transportation
system to support his hotel
ventures, Flagler purchased
short line railroads in what
would later become known as
the Florida East Coast Railway. He built a railroad
bridge across the St. Johns River to gain access
to the southern half of the state and purchased
the Hotel Ormond, just north of Daytona. He also
built the Alcazar hotel as an overflow hotel for the
Ponce de León Hotel. The Alcazar stands today
as the Lightner Museum next to the Casa Monica
Hotel in St. Augustine. His personal dedication
to the state of Florida was demonstrated when
he began construction on his private residence,
Kirkside, in St. Augustine.
Flagler completed the 1,100-room Royal
Poinciana Hotel on the shores of Lake Worth
in Palm Beach and extended his railroad to
