the committee as pertinent information about the policies of
Greenbriar II were reviewed and provided. Not only were
Rules and Regulations and By-laws discussed, but also the
recreational events, services and the many clubs offered.
We no longer wonder if we made the right choice of
leaving our home of 38 years. We are delighted to be part
of your wonderful community. This committee is truly

I have the nicest good neighbors in Vernon Court, and
Shirley & Ken Weber are among them.
Ken is a great handyman. Every time I have something
that needs repair, or trees to remove, there is Ken. He is
an electrician, plumber, carpenter and a landscaper. He
does it all.
He also has a green thumb. He and Shirley supply me
with cucumbers, Swiss chard and tomatoes that they grow
in their backyard.
I’m very glad that he and his wife live in my cul-de-sac.

From the Board of Trustees
The Briar II News Staff recently approached me as
President of your Board of Trustees and asked if 1would
submit a monthly column updating our residents on current
or future plans of action for the community. Being the shy
person that I am, I reluctantly agreed.
Future columns will be dedicated to that subject, but my
initial column will be directed to informing the community
as a whole of the talent and dedication of the people I am
privileged to work with.
Three years ago, in my first year as your President,
our Administrator suddenly resigned her position for family reasons. It was our good fortune to interview and hire
Denise Schisano. The results have been incredible. In her
short tenure, she has guided and advised us in updating
our ByLaws & Maintenance Standards to meet all current
requirements, overhauled and streamlined our bookkeeping and accounting procedures, and still handles her day
to day administrative duties with boundless enthusiasm.
She generously credits the long time administrative staff
of Noreen Kelly and Ruth Sullivan, the maintenance staff
of Bruce Hammell and Matt Johnson, and our bus drivers
Jimmy Domenech and Glen Gray for her success.
In the same year, Phil McConnell joined the Board
after four years of service as President of the R&A Committee. On the day he was sworn into office, he visited
several surrounding communities and secured vital information necessary to overcome objections to the signing of
our current revenue sharing agreement with Comcast for
which our community receives in excess of $20,000.00
per year. He also spearheaded Board efforts and overcame
objections to allow the use of our bus on evenings and
weekends. Our residents now use our bus for transport to
concerts, shows and other events as a result of his efforts.
He has also organized a trade show for our clubhouse in
September, enabling our residents to obtain information
which will help them make wise decisions for any work
they may be contemplating.
The following year, my second as your President,
Tom Vaccarella joined the Board and, thankfully, serves
as our Treasurer. Tom’s background in banking has been
invaluable to the Board. His experience enables him to
work closely with our financial advisors and oversee our
Reserve Fund investments. Working closely with Denise,
he advised us on changes to our bookkeeping and auditing
procedures, which led to our hiring a new accounting firm
to handle our tax reporting functions. He chaired the Board
effort that resulted in our new fitness center stocked with
state of the art exercise equipment. He has volunteered to
chair the Board review of the clubhouse facility with the
help of fellow Trustee, Gail Moench.

Gail rejoined the Board that same year for the second
time. In addition to her Board duties, Gail finds time to
run our community Bingo, serves on the Brick Township
Senior Advisory Committee, liaisons with extended care
providers, our Woman’s Club, and assists Denise with inspection of questions regarding community maintenance.
In this, my third and final year of service as your President, Rod Ravaioli has joined our Board. I have known
Rod for many years. We both resided in Point Pleasant
prior to moving to Greenbriar II, and he once served on
the Township Council there. His impact will shortly be felt
as he acclimates himself to his new duties.
The contributions of the R&A Committee are also
vital to future Board action. These tireless volunteers, too
numerous to mention individually, currently led by Diane
Mansfield, deserve the community’s thanks and admiration
for their efforts. Our recent year-end audit confirms that our
community received over $20,000 as a result of their work.
Our ERA Byrne Realty team deserves special mention.
Our community received, I believe, record ancillary income this past fiscal year of over $150,000. That is income
received from sources other than monthly maintenance.
Nearly 50% of that income was generated thru the efforts
of ERA Byrne. In addition to this income, they have generously donated two (2) TVs to the clubhouse and their entire
staff has volunteered and served at several R&A functions.
I want to thank the volunteers of the Garden Club, the
Audio Visual Committee and the Briar II News for their
efforts to beautify the community, televising our meetings,
and keeping the community informed with our monthly
newsletter.
I have the easiest job of all. I get to chair the Board
Meetings and inform you of the efforts of others. I even
get to write this article. Only in America!

The Inside Scoop

This “Inside Scoop” is somewhat repetitious for
GBII residents who’ve been here a while. So many new
homeowners have joined our community the past several
months, it’s reasonable to explain the workings of the Briar
II News. So please bear with the staff and me as I take you
through some of what is involved in getting this publication
assembled and delivered to you each month.
Our staff, those of us who organize all of the articles,
announcements, etc. that are provided by residents and
the Board (and of course our own writings) is only a small
group of six, but a very cooperative and closely-knit one.
No one of us is “in charge”, although we take turns at being responsible to manage the actual organization of pieces
submitted to us and providing everything to our publisher.
We have absolutely nothing to do with any of the advertising that appears in any issue. All ads are procured by Senior
Publishing Co. After each month’s issue is printed and
distributed, SP sends a check for $700 to Greenbriar II. In
case you’re wondering, we are strictly volunteers.
We operate on a schedule provided by the publisher as
to all deadlines that must be met. This often, every month
in fact, has us in utter confusion - in a comic sort of way because the overlap of dates really makes us think, “What
month is this? What month are we working on?” It always
seems to come together in the end.
Staff meetings are very flexible, but ordinarily take
place once a week. This is when we collect the photos
and articles, deciding which pictures we’ll be able to use.
Every article that was submitted is read, and those that are
handwritten will be taken by any of us who wishes to type
at home. Many other decisions are made such as what to
include in the centerfold, the design for the cover (Judy has
taken on this task), choosing the featured recipes, checking/verifying/rechecking the “Happenings” and calendar
of events. Senior Publishing picks up the copy and about
a week later returns three rough “proofs” for us to review.
This “review” process is done by three of us and must
be completed in a few days. There are “typos” that need
correction, the placement of some photos needs adjustment,
some print layout has to be altered, and even the “Happenings” and the calendar require editing when planned
events are changed. We try not to let “mistakes” happen,
but they do. One of these corrected proofs is returned to
the publisher, and about a week later the final monthly editions are returned for distribution. They arrive in bundles
of 25 issues each.
After Judy and I count and re-tie the number of issues
for each of our circulation staff members, we drive through
the community delivering each bundle of Briar II News to
our carriers. These individuals, as well as those who’ve
offered to be substitutes truly deserve our appreciation.
Without them, we could not deliver a paper to every one
of the 600 homes in the community.

After a long wait with great anticipation, our two new
seated steppers have finally arrived, and they were worth
the wait. I have been using them the past few days and they
really do give you a great cardio workout. The displays also
offer calorie burning, strength training and manual modes.
They will exercise your arms, legs or both arms and legs
in one smooth motion.
These machines are a new design for Spirit Fitness.
They also manufacture the recumbent bicycles in our fitness center. Spirit is the only company to build these in a
commercial quality grade. Similar machines are available
in an industrial grade, but are usually only affordable for
hospitals and rehabilitation centers. When Spirit first told
us of the expected delay, they offered to loan us the second
recumbent bike free of charge until the steppers arrived.
A month and several phone calls to the national sales
manager of Spirit, they raised the offer to a free loaner.
Shortly thereafter our continued patience got them to agree
to give us the $1500 loaner bike for FREE. Our patience
and negotiations really paid off!
It seems that everyone who has tried out our equipment
is enjoying a fun way to exercise and get healthy. Who
knows, some us may even lose those few unwanted pounds!

A View From the Briarpatch

The summer’s over, but the memories linger. A great
treasure in Ocean County is LBI. I’ll call it Long Beach
Key because in Florida most islands are called keys. This
year the family decided to try to relive some of the family
vacations we had when the kids were little.
That was over thirty years ago. You could, in those
days, rent a neat little bungalow by the week very reasonably, and be close to the beach. We also had a small boat
that could be put in the water from a bayside beach. We
would go clamming or fishing on the sandy shoals nearby.
Delicious seafood was abundant in many local dives.
Rising early to head for the ocean with my morning
coffee is one of the great rewards for being alive. A lone
fisherman, my only company. We smiled at each other and
I resumed my search for that elusive perfect shell. It was
a good life. LBI is an 18 mile long barrier island, and as
such is hit by hurricanes and many winter storms. Damage
through the years has changed building codes and other
regulations, the two story great dunes were built to protect
the inland structures.

Even so, the haves still turn right (south) and the

bridge. The low-density northern end boasts an assortment
of large-scale waterfront homes which attract considerable
attention from visitors, and are often the source of rumors
regarding vacationing celebrities during the summertime.
In the southern communities some historic and elegant
homes have survived the many storms. Many resorts have
popped up, replacing the most damaged properties, and
are available here for limited stays. From the many out
of state cars in the parking lots, LBI is a popular vacation
destination.
We used one of these resorts. A pool, and very fine
restaurant, gave us a good base to try to relive those earlier
years. Many of the bungalows of the old days have been
replaced with modern structures. Most raised so living
areas are on second and third levels. Roof areas have been
made into patios so they can see over the dunes to look at
the ocean. The dives have been replaced by over a hundred
good restaurants. Many very specialized. Also quite expensive. Taking my morning coffee to the beach necessitates
climbing the high dune. At the top, I’m out of breath. Is
it worth it to go down to the ocean? That lone fisherman
looks at me. Decision made. Miss Gail joins me. We hold

Every year I take some photos of hummingbirds that
visit my feeder. Anyone who has tried this knows how difficult it is because these little guys move so fast, darting
and zipping everywhere. This year I was really fortunate
because I only took the pictures on one day, during perhaps
a half-hour sitting, and every single photo happened to
catch the hummers in flight. Not only that, but each one
was clear despite the speed of the birds. The only disappointment - every one was a female, so the dazzling red
throat of Ruby Throated Hummingbird males would not be
seen. It was late August and most adult males had already
begun their journey south to Mexico and Venezuela. These
are only two of the photos.

“Hello” to all my admirers, both of the 4-legged and
human variety. I’m well aware that I haven’t appeared as
in this photo taken in June, since having my gorgeous English Saddle coif clipped, but eventually hair grows back.
My canine partner, Ocalak Dark Spyder, CGC, took over
writing this column once, as did my predecessor, Ocalak
Tally Ho. I wanted my turn and finally got it!
Did you know that poor coat quality is fairly common?
This can indicate a health problem, but it’s frequently due
to inadequate fat in the diet, especially a dog on a weightreduction diet. Joseph Wakschlag, DVM, PhD of Cornell
University College of Veterinary Medicine, and president of
Veterinary Nutritionists, recommends that it is far better to
stick with a good quality food, and just feed less. A quality
food will contain at least 16% fat. Veterinary dermatologist, William Miller, VMD and Medical Director of the
Companion Animal Hospital concurs. Dr. Miller explains
that oils are oils, and the addition of corn oil to a pet’s diet
will work just as well as more expensive oils. However,
dogs who exhibit skin allergies would benefit more from
fish oil or any that contain omega-3.
The FDA has begun to “crack down” on manufacturers
of so-called therapeutic pet diets. Only those specialized
diets prescribed and sold in licensed veterinary practices
are safe. Foods that are sold over the internet or through
retailers claiming to aid in urinary, diabetes or retinal health
are to be avoided.
Veterinary neurologist Carey Neary, DVM, DACVIM
works at Atlanta’s Veterinary Neurology Service, the largest of its kind in the world. Dr. Neary stated that strokes
among canines are not as common as with humans, but they
certainly do occur. Males are more likely to suffer a stroke,
the same case as humans, and older canines are more prone
than a younger dog. Two breeds that are over-represented
to be victims are Greyhounds and Cavalier King Charles
Spaniels. It is believed the higher resting blood pressure
of the Greyhound is responsible for this disparity. The
Cavalier’s propensity is likely due to the fact that this
breed tends to have faulty heart valves, and an abnormal
growth of bone in the back of the skull. Also, the Cavalier’s
blood platelets are three or four times larger than normal.
The most typical sign of stroke is loss of balance. Often
an unusual change in gait is seen. About 25% of canine
strokes are indicated by circling. Other, far less common
symptoms of stroke are vision loss, weakness or paralysis
in one or more limbs. Dr. Neary stresses that at least 80%
of dogs that suffer a stroke will recover.

Suddenly the peaceful atmosphere of Vernon Court
was shattered as the Wild Bunch gathered for its annual
pizza supper. This marked the ninth year that this boisterous
group of hardy revelers showed up to celebrate “who knows
what” at my humble abode. Indeed, it was a humble abode
due to weather conditions. We’ve always met within my
atrium, and that was the plan for September 6. However,
after getting the tables and chairs arranged in preparation
for the hungry horde, a light rain forced a relocation to the
garage, which turned out to be as much fun as ever - and dry.
This year’s fare included homemade sangria, salad, a
variety of chips/crackers/spreads/cheeses/cold cuts/dips,
olives, and then the main course-four large pizzas (plain,
pepperoni, sausage/onion/pepper). The feast ended with
those real fruit halves stuffed with fruit sorbet, PLUS
cheesecake! Notice those happy faces.
Throughout the evening there was LOUD laughter,
and plain silliness occurred. Shouts of “Bada Bing, Bada
Boom” would echo through the cul-de-sac. Many jokes
and hilarious stories kept the laughter going. All too soon
it was time to call it a night, and everyone headed home.
There was little traffic for members of this exclusive group
to negotiate, and no one needed a GPS to find their correct
house. The security guard did not have to intervene, and no
one was arrested by the local authorities. Darn!!!

October is a very busy month with activities that can
prepare your garden for winter and for next spring. The
first thing is to remove dead or diseased plants, leaves and
twigs. The next activity is to weed the garden since this
will save hard work in the spring. Some weeds develop
seed heads in autumn and frost will not kill them. If soil is
too hard, water the ground and let it set a while. This will
loosen the soil and make weeding an easier job.
Clean your ceramic and clay pots after removing the
dead plants, and the used soil can be spread over garden
beds. Sterilize the pots by using a diluted solution of bleach.
Allow them to dry and store them in a garage, shed or inside
over the winter. They could crack if left outside.
When your garden is dormant, improve the soil by
adding compost, shredded leaves or fresh topsoil over the
top. Till the soil by using a sharp spade.
This is a great time to plant deciduous trees, shrubs
and roses. Dig a hole slightly larger than the root ball, set
the plant in the hole at the same height as it was in the pot,
mulch and water. Water trees, shrubs and evergreens until
the ground freezes.
Plant spring flowering bulbs (daffodils, hyacinth, crocus, tulips) in October. Plant larger bulbs 8 inches deep and
smaller bulbs, 4 inches deep. Planting bulbs in clumps of
color will create a dramatic look. You can also plant them
near your existing perennials. This will create a continual
flow of flowers as the bulbs bloom and the perennials begin
to “pop”. As the bulb flowers dwindle, the perennials will
be in full bloom.
After first frost it is time to prune most perennials,
but wait until spring to cut ornamental grasses. Be sure to
use sharp shears to remove dead foliage, and do not prune
spring flowering shrubs.
Last, apply mulch over plants to protect them from
freezing and thawing cycles. In spring, rake the mulch and
spread it throughout the garden to prevent weeds during
summer.

Same Time, Next Year

You might recall the movie of the same name starring
Alan Alda and Ellen Burstyn. It is a romantic comedy
concerning a couple who are each married to others, and
find themselves in a clandestine relationship by meeting at
the same hotel, at the same time, yearly. The entire production takes place in a guest cottage at The Sea Shadows, a
country inn in Northern California.
So that there is less confusion when I write about the
actors in the plays produced by The Guild Theatreworks,
this time there are only two actors. Therefore, I should be
able to explain them quite simply. One of my very favorite
actors, Corey Crawford, played George, an accountant
from New Jersey who is supposed to be on a business trip
meeting with a client living in Northern California. Linda
McLaughlin, who had played as the love interest of Alan,
the main character in Come Blow Your Horn, once again
did a magnificent job playing Doris, a Northern California
housewife who was supposed to be on a retreat.
A first time ever since I have been going to these productions, a film was first projected by scenes, activities
and the songs and singers representing the year of the day
they got together each year. They encouraged the audience

to sing along to the songs we all knew from 1951 through
1975, and we did! Then right before you were to see each
scene, the year was boldly highlighted on the screen. I
thought that this was quite a clever idea. I asked the director of the show, Barry Prag, what made him think of this
clever idea. He gave me quite a practical reason. The actors
needed time to change for each scene (and there were six
of them). They need to dress and wear wigs that denoted
the year they were depicting.
This play was genuinely humorous and definitely
romantic. Over 24 years they develop an intimacy, unexpected of a couple supposedly meeting annually for an

American Baseball

and American League. Their season lasts from April to
October and includes in the regular season the playoffs, and
World Series. The teams who have won the “pennant” within their subdivisions play each other in the World Series.
The winner becomes the major league world champion.
In the 70’s the owners of the baseball teams had strict
contracts with players, now the rules have changed and
players are free agents. This practice has skyrocketed the
pay scale of the ball players into millions of dollars a year.
Baseball is not only a sport, it is also a business.
MLB is the highest level of professional baseball
competition in North America. Over the course of the
20th century, baseball has spread to many nations, Latin
America, Dominican Republic, Cuba and Japan, etc.
Today baseball is played in the United States on the
amateur level in little league, high schools, universities and
community leagues. Baseball was also an Olympic sport
and claimed gold in 2000. However the 2008 Beijing Olympics was the last game that featured baseball and softball.
The good old American pastime, the game of baseball,
is here for the long haul, and will never lose its magnetism
for the diehard fans of the game. Viva Baseball!

As I delved into the history of
American baseball I was surprised
to find some contradictions as to its
origin. Although some historians believe that Abner Doubleday created
the game of baseball, others disagree.
Evidence about games similar to the
sport dated back to the 18th century. Apparently the two
games called Rounders (a children’s game brought to New
England by early colonists) and cricket came from England.
At the time of the American Revolution variations of these
games were played in schoolyard and college campuses
across the country. The games became popular in the mid19th century in industrialized cities. Because of the popularity of the game called “townball”, “base” or “baseball,”
in Sept. 1845 a group of men founded the Knickerbocker
Baseball Club. One man from the group, Alexander Cartwright, standardized a new set of rules that would format
the basis for modern baseball. The diamond shaped infield,
foul lines and the three strike rule were implemented. In
addition the basemen had to tag the runners instead of the
dangerous practice of throwing balls at them to get them
out. In 1846 the Knickerbockers played their first official
game of baseball against a team of cricket players, beginning a new, unprecedented American tradition.
In 1870’s the first professional baseball league was
established. By the start of the 20th century, most large cities in the eastern United States had a professional baseball
team. However, baseball truly became America’s favorite
pastime in the 1920’s as Babe Ruth, playing for the New
York Yankees, became a national hero.
Through the decades every team has had its great players. Jackie Robinson played for the Brooklyn Dodgers. He
was the first African American player in the major league
in 1947. Prior to Robinson, black players were restricted
to the Negro League.
During my high school years, in 1955 I was a huge
Brooklyn Dodger Fan. Presently my friends and I would be
called groupies. We were somewhat smitten by certain ball
players, like outfielders Duke Snyder and Carl Furillo/and
infielder Gil Hodges. Yes, we went to Ebbits Field holding
signs while cheering on our heroes. Those Brooklyn bums
won the 1955 World Series and from 1947 to 1957 they
were the best team in the National league. Our hearts were
broken when their final game was played in Ebbits field on
Sept. 25 1957. Our team abandoned their fans and moved
to California to become the LA Dodgers. I soon became
a Yankee fan.

Have No Fear

Anyone who knows me knows that I am not a fan of
pain. In fact I am a big baby. I was always envious of those
who said, “I have a high tolerance to pain.” When I went
in for my first total knee replacement on my left knee, I
was told to come back in three months for my right knee.
It too, was also bone on bone. After all the pain I endured
for the first TKR, I felt there was a fat chance that I would
be back for the right knee. For 13 years I took care of my
right knee by strengthening the muscles around it with
daily exercise. I would walk ‘in the water for an hour, and
do the exercises I was taught in physical therapy using the
wall of the pool. Then along came the rooster shots. I had
been going for the shots for the past few years, and they
seemed to help. However, when I fell on the ice in late
January, they no longer helped.
Many of my friends tried to convince me to get the total
knee replacement. They swore that over the past 13 years
there has been a significant improvement in the procedure.
“Yeah, sure,” I replied, “I doubt it very much!” Well, it got
to the point that I was in constant pain and had to always
walk with a walker. I felt that I didn’t want to spend the
rest of my life (at this point in time) using a walker constantly. So I bit the bullet and called Dr. Bogdan’s office for
an appointment. He was the surgeon who had performed
my surgery 13 years ago. Other than all that pain after the
surgery and during rehab, my first TKR operation was a
success. It is still fine 13 years later (knock wood).
I found out that one of the improvements in the operation is the Painball. Under ultrasound guidance, a small
catheter is placed adjacent to the nerve that supplies the
front part of the knee. After surgery, this catheter is then
connected to the Painball device that continuously pumps
local anesthetic medicine to the nerve to alleviate some of
the pain and discomfort after the operation. This procedure
helps in pain management. By not relying fully on heavyduty medications, the patients are more comfortable and
capable of attending rehab in the hospital the same afternoon of their operation. I know! Amazingly, I was out of
bed and performing rehab moves by 3:30 pm, after having
had surgery at 10:30 am. Every morning I went to the rehab
room in the hospital and did exercises for my knee. On
the third afternoon I was discharged and went directly to
Meridian Rehab in Wall. I would recommend anyone to go
there for rehab. I had three hours of rehab every day. When
I came home nine days later, I was using the walker, but
within two weeks’ time I was using a cane. At that point I
was attending outpatient rehab 3 times a week at Meridian
in Pt. Pleasant. They told me to get rid of the cane because
they felt I could walk without any assistance. The very
next day I showed up without the cane, proving they were
right. Within six weeks I was on the dance floor once more!
So everyone was right. They had made improvements
on the total knee replacement. I am sharing this information with you because you can believe me when I say it,
“There really have been great improvements in the
TKR operation.”
I wish you good luck, and may you be as lucky as I
have been.

The current project is almost completed, just in time
to begin selling raffle tickets this month. It’s a stunning
King-size original design, hand-quilted by the Quilters of
Greenbriar II. Begun over two and a half years ago, this
quilt represents more than 600 hours of needlecraft.
Women meet every Tuesday afternoon around a
table for a weekly quilting bee! Quilting is a needlework
technique involving two or more layers of fabric, usually
sandwiched with padding or some sort, stitched together
in a decorative pattern.
We practice an old tradition. The art of quilting was
once an important and large part of women and young girl’s
life. New patchwork and applique designs were created.
These quilts that were produced for utility and pleasure are
the inspiration for today’s quilters. Over time it has become
a popular hobby for women who have a passion for fabric
and sewing. The amount of time and effort that goes into
the creation of a quilt makes these “fabric sandwiches” a
priceless heirloom that is often passed down from generation to generation. Today, creations by master quilters are
sometimes hung on the wall and treated as art!

Scalloped Corn
and Tomatoes
2 (14 1/2 oz.) cans tomatoes, drained and chopped
1 (15 1/4 oz.) can whole kernel corn, drained
1 (14 3/4 oz.) can cream-style corn
2 slightly beaten eggs
1/4 cup all-purpose flour
2 tsp. sugar
1/2 - 1 tsp. fresh ground black pepper
1/3 cup butter
1 medium onion, finely chopped
1/2 tsp. garlic powder
4 cups soft bread crumbs
1/4 cup Parmesan cheese
In a 2-quart casserole stir together tomatoes, wholekernel corn, cream-style corn, eggs, flour, sugar and pepper.
For the topping, in a small saucepan melt butter. Add onion
and garlic powder; cook until onion is tender. Remove from
heat; stir in bread crumbs and Parmesan cheese. Sprinkle
over corn-tomato mixture. Bake, uncovered, in a 350 degree oven about 1 hour or until topping is brown and center
is set. Makes 12 side-dish servings.
Broccoli Salad

Dressing
The night before mix together the following:
1 cup of sugar, 1 cup of mayonnaise, 2TBS of apple cider
vinegar. Refrigerate overnight.
Topping
Fry 12 pieces of bacon until crisp. Crumble when cool.
Salad
2 heads of broccoli snipped into bite size pieces
1/2 cup of dried cranberries (can use raisins or another
dried fruit)
1/2 cup of chopped pecans (can use a different nut)
1/3 - 1/2 cup of chopped red onion
1 Granny Smith apple (large) peeled and cut into cubes
or tiny pieces
Toss together the salad with the dressing an hour or so
before serving and refrigerate. Top with crumbled bacon
bits just before serving.
Sicilian-Style Cauliflower
Perciatelli
INGREDIENTS
Salt
1 head cauliflower, trimmed of greens at stem
About 1/4 cup EVOO - Extra Virgin Olive Oil
6 to 8 anchovy filets
4 cloves garlic. peeled and sliced
1 teaspoon red pepper flakes
1/2 cup dry white wine
1/2 cup chicken stock
A fat pinch saffron threads
Small handful golden raisins
1 14-ounce can diced tomatoes or 2 large, ripe tomatoes,
peeled and chopped
Pepper
1 pound perciatelli or bucatini
Shaved or grated Pecorino cheese
About 1/3 cup toasted, chopped pistachios, pine nuts or
sliced almonds
A handful of basil leaves, torn
Parsley, chopped, for garnish
PREPARATION
Bring a large pot of water to a boil and salt the water
liberally. Add the cauliflower whole and cook in boiling
water for 8-10 minutes; cold shock to cool slightly and
drain. Cut florets loose into bite-sized pieces and finely
chop the stem.
Heat the EVOO, 4 turns of the pan, over medium heat.
Add anchovies and stir to dissolve them into the oil, breaking them up with your spoon. Add garlic and red pepper
flakes, and swirl 1-2 minutes. Add wine and reduce by
half; add chicken stock, saffron, golden raisins, tomatoes,
cauliflower florets and black pepper. Bring to a bubble and
simmer sauce while the pasta cooks.
Cook the pasta to a minute shy of suggested cooking
time, about 6 minutes. Add half a mug of starchy cooking
water to sauce and toss with drained pasta.
Serve in shallow bowls topped with cheese, toasted
nuts, some basil and parsley.

Stuffed Zucchini with
Mortadella and Parmesan

A specialty of the city of Bologna, mortadella is a large,
smooth sausage studded with pistachios.
3 tablespoons olive oil, divided, plus additional for baking dish
1-1/2 cups chopped white onion
2 garlic cloves, minced
4 ounces mortadeIla, minced (3/4 cup)
1 cup fresh breadcrumbs (from crustless Italian or French
bread)
1 cup finely grated Parmesan cheese, divided
1/2 cup chopped fresh (flat) Italian parsley
1 large egg, beaten
8 medium round zucchini, tops cut off, or 4 large zucchini
cut into 1-1/2 inch preces.
1. Heat 1 tablespoon oil in heavy large skillet over
medium heat. Add onion and garlic. Saute until onion is
soft and golden, about 9 minutes. Transfer onion mix to
medium bowl.
2. Stir in mortadeIla, breadcrumbs, I/2cup cheese, and
parsley into onion mixture. Season stuffing to taste with
salt and pepper. Stir in egg.
3. Brush 13x9x2 inch glass baking dish with oil. Using a melon baller or teaspoon, scoop pulp from zucchini,
leaving 1/4 inch thick shell. Fill shells with stuffing. Place
in dish. Drizzle with 2 tablespoons oil, and sprinkle with
cheese. DO AHEAD Can be made 1 day ahead. Cover
and chill.
4. Preheat oven to 350 degrees. Bake zucchini uncovered 40 minutes. Increase heat to 400 degrees, bake until
tender and beginning to brown, another 10 minutes.
Asparagus Risotto

1 1/2 pounds asparagus
5 cups (about) canned low-salt chicken broth
1 cup water
1 tablespoon butter
1 large onion, chopped
2 cups arborio rice or medium-grain white rice
1/2 cup dry white wine
2 teaspoons chopped fresh rosemary
1 cup freshly grated Parmesan cheese
1/4 cup whipping cream
Fresh rosemary sprigs (optional)
Trim tough ends from asparagus; discard. Cut off
asparagus tips and reserve. Cut stalks into 3/4-inch-long
pieces. Place 2/3 of stalk pieces, 1 cup broth and 1 cup
water in blender. Puree until smooth. Set aside.
Melt butter in heavy large saucepan over medium heat.
Add onion and saute until tender, about 8 minutes. Add
rice and stir 1 minute. Add wine and cook until absorbed,
stirring often, about 2 minutes. Add 1/2 cup broth and
chopped rosemary; simmer until liquid is absorbed, stirring
often, about 4 minutes. Continue to cook for 15 minutes,
adding more broth by 1/2 cupfuls and allowing liquid to be
absorbed before adding more, stirring often. Add remaining asparagus stalk pieces and reserved asparagus tips and
continue cooking until rice is just tender and mixture is
creamy, adding broth as needed and stirring often, about
10 minutes longer. Add reserved asparagus puree and stir
until absorbed, about 3 minutes. Stir in 1/2 cup Parmesan
and cream. Season to taste with salt and pepper. Transfer
risotto to bowl. Garnish with rosemary sprigs, if desired.
Serve, passing remaining Parmesan separately.
Makes 6 servings.
Stuffed Acorn Squash
2 large acorn squash, halved and seeded
1 cup water
3/4 pound ground beef
1 celery rib, chopped
1 small onion, chopped
1 medium tart apple, chopped
1 cup cooked rice
1/4 cup sunflower kernels
1 teaspoon curry powder
1 egg, beaten
5 teaspoons brown sugar, divided
1-1/2 teaspoons salt, divided
4 teaspoons butter
1. Invert squash in an ungreased 13-in x 9-in x 2-in
baking dish. Add water and cover with foil. Bake at 375
degrees for 50-60 minutes or until tender.
2. Meanwhile, cook beef, celery and onion over medium heat until meat is no longer pink and vegetables are
tender; drain. Add the apple, rice, sunflower kernels and
curry powder. Cook and stir for 2 minutes or until apple
is tender. Remove from the heat. Stir in egg, 1 teaspoon
brown sugar and 1 teaspoon salt.
3. Place squash cut side up on a baking sheet. Place
1 teaspoon of brown sugar and 1 teaspoon butter in each.
Sprinkle with remaining salt. Fill with meat mixture.
4 Bake, uncovered at 375 degrees for 15-20 minutes
or until heated through.

Potato/Sweet Potato
Torte
1 tablespoon olive oil
2 large leeks, trimmed, thoroughly cleaned, and sliced
1 teaspoon dried thyme leaves
Salt and freshly ground black pepper, to taste
1 pound sweet potatoes, peeled and cut into 1/8 inch slices
1 pound potatoes, peeled, and cut into 1/8 inch slices
Set the oven rack to lowest level; preheat to 450 degrees. Lightly oil a 9-inch, deep-dish pie plate. Line the
bottom with parchment paper lightly coated with nonstick
spray.
Heat olive oil in large skillet over medium heat. Add
leeks and thyme and saute until tender, about 5 minutes.
Season with salt and pepper and remove from heat.
Arrange half of the sweet potato slices, slightly overlapping, in the bottom of the pie plate. Spread one-third of
the leek mixture over the top. Arrange half of the potato
slices over the leek mixture. Top with another third of the
leek mixture. Layer with remaining sweet potatoes, leeks
and potatoes.
Cover the pie plate tightly with aluminum foil and bake
for 45 minutes, or until potatoes are tender. Run a knife
around the edge of the torte and invert it onto a serving
plate. Makes 6 servings.

us every day. If you take the time to look, you’ll find
some interesting shots in your own neighborhood.
Things to look for are leading lines, repeating
patterns, reflections, and colorful subjects.
Walkways and flower beds make great leading lines.
Stairs and fences are samples of repeating patterns.
Flowers and street art are often colorful, and bodies
of water are good for reflections.
