D R INKS M EN U CHINESE BAIJIU 白酒 The history of China is also the history of Baijiu. Through the last few thousand years in China, Baijiu has been a constant presence, representing the finer aspects of life. In earlier times, Baijiu was part of the realm of royalty and scholars, brought out to toast family events, to celebrate victory and to accompany spirited conversation. Now, Baijiu is enjoyed by everyone, and has become an integral of Chinese culture. For Chinese everywhere, Baijiu is a symbol of friendship, mutual respect and celebration. CHINESE HUANGJIU 黄酒 Don’t be fooled by its name. Yellow Wine is not really yellow. Huangjiu (literally “yellow wine” or “yellow liquor”) is a type of Chinese alcoholic beverage brewed directly from grains such as rice, millet, or wheat and is often used as a kind of Chinese traditional medicine. Unlike baijiu, such liquors are not distilled, and contain less than 20% alcohol, due to the inhibition of fermentation by ethanol at that concentration. These wines are traditionally pasteurized, aged, and filtered before their final bottling. Mou Tai 茅台 Moutai Bai Jiu is proudly renowned as the national drink of China. Brewed in the same region for over two millennia, Moutai Bai Jiu contains only the natural growing sorghum of the local valleys and water from the Chishui River. Brewing the liquor is never rushed therefore, quality is never compromised. The unique climate of this region along with the stringent production has created liquor with an exotic flavor, rich with a magical aroma that has been enjoyed for centuries. Nu Er Hong 20 yrs 二十年女儿红 Shui Jing Fang 水井坊 52% Shui Jing Fang 水井坊 38% The name “Nu Er Hong” literally means “Daughter’s Wine”. Wine is brewed in celebration of the baby girl’s birth, stored underground until the girl gets married 16-18yrs later. This drink is celebrated for its exquisite and mellow flavours. Brewed from the award winning, oldest distillery in China, this baijin exudes a distinctive sour plum nose with a lingering and rounded fruity aroma. The initial taste is sharp and warming, followed by a complex bitter sweetness and ending with a lasting pure and minty after-taste. Pagoda 30 yrs 三十年塔牌邵兴 On the interior surface of the bottom of the bottle are six intricate paintings of scenic spots in Chengdu: the Wu Hou Shrine, Du Fu Thatched Cottage, Jiuyan Bridge, Hejiang Pavilion, Wangjiang Tower and the Shui Jing Distillery. The paintings are viewed through the liquid itself evoking the 600 years of cultural heritage that have created this exquisite spirit. * The ancient Shui Jing Fang Distillery has been named by Shanghai Grand Book of Records “The oldest distillery in the world” for its more than 600 years of continuous production * Top 10 Archeological Discoveries of China in 1999 | China’s First Baijiu Distillery * Best Premium Chinese Spirits Shao Hsing wine is the the most traditional Chinese banquet beverage, a famous rice- derived wine of Zhejiang province. It has more than 2400 years of history. Today, Shao Hsing wine is still produced using the traditional method of natural fermentation and storage. Salon S’ 1997 The House of Salon only produces one champagne; the rare vintage tête de cuvée blanc de blancs from a single Grand Cru vineyard. Since 1911, Salon vintages have been declared no more than four times a decade. It is not for the timid, but rather it is a wine for those who can be patient. —The Wine Advocate, 94 points Champagne Devaux Grande Reserve NV ( Magnum / 750ml ) If Champagne Devaux is good enough to be served at Michelin-star restaurants such as Alain Ducasse at the Dorchester and L’Atelier of Joël Robuchon, it’s good enough for us. Pol Roger Blanc de Blancs 2000 …pretty wine graced with warm, toasty notes, butter, apricots and hazelnuts, all of which come together in a rich, broad-shouldered style that is very appealing. —The Wine Advocate, 90 points A special blend made for Czar Alexander II and his family over a century ago and the de facto bubbly of the Hollywood Celebrity fraternity, Cristal’s annual production allocation accounts for just 6% of global top Champagne production. Drink up – there aren’t many left of this vintage. Delamotte Blanc de Blancs 2002 Pol Roger Cuvée Sir Winston Churchill 2002 Pierre Paillard Brut NV Grand Cru Champagne …wonderfully rich and expansive…Smoke, peaches, mint and flowers are just some of the nuances that flow from this textured kaleidoscopic Champagne. —The Wine Advocate, 94 points Perrier Joüet Belle Epoque 2004 The Cuvée Belle Epoque 2004 is like a freshly cut diamond —Hervé Deschamps, Perrier Jouët Chief Winemaker LIMITED EDITION This medium-bodied, refined Chardonnay possesses notable complexity in its layered, refined personality. —The Wine Advocate, 92 points Listed as the top 100 most exciting wines of 2013 by the Wine Spectator. This handsome champage from the village of Bouzy shows lovely balance, with a satiny quality to the refined mousse and mouth watering acidity meshing with pure notes of poached quince, lemon mousse, white cherry and fresh ginger. — The Wine Spectator, 92 points ROSÉ CHAMPAGNE 玫瑰香槟 WHITE WINE 白葡萄 The cure for a hot, humid day is a crisp cold glass of the finest white wine EU R OPE Smith Haut Lafitte Blanc Grand Cru Classe 2005 Pessac-leognan, Bordeaux, France Sauvignon Blanc Dom Perignon Rosé 2000 It is a Champagne that demands serious attention. The 2000 will test the limits of what readers expect from a Dom Perignon Rosé, but the wine is simply marvelous. I loved it. —The Wine Advocate, 96 points A terrific example from this impeccably run estate, this 2005 dry white Bordeaux exhibits plenty of citrus oil, honeysuckle, and grapefruit... This may be the finest dry white the Cathiards have produced at this estate. —The Wine Advocate, 94 points Chateau Pape Clement Blanc 2000 Jacquesson Dizy Terres Rouges Rosé 2004 A real Champagne lover's Champagne. One of the oldest Champagne houses, Jacquesson was a favourite of Napoleon Bonaparte, who picked it as the bubbly poured at his wedding. Pol Roger Rosé 2004 ….fruity and vinous at first but then the minerality kicks in, giving the wine its energy and sense of focus. Fairly delicate, feminine style of Rosé that can be enjoyed as an aperitif or alongside a meal. — The Wine Advocate, 92 points Champagne Devaux Cuvée Rosé NV If Champagne Devaux is good enough to be served at Michelin-star restaurants such as Alain Ducasse at the Dorchester and L’Atelier of Joël Robuchon, it’s good enough for us. Joseph Drouhin Puligny Montrachet 2011 Beaune, France 100% Chardonnay A wine of great finesse, distinguished and elegant. The colour is pure and bright, with light glints of white gold. The aromas evoke trees in bloom and white flesh fruit, like white peaches. With age, the aromas evolve towards almond and lightly grilled dried fruit. On the palate, there is a sensation of fresh silkiness. Jermann Pinot Grigio IGT 2012 Bodegas Chivite Coleccion 125 Blanco 2010 Navarra, Spain 100% Chardonnay Pale yellow with green hints. Reduction aromas, hazelnut and almond and lily notes. Brioche. Smooth attack, dense development, fresh. Very tasty and vey long persistence. St Paul’s Gewurztraminer ‘Passion’ 2012 Trentino-Alto Adige, Italy 100% Gewurztraminer Discreet mature hints on the nose, aroma of candied pineapple, passion fruit and a little baked apple. Well balanced palate, very mellow, subtle hints of rose petals and a long, finale mineral notes. Bernard Defaix Chablis 1er Cru Fourchaume 2012 Chablis, Burgundy, France Supple, powerful and very delicate, this wine shows aromas of fruit and a great minerality on finish in the mouth. Friuli, Italy Its aroma is intense, full and fruity, with excellent persistence. Its taste is dry, velvety, and particularly well-orchestrated for its full body. Gunderloch ‘Jean Baptiste‘ Riesling Kabinett 2011 Pfaltz, Germany Fine minerally essence to its juicy ripe grapefruit, ginger and spiced apple flavors that are long and rich. Elegant finish features tropical and savoury notes. Cusumano Angimbé Sicilia IGT 2013 Sicily, Italy Insolia-Chardonnay Simple and bright with luminous reflections. Solid wallop of freshness in the form of citrus, lemon curd and white nectarine. ALWAYS LOVELY (sweet wine) 甜酒 Isole e Olena Vin Santo 2004 Tuscany, Italy Trebbiano-Malvasia Isole e Olena Vin Santo is considered by almost every producer in Tuscany to be the best example. Paolo Marchi, winemaker, has said on a number of occassions “If I catch anyone dipping cantucci/cantuccini into my Vin Santo I will strangle them...It takes too much work to make Vin Santo and after all this people dip a cookie in it!” Made from dried grapes. For our list, we dug deep into our network and sourced some of our favorites that offered the best value. Aromas of stone fruits, honey, ginger spice and citrus peel adorn the nose, whilst the palate is surprising light with a good balance of sweetness and acidity, honey and citrus flavours, and a nice cascade of acidity cleaning up the finish. Château Margaux 1994 Château Mouton Rothschild 1994 Château Cheval Blanc 1994 Riondo Moscato Oro Cuvee Excelsa 2012 Veneto, Italy Moscato Sweet Muscat style. REDS 红葡萄酒 REDS 红葡萄酒 We love our Pinot Noir (who doesn’t these days?) but we humbly deferred to the Burghounds in our circle for wineries worthy for this list. F RAN CE Dominique Gallois Charmes Chambertin Grand Cru 2010 Pinot Noir A distinctly earthy blend of pure red berry liqueur aromas trimmed in discreet wood introduces rich and relatively full-bodied flavors that possess excellent punch and precision, all wrapped in a balanced and impressively persistent finish. In sum, this is a classic Charmes. —Allen Meadows (Burghound), 91-94 points Joseph Drouhin 1er Cru Clos des Mouche 2010 Pinot Noir The 2009 Beaune Clos des Mouches is totally beautiful. It shows gorgeous inner perfume and a weightless, gracious personality. —The Wine Advocate, 93 points F R ANC E Domaine David Duband Gevrey-Chambertin 2010 Pinot Noir One of the rising stars in Burgundy to watch out for, according to our Burghound sources. Domaine La Barroche Chateauneuf du Pape 2011 65% Grenache, 16% Mourvedre, 13% Syrah, 5% Cinsault, 1% others Wine of the vintage. Majestic perfume of black and red fruits intertwined with floral, sandy soil and lavender notes. This astonishingly rich, naked wine (aged in old foudres) should age effortlessly for 10-15 years. —Robert Parker, 93-95 points Domaine de L’Hortus Rouge Grand Cuvee 2009 60% Syrah, 35% Mourvedre, 5% Grenache Black cherries, violets, iris and fennel fill the nose, then re-emerge on a creamy palate, with richly ripe fruits flavours. Rich and polished, with marrow-liked savoury meatiness. Domaine Jean Michel Guillon Chambolle Musigny 2011 Pinot Noir Soft wood sets off the red and black currant suffused aromas that introduce notably finer middle weight flavors that possess a beguiling texture before culminating in a lightly mineral-inflected, clean, balanced and solidly persistent finish. This Chambolle villages is both ripe and very pretty. The area of Pic Saint-Loup in Southern France (Loup means wolf in French) is dominated by a 658m tall mountain from which it takes its name. REDS 红葡萄酒 REDS 红葡萄酒 With more than 2,000 documented grape varietals in Italy, we know the below may seem biased. But we adore our Sangiovese, Nebbiolo, the gutsy IGTs and the wine of love - Amarone. Sweet dark cherries, menthol, pine, mocha and spices are some of the notes that are woven together in this rich, textured Barolo. —The Wine Advocate, 94 points The 2007 Guado al Tasso screams of Bolgheri. Silky tannins frame a graceful core of perfumed ripe fruit. Giuseppe Cortese Barbaresco Rabaja DOCG 2003 100% Nebbiolo Intense and ethereal perfume with fresh notes that evolve into scents of spices, tobacco and brushwood notes as it ages. Dry, full and robust flavour with a rich and harmonious structure. Tenuta Sant’ Antonio Amarone Selezione Castagnedi DOCG 2010 70% Corvina, 20% Rondinella, 5% Croatina 5% Oseleta Ruby red with purple reflections. Ripe red fruit, spicy fragrances of liquorice, black pepper and a hint of chocolate. Well-balanced, with round tannins, full-flavoured, elegant, fine and fresh. Proprieta Sperino Lessona 2008 Nebbiolo Aromas of wild berries, violets and a touch of spice and smoke from the oak ageing. On the palate it has the characteristic fine but marked tannins and lovely lifted acidity so typical of Nebbiolo. This is balanced by ripe, delicate fruit and a lovely raspberry fruit on the finish. Tenuta di Fessina ERSE Etna Rosso DOC 2009 80% Nerello Mascalese and 20% Nerello Cappuccio Bright ruby-red in colour, Erse entices the senses with aromas of crushed berries, plums and smoky minerality. On the palate it is a delicate, finely textured red which unfolds into a lengthy, elegant finish. SPAI N Villa Girardi Buere Alto Ripasso Valpolicella 2011 Espectacle del Monstant 2009 Corvina, Rondinella and Molinara Made from the 3 Italian grapes Corvina, Rondinella and Molinara, we love the value that this ripasso wine always offers. Grenache Located in the commune of La Figuera, just outside the DO of Priorat. Espectacle is a two-hectare parcel of 100-year-old Garnacha owned by 2 couples. —The Wine Advocate, 93 points Isole e Olena Chianti Classico 2011 Roda Roda 1 2006 Sangiovese The 2010 Chianti Classico is a gorgeous, racy wine laced with bright red cherries, flowers and herbs, all of which come together in the refined, medium-bodied style that is the house signature. —The Wine Advocate, 89 points Tempranillo Roda 1 is a meditative wine, with more pronounced oak, with black fruit character. Bodegas La Horra Corimbo 1 2009 Castellare di Castellina Chianti Classico Riserva DOCG 2010 (375ml ) Sangioveto, Canaiolo and other complementary variety Bright ruby-red in colour, Erse entices the senses with aromas of crushed berries, plums and smoky minerality. On the palate it is a delicate, finely textured red which unfolds into a lengthy, elegant finish. Tempranillo The 2009 Corimbo I borders on black in color with a loaded, plush presence on the palate…—The Wine Advocate, 92-95 points Ferrer Bobet Priorat 2010 Cabernet Sauvignon, Carignan, Grenache Ferrer/Bobet is the future showplace of Priorat...it is loaded with fruit, exhibits outstanding volume, and has a 45-second finish. At the current asking price, once it is released it will be a steal. —The Wine Advocate, 95-98 points REDS 红葡萄酒 REDS 红葡萄酒 S PAIN Bodegas Chivite Colección 125 Reserva 2006 71% Tempranillo, 17% Merlot, 12% Cabernet Sauvignon Intense deep garnet colour. Subtle and complex aromas with predominantly black fruits –black plum, bilberry jam- over spices of fine oak, Havana cigar, cedar. Powerful attack. Well-balanced, structured and full-bodied evolution with aftertaste of spices, clove, morello cherry. Bodegas LAN Reserva 2007 80% Tempranillo, 10% Mazuelo, 10% Garnacha Brilliant ripe black cherry and red colour with good depth. Fruity aromas with good notes of fine wood. Velvety in the mouth with a long finish. To those who haven’t yet tried Chinese wine, a quick search of domestic brands will virtually always lead you to Grace, the 14-year-old boutique winery located in central Shanxi province, Taiyuan, a family-owned vineyard. Today, the vineyard is run by CEO and President, Judy Leissner (voted Asian Wine Personality of the year 2012) who is focused on “quality, not quantity” and its this very approach that has helped earn Grace Vineyard the title as China’s top-rated winery. C HI NA Grace Vinyard Chairman’s Reserve 2010 The wine carries typical flavour from cool climate region, which has an attractive spice, pepper, cinnamon and liquorice notes with underlying flavour of ripe berries fruits. —Robert Parker, 83 points * World Wine Awards in 2012 Bronze Winner Grace Vinyard Deep Blue 2010 The blend is Cabernet Sauvignon dominant at 74%, with 21% Merlot and 5% Cabernet Franc. While the Cabernet Sauvignon gives firmness to the fruit derived characters, Merlot has a softening effect and Cabernet Franc adds a touch of aromatic sweetness. This wine offers the palate multiple layers of toffee and chocolate, culminating in the long fruity finish. Taylor’s 20 yrs old Tawny It is my opinion that Taylor's tawny ports are the best of their type. When tasted against other tawnys, they all exhibit more aromatic personalities, greater fruit and ripeness, and a wonderful sweetness and length. —The Wine Advocate, 92 points Cockburn’s 2000 Full-bodied, massive, and concentrated, with a 45-second finish, this thrilling effort should drink well between 2010-2035. —The Wine Advocate, 95 points SAKE 清酒 SAKE 清酒 IWAMURA BREWERY Gifu Prefecture (since 1787) Onnajoshu “Lady of the Castle” Junmai Daiginjo Sakigake (Boxed Edition) Sake Meter Value: +5 The highest quality Kouji and Kakemai rice grains are selected and polished patiently over several days to achieve the finest 35% polishing rate. The taste is deeply refined with a perfect balance of dryness and sweetness. This is one of two of the Iwamura Distillery’s crown jewels; truly an outstanding sake of the highest level.
