Please be aware that even foods prepared
without gluten-containing ingredients may
not be “gluten-free”. Our recipes are created
in open kitchens where cross-contact is
possible and ingredient substitutions are
sometimes made.

At the All-You-Care-To-Eat Residential
Restaurants, you have the freedom to design
meals to fit your specific dietary needs.
Be sure to ask the location manager, chef, or
one of the supervisors about specific
ingredient information and
“upon request” items.
Breakfast: scrambled eggs, bacon, sausage,
made-to-order omelets, fresh fruit, yogurt, rice chex
cereal, cream of rice (upon request)
Salad Bar: fresh fruit and vegetables, legumes,
hummus, yogurt, tofu
Daily Root: vegan entrees and soups within menu cycle
(ask staff if daily option is made without gluten)
Pizza: gluten-free pizza available upon request
Grill: grilled chicken breast, hamburgers,
cheeseburgers, turkey burgers (without bun)
Deli: gluten-free bread available to make grilled
cheese, turkey, ham, peanut butter, tuna salad,
salad, vegetable, hummus, or other customized
sandwiches
Home Zones: cycle menu features starch, pasta pronto,
rice dishes, potatoes, or vegetable options (ask staff if
daily option is made without gluten)

Qdoba Mexican Grill: customize a rice bowl with grilled
meat, vegetables, beans, cheese, pico de gallo,
guacamole and salsa varieties. Breakfast bowls
available with choice of eggs, vegetables, potatoes,
meat, salsa and more
Know which grains are safe
Naturally gluten-free grains include corn,
amaranth, brown and white rice, arrowroot,
buckwheat, quinoa, millet, and flours made
from rice, tapioca, soy, and beans
like garbanzo.
Read labels on packaged foods
Terms like “wheat-free” do not necessarily
mean “gluten-free” since other gluten-containing
ingredients may be present. Some commonly
used ingredients with gluten that may not be
recognized include hydrolyzed wheat protein,
bran, brewerʼs yeast, farina, malt, textured vegetable
protein, triticale (a wheat-rye blend), and starch.
