It is broken with the Sbrinz chisel, allowing it to display its true character. A wonderful fracture structure testifies to the maturity of the cheese, reached at around 24 to 30 months for chunks. Alp Sbrinz is matured for 36 months. A fine Sbrinz chunk with some well-matured balsamic vinegar or fig or pear mustard … the winning accompaniment to any aperitif. Treat your guests to a dessert with Sbrinz chunks! Sbrinz AOC is THE Swiss grating cheese. It is extremely popular with many oven dishes and gratins because it does not form trings. Sbrinz grated cheese can be stored perfectly in the freezer compartment and used in convenient portions. Make your own «Sbrinz Pralines» with chunks and grated Sbrinz. How to do it: Roll Sbrinz chunks in fig or pear mustard then in grated Sbrinz and allow to dry. Place them all in a large sieve and shake off the remaining grated cheese. Enjoy! Sbrinz is especially good for slicing at the relatively young age of 20 to 24 months. The cheese is still malleable and can be rolled into wonderful curls. For example as wafer-thin Sbrinz to accompany carpaccio with pears, rucola or Grisons airdried beef. Or filled with herb or other cream cheese. Either way: Sbrinz sliced curls are a delight for everyone.
