Confection Connection Tennessee ICES Chapter August 2014 Newsletter Letter from our State Representative Dear Fellow TN ICES Members, I wish I could say that I just returned from the 2014 ICES Convention in Albuquerque, NM, but that was not to be. On the Saturday before Convention, I had traveled to New Mexico, with Mary Jo Manis, Glenda Tant and Leah Langford. We were enjoying touring Taos and Santa Fe, when I received a message concerning a medical emergency for my husband. My friends rushed me back to Albuquerque to catch the next flight home. After a stay in ICU and the hospital, my husband, Courley, is home and doing well. Thanks go to True Friends that cut their vacation time short to help me get home as quickly as possible to be with him and the family. I’m looking forward to their sharing what they learned at the Convention. We have a great day planned for the Fall TN ICES Day of Sharing, October 5, 2014. The new location, Uptown Delights and Events, at 414 Wilson Avenue in Tullahoma, Tennessee, has plenty of room for demonstrations, lunch, displays and vendors. Directions: From I-24, take exit 111, toward McMinnville/TN 55, go 12.1 miles, turn right onto S Jackson for 1 mile, turn left onto Wilson Avenue and you will see Uptown Delights and Events on the right. If you go past Craft Lane you have gone too far. Are you interested in a bargain or making some money with those unused or duplicate items in your bakery or cake room? We have a solution for both. We are planning a members’ FALL CUPBOARD SALE. For $10 you can rent a table and chair for your own “CUPBOARD SALE.” Set up time is 8 to 9 a.m. Even if you’re not interested in selling anything, be sure you bring a little extra money for the bargains. There will be time for shopping during the day. Take a mini vacation, enjoy time with cake friends, go shopping or antiquing - come in Friday or Saturday and stay at the Holiday Inn Express and Suites, 2030 N Jackson St in Tullahoma, just a short distance from Uptown Delights and Events. The hotel has complimentary parking, hot breakfast buffet, free HSIA, 24 hour fitness center and indoor saltwater pool. There are many restaurants nearby and “The Walmart” is just across the street. Make your reservations by calling the Holiday Inn Express and Suites (931-222-1414) and mention Tennessee ICES to get the special rate of $115 plus tax BEFORE the deadline of September 12, 2014. And my final parting request is that each of you consider serving as an elected officer or in some volunteer position with this organization, whether on a local or national level. I know you will give our incoming Representative, Jennifer McRoberts and Alternate Representatives, Julie Berryman and Debra Bittle your full support--including your ideas, talents and time. Claudette Tidwell Member Spotlight: Heather Longpré Heather Longpré, our new Class Coordinator, is a graduate of the French Pastry School of Kennedy-King College, in Chicago, Illinois. She has studied sugar art with Nicholas Lodge, Mike McCarey, Scott Green, Sebastien Canonne, M.O. F., and Jacquy Pfeiffer, among other very accomplished Chef-Artists. She is currently studying to become a professional chocolatier. Heather loves to use her skills as a sugar artist to create fun and fantastic cakes and edible art that showcase chocolate, gumpaste, pastillage, fondant, and poured, pulled and blown sugar sculpture. You can learn more about Heather on her website: www.EatTheArtPlease.com. In our last newsletter the Member Spotlight was on Debra Bittle. This fall Debra will be presenting the demonstration –“A Good Support System.” She will talk about PVC pipe and fittings, building your own base that holds the supports and making sure it WILL support the cake. Other ideas incorporated in the demonstration will be using the structure when you’re adding the “extreme” elements, keeping the support structure sound, how to strengthen a weak support and some of the power tools she uses. Debra will be talking about ways you can adapt these techniques to your special needs. You don’t want to miss this demonstration. Thanks to everyone who participated in the TN ICES Survey! Your thoughts and ideas are very important, and this survey will help with future planning. Surprise! We learned that everyone would like to meet closer to home. The survey also showed: ● ● ● ● 68% preferred to meet in March and October, with April and September as the next favorite months. 53% chose Sunday as the most convenient meeting day. There is interest in several different mediums: buttercream and modeling chocolate 84%, fondant - 74% and royal icing techniques - 53%. The most interest is in sculpting figures. The following skills are listed from the most interest to the least interest: sculpting cake, cake construction, gumpaste, advanced piping, intermediate piping, and basic piping. Spring Silent Auction Proceeds We were able to raise almost $300 last spring in our Second Annual Silent Auction. There was around $200 left from the 2013 auction proceeds that was not claimed last year. This means that we have a total of $528 to be divided between those who attended Convention this year. It’s my understanding that there were a total of five attendees – which means the money we raised will be VERY helpful for those who were able to make the trip! Since that was the purpose of hosting the silent auction – here’s a pat on the back to all of you for such a fine job! Bittle, Treasurer MIDDLE TENNESSEE ICES SUGAR PLAY DAY GINGERBREAD WORKSHOP Have you always wanted to make a GINGERBREAD HOUSE but never got around to it because you needed directions and help? Glenda Tant, who has won several Gingerbread Competitions, will share ideas, tips and recipes as you have a chance to decorate on gingerbread. This FREE event is sponsored by Jan Edens at the Sugar Drop. All decorators, beginners to advanced, ICES members or non-ICES members are welcome. MINUTES OF THE GENERAL MEMBERSHIP MEETING OF TENNESSEE ICES HELD AT COMFORT SUITES IN LEBANON TENNESSEE MARCH 16, 2014 Acting State Representative Claudette Tidwell called the meeting to order. She explained that she will be Acting Representative for a short time due to the resignation of Representative Elaine Miller. Claudette welcomed guests, Simi Cakes, First Timers, members and non-members. She reviewed the agenda for the day. We will first have a demo by Simi Cakes, lunch will follow, and then we will have our sugar egg class. She told us we have two vendors across the hall, Sugar Drop and Tonya Hickey. She encouraged us to bid on the Silent Auction items. Claudette introduced the Executive Board, herself as Acting State Representative, Debra Bittle, Treasurer, Cindy Zoesch, Secretary, Leah Langford, Acting Newsletter Editor. She explained the Newsletter Editor position is voluntary and we need someone to volunteer for it. She introduced Heather Longpré, our Class Coordinator, and commented on what a great job Heather has done. Claudette introduced Darla Davidson, our Webmaster, and said she has also done a great job. Cindy read the minutes. Claudette asked for any corrections or additions, there were none. Heather moved to accept them as read, Debra seconded. The minutes were accepted. Claudette drew a name for the Early Bird drawing, Liz Carson won the prize, a certificate to be used for her registration fee to our next Day of Sharing (DOS). Debra gave the Treasurer’s report. She also reported on the disbursement of the funds from our last Silent Auction. Claudette explained that we held the first auction during our last spring DOS to benefit those going to the convention in Lexington, Kentucky. Debra has some unclaimed money. She read the names of those who have money coming and asked them to claim it today. Money not claimed today will go back into the Silent Auction fund. Claudette welcomed First Timers and gave them a gift and some information about ICES. Old Business: Claudette thanked Mary Jo Manis for organizing and running the silent auction. Bidding will stop at 2 pm. Mary Jo encouraged us to bid, saying there is something for everyone. Claudette said we would be taking breaks during the day, please check out the Silent Auction and visit the vendors Claudette talked about our plans for our venue for future meetings. We are having some difficulty booking with Comfort Suites due to lack of availability, and other hotels that were investigated are not suitable. Discussion followed. Claudette called for a vote to see if it was important to our membership to keep the same dates each time for our DOS. There was not a majority vote to keep the same dates every time. Liz Carson said she has a large venue in Tullahoma she would be willing to let us use at no cost. Discussion followed regarding the location. The membership is enthusiastic about this idea. Claudette, Cindy, and Heather will drive to Tullahoma and check it out. Claudette talked about the upcoming convention in Albuquerque. Leah said she attended Mid-Year and there is a lot to do in New Mexico. She gave us some important dates to remember for registration. The convention dates are July 31 to August 3. There will be 60 demos and 32 classes. Check out ICES.org for all the information. Jennifer McRoberts also attended Mid-Year as an Acting Representative. She talked about the theme and has handouts for us. She stated the live cake challenge will be held again. See her with any questions you might have. Claudette said we need a Newsletter Editor. Please think about this and let her know if you are interested in filling this position. New Business: Leah told us about one of the benefits of ICES membership, and that is if you are a member as of April 1, 2014, you are automatically entered into a drawing, to be held at the convention, for a scholarship award. The amount depends on funds left from last year’s convention. Claudette said it was time to elect a new State Representative. Jennifer McRoberts nominated herself. Liz Carson was nominated by Marvin Carson. Claudette said that Alternate Representatives are encouraged to organize group activities in their areas of the state. Claudette asked each candidate to tell us something about themselves and why they are seeking the position of State Representative. Liz talked about her cake business and her passion for mentoring. She would like to encourage people in her area to come together to support each other. Jennifer talked about her 6 years in ICES and would like to help us understand the sometimes-complicated by-laws of ICES. She also wants to reach out to states without a representative. Claudette told us we also need to elect two Alternate Representatives. Jennifer nominated Julie Berryman for the Middle Tennessee position. Leah nominated Debra for West Tennessee Alternate Representative. Cindy and Leah collected the votes. Claudette announced that Patsy Flowers has had knee surgery recently. Gail Forester’s brother died. Jureta Gregg has been diagnosed with cancer and is undergoing chemotherapy. Please keep them in your thoughts. Claudette pointed out that we have comment cards on the registration table. We are asking for input on any suggestions you might have, as well as any demos you can do. Claudette told us about the Mid Tennessee Play Day in April to be held at the Sugar Drop cake shop in Brentwood. Julie and Darla will be doing fondant figure modeling. An email reminder will be sent out regarding this. The plan for the rest of the year is in place. June will feature cakes for men, bring your ideas. In September Glenda Tant will do a gingerbread class. In November Jan Eden and Simi Cakes are sponsoring an isomalt class. Lydia Spencer talked about the Nashville Cake Club that is held at her home on the second Sunday of each month. April will be a planning meeting. Claudette pointed out that many of the sugar eggs on display table were made at the last Cake Club meeting. Claudette said it was time to announce the scholarship winner. She read part of one of the letters of recommendation. Shari Nance is the winner of the scholarship. The election results were announced. Jennifer McRoberts is the State Representative. Debra Bittle is the Alternate for West Tennessee. Julie Berryman is the Mid Tennessee Alternate. Debra, our current Treasurer, noted that we will need a Treasurer since she has accepted the position of Alternate Representative. Jennifer McRoberts nominated Leah Langford. Debra seconded the motion, a vote was taken, Leah was voted in as our new Treasurer. Laura Grater asked if anyone else is going to the Cookie Convention in Salt Lake City next weekend. Our members have not heard of this. Jennifer announced that the convention will be held in Omaha in 2015, Mobile in 2016. She had some questions about using the Tennessee scholarship at the convention. Claudette said this will need some further review. Jennifer had some further announcements from the Mid-year meeting. The deadline for the newsletter is now the 20th of the month. She also said that a social committee has been formed, there will be 6 people on the committee. There will be a new program to train ICES certified judges for cake shows. It is hoped this will be in place in 2015. Heather talked about our spring 2015 classes; Nick Lodge will be our teacher. Heather wants to know if our membership is interested in learning more about the chemistry of baking, fillings, and ingredients. A show of hands confirmed support for this. Heather gave us her email address and asked members to email her with their thoughts. There being no further business the meeting was adjourned. Chef Nicholas Lodge Little did Nicholas Lodge know that when he started training to become a pastry chef where this path would eventually lead him. The field of sugar art has transported him around the world, introduced him to Royalty and celebrities and has opened numerous doors to exotic locations that most people only dream about. The author of over a dozen books and fifteen instructional DVD’s, Nicholas teaches and demonstrates his unique skills around the world. Over the years his teaching tours have taken him to twenty-six different countries, and he has introduced sugar art into unlikely places such as India, China and Fiji. He is internationally known, not only for his unique skills in sugar art, but also for the quality of his demonstrations and classes, at which he inspires enthusiasm in everyone who attends. This reputation has also involved him in judging sugar arts events around the globe and as one of the original judges of Food Network, “Challenges” television series. The base of operation for Nicholas is Atlanta, Georgia where his classroom, warehouse and retail gallery are all located under one roof. When Nicholas was inducted into the International Cake Exploration Societe (ICES) Hall of Fame in 2001, he was the youngest person ever to receive this honor. Nicholas is a Chef Instructor at the French Pastry School in Chicago where he is part of the faculty teaching the sixteen-week cake decorating program, “L’Art of Gâteau.” Currently, Nicholas is a spokesperson for Albert Uster Imports, and conducts product demonstration road shows throughout the United States. In 2010 Nicholas was honored to receive both the Top 10 Cake Artists and Top 10 Pastry Chefs in America Awards.
