WORDS FROM . . . John Schiltz
Happy Holidays everyone!!
Chris and I want to wish everyone a cheerful and
fun holiday season!!
I have a lot to share with you this month, first of
all, do not forget that your 2013 Newsletter membership expires at the end of this month. I hope you
enjoyed the newsletters this year and if you have not
renewed your membership for 2014 you still have
time. I would like to thank Jill Heinbigner for all her
hard work putting the newsletters together every
month and making sure you receive them by the 1st
of every month. I want to apologize again for the
delay in October’s newsletter; the Post Office
misplaced the letters and that is why they were
delayed. Hopefully they are back on track and we
will not have any further delays.
December seems to be everyone’s favorite month,
and I am pretty sure it is because of our homemade
turtles. With the purchase of a lunch or dinner entree,
buffet or brunch bring in your coupon and receive
one dozen of our delicious homemade turtles. Also,
if you would like to purchase a box of turtles for
holiday gifts the price is $20 (one dozen). Please
order them in advance as it is a very busy time for
Pastry Chef Joni and Alice.
On Saturday, December 7th from 8am-10am join
us for Breakfast with Santa. Enjoy a great breakfast
buffet and an opportunity for the children to have
their photo taken with Santa (do not forget your
camera). Santa will also have a gift from the North
Pole for every child. Later that day
Lake Elmo is having their 1st Annual
Help Light Up Lake Elmo this holiday season!
Downtown Lake Elmo will be transformed into a
winter wonderland this December and you’re invited to join in. Bring an ornament with you to
Main Street Lake Elmo on Saturday, December 7,
and add it to the community tree. Family friendly
activities will begin at 4 pm, and a lighting
ceremony will take place at 6 pm.
This time of year our staff at the Lake Elmo Inn
went over the top decorating for the holiday season.
With all the ornaments and decorations the
restaurant has never looked more festive.
Remember when you come to the Inn this month
please call and make a reservation, we are filling up
quickly. We are still giving a free beverage when
you bring a ornament to help decorate our tree and
the ceiling in the bar. I mentioned this last month
that this year we are changing from bringing a nonperishable food item to donating a minimum of $2.
Valley Outreach can purchase $9 worth of food per
every $2 donated, this helps them lets purchase
items they really need. Thank you for all your donations!
Once again we are offering for every $100 you
spend for Gift Certificates we are giving you a free
$20 gift certificate. Give a great gift and use the
free one for yourself or they make great stocking
stuffers. Christmas Eve we will be having our
annual Christmas Eve buffet from 10-2. Featuring
our famous carved Prime Rib and Shrimp Scampi
and Panko Breaded Shrimp. Also do not forget that
Santa will be visiting us with gifts for the children.
Last but not least Happy New Year!!!
~~John
P.S. Chris and I want to welcome my new grandson Charlie John to the world! Thank you Hunter
and Christie, he is perfect!!!
Catering & Event Center News … From Chris
With all the holiday entertaining we
love to do, sometimes it can be
challenging to prepare meals and
snacks that everyone can enjoy. At
the Lake Elmo Inn and Event
Center, we pride ourselves on our ability to offer the
same quality dining experience to all of our guests,
including those with special dietary needs such as
vegetarian, vegan, gluten free, or other food allergy.
Many ingredients are now readily available for you
in any grocery store, such as gluten-free breads and
crackers. Make things simpler for you; it is more
desirable to offer things that everyone can enjoy
versus preparing special dishes for those few. Here
are some great hors d'oeuvres ideas, that everyone
loves, to include in your assortment:
Vegetarian, Dairy (very limited) and Gluten Free
options right off our Catering Menu:
*Hot Soup Sampler: Tomato Basil Soup, Butternut
Squash Soup, and Carrot Ginger Bisque* served in
4 oz. mugs with assorted accompaniments/garnishes
such as Herbed Courtons, Creme Fresh, etc.
*Wild Mushroom Risotto Cake: Bite-size Cake of
Risotto topped with Wild Mushrooms.
*Asian Spring Roll: Rice
Noodles, Vegetables,
.Cilantro and mint rolled in
Rice Paper.
*Bruschetta Trifecta:
Bruschetta, Olive Tapanade and Hummus served
with Gluten Free Wafers
*Grilled Vegetable Platter: Grilled Asparagus, Mushrooms, Zucchini,
Red Peppers, Sweet Onions, Tomato, Yellow
Squash and all seasoned, grilled and served with
Balsamic Vinaigrette
*Seasonal Fresh Fruit: Colorful
Watermelon,
Cantaloupe,
Honeydew, Straw
berries, Pineapple,
Grapes, and Seasonal
Fresh Berries
Hummus and Pita
If you are ordering for a catered event, be sure to tell
your Coordinator if you have certain dietary
requirements and we are happy to alter the ingredients
to many other menu items to suit your needs.
From the entire staff at the Lake Elmo Inn Event Center,
Happy Holidays!! Enjoy food, friends and family; and
be safe.
~~Chris

Excerpts from Erik….
Happy Holidays and Merry Christmas to all of
you! Time for cheer, laughter and get togethers! We
are looking forward to seeing all of you here!
We have a lot of special events leading right up to
Christmas Day and I hope you can come by and
enjoy at least one!
First: Our “No Peeking” Red Envelopes have
started. When you come to dine at the Lake Elmo Inn
everyone at your table will receive a Red Envelope,
do not open them. Just bring them back unopened in
January and receive your secret gift.
Second: Evening special wine tastings schedule is on
the next column. All tastings are from 5pm to 7pm or
until the wine that is featured is gone. This is a fun
way to try some unique wines and find a new
favorite. The wine representatives are more than
happy to answer any questions or help you with wine
selections as well.
Third: Bring in a Christmas ornament, or a donation
of $2 or more in cash for the Valley Outreach Food
Program and enjoy a complimentary drink on
us. Your ornaments help decorate our trees and are
added to our collection that hangs from the bar
ceiling. This is our longest running tradition at the
Inn.
Fourth: Every $100 that you spend on gift certificates we will give you a $20 gift certificate free, but
the $20 gift card must be used by the end of April
2014.
Five: Breakfast with Santa Claus is on Saturday
December 7th from 8-10am. Please call for
reservations.
Sixth: Christmas Eve Brunch is10am-2pm we will be
serving Carved Prime Rib and Shrimp Scampi

month. I look forward to see all of you this month
and hopefully you will be able to take part in one or
