Homemade Limoncello Part 2~ Ready to sip while lounging in the sun?Now if
Winter would just end?.
Even though the weather outside is truly frightful we were able to go outside with Mr. and Mrs. Homeowner to take advantage of
their farm planning expertise and figure out how we will set up the animals pens at the barn and the vegetable garden for the coming
spring.
We have 2 goats reserved for us to start with. I am excited beyond measure to get things set up here so they can come home. One of
the goats will be a yearling (if I'm lucky perhaps already bred) and a new baby that was just born a few weeks ago.
I remember how over the moon I was the days we brought Max, Fiona and Daisy home. I was a combination of scared to death and
giddy. Even though I had read all there was to read there is nothing like real life experience to bring confidence in raising farm
animals.
I mean seriously, If I had known better would I have set up the feeding area at the far side of the pen so every single time went in to
feed them I had to deal with being knocked over in the mud (summer rainy season) so they could steal the food bowls from my
hands? Would I have tried to reason with goats (which can't be done) so I could sit down just long enough to trim one hoof without
having my hair eaten while the other quietly stood behind me eating holes in my shirt? Or perhaps I would have known to recognize
the signs of a goat getting really angry with the other so I could have avoided being hit so hard by Max that I had bruises that lasted
for weeks because I decided in my infinite wisdom to plant myself between Max and Daisy during a "goat dispute". I can tell you
this?.get hit by an angry goat once you don't step in the middle of a goat dispute ever again! Ok, truth be told?.I loved Daisy so
much I probably would have done it again...
There I was laying splat on the soggy goat poop covered ground in horrible pain only to look up and find Fiona looking down at me
bored to pieces chewing her cud. I told her I was ok (because I liked to pretend she cared)?.she burped and walked away. Goat
burps are gross?.especially from close up.
Things look different from the barnyard floor. You realize how much you know, don't know and have just that moment learned
(causing you to find yourself on the barnyard floor). Even as I sat there hurting and filthy I was happy. I miss the chores?.I miss
the grit. I miss having Coco the chicken fly up and hitch a ride on my shoulder every morning.
While the animals will all be new. I am once again giddy with the thought of the new personalities that will soon share our world. I
will not make my old mistakes?.I learned from those (mostly). I am however confident I will make all new ones. That's part of
growing. Next weekend Hubby will rebuild our hen house. It all starts there. I will look out the window and see critters that belong
to us again. I will not just be the sad stalker at the local feed store?.I'll be a customer. Though I had better bone up on the proper
names for stuff because people here will notice when I just call everything a "thingy"?it's one thing to be clueless, quite another for
people to notice.
Back home the good folks at the feed store were kind enough to never call me on my "city ways"?.they would just gently walk me to
what I needed and tell me EXACTLY how to use it with a knowing smile and pat on the shoulder. I made them laugh. That was not
the goal but I simply didn't know enough to fake it yet. Do I now? I guess we will soon find out!
Homemade Meyer Limocello
The peel with NO white pith from 7 organic lemons or in todays case Meyer lemons.
1000ml bottle of vodka (It does not have to be the best but it should be quite drinkable) Some people use a product called
Everclear, I find it makes a bitter and frankly unpleasant final product and so I don't use it?EVER.

5 cups water
3 cups sugar
Here we go?.
Peel the zest from the lemons and place them into a large (sterilized) glass jar with lid. You can use a vegetable peeler or a very
sharp knife. I use a knife and completely remove the white bitter pith. If you leave pith on the lemon peel the bitterness will end up
in your final drink.
Gorgeous Meyer Lemons
Add the vodka to the jar with the lemon zest. Close the jar and let the vodka take on the intense flavor (and color) of the lemon
peels. Let the vodka and lemon peels rest quietly undisturbed for 6 days.

On Day 7 bring the water to a boil and add the sugar. You are making a simple syrup. Make sure all of the sugar is fully dissolved.
Allow the syrup to cool completely.

Strain the vodka into a large bottle or jar so you can mix the cooled syrup to the lemon vodka. Give it all a good shake,

The jar is a little steamy from being washed. Everything must be super clean.
Give the limoncello a really good stir. You want that sugar syrup completely combined with the lemon infused vodka.
Using a funnel pour off the limoncello into your decorative bottles?I found these and decided to use these instead of the one I was
going to use originally. They are pretty, seal completely and very importantly?.fit in the fridge.

Seal the bottles and let the limoncello sit in the fridge for 1 more week. In Italy some people let the limoncello sit for months before
they serve it. I find no difference after the 1 week.

Serve very well chilled as a cordial or use the limoncello to make other cocktails?..or pound cake?.
Don't forget the handwritten labels?..much nicer than a computer printed one. I buy blank labels of all sorts at the craft store. They
are inexpensive look great. If giving as gifts, use smaller bottles, handwritten labels and a hand tied bow (use wire ribbon).
