MODEL 2800 AUTOMATIC ROTARY FRESH MEAT DEER INSTRUCTIONS FOR INSTALLING, OPERATING, AND MAINTENANCE The ROTARY FRESH MEAT DEER delivered to you, has been check and thoroughly tested, prior t o shipment. The machine is ready for operation, after the following procedures are accommodated. Remove machine from crate. Check for transport and handling damage. Install casters (preferably by raising machine with lift truck) HANDLE WITH CARE. Wash down. Roll into operating position. Lock casters. Turn mechanism over manually with crank provided for motor and shaft. , Cycle , Phase Connect electrical power Volts Be sure that the motor is in proper rotation (Arrow). Raise and lock loading conveyor. OPERATIONS 1. The ROTARY FRESH MEAT DlCER produces best results on meat that has been trimmed of connective tissue, excess fat, and fascia. The temperature for best results should be between 28 degrees and 38 degrees F. 2. The meat is t o be slabbed, the thickness of the dice required . The automatic loader will accommodate meat up t o a maximum of 1-112" thick, 9-112" wide, and any length. DO NOT OVERLOAD. SAFETY Front swing guard will not permit meat over 1-112" thick, to go under it. In the event, that meat thicker than that is directed t o the slicing blades, the guard will lift, and automatically activate a limit switch, which will turn the power off. In that event, the front safety guard would be lifted, and the excessively high meat removed for proper trimming. The machine will not start until the limit switch is cleared by lowering the front guard into the proper position. The operating mechanisms impaneled with a stainless steel cover. When the cover is lifted, it will automatically activate the limit switch, turning the machine off. When lowered, the - The machine will not start, until the limit switch is cleared, by lowering the front guard, t o the proper position. 2. The stainless front hood (28D-216-5) has an electrical interlock on it for safety. When the hood is opened, the machine will not be operable. When lowered, the machirie will be turned on. If not, check the safety switch. 3. A limit switch lever, rides on the band blade. If the blade moves forward on the pulleys, it will activate the switch, turning the machine off. The switch is also activated in the event of blade breakage. When installing a new blade, be sure the limit switch is riding on the blade properly. 4. Emplacement of the V-Belt, should assure that the band blade travels from right t o left. LUBRICATION All parts of the machine have been properly lubricated, prior to shipment. The machine has grease fittings on key moving parts, which should be greased, periodically. They are accessed by turning the front hood (25D-216-5); slide door (288118-7), and side panel (28B-118-6). "NOTE: LUBE CAM FOLLOWER RD-386 AFTER EVERY WASH DOWN BAND BLADE PROCEDURE The clean cutoff action, featured with ROTARY DICER, depends on smooth cuttjng action of the band blade. New band blades should be put in place, with the power off, and rotary blade assembly removed. The pulley carriage should be held in the rear position, with locking bar (16). Blade adjustments and changeover should not be attempted, with the engaged pulley carriage, in the front position (towards the discharge chute). It is important that the band blade is drawn up to ,a firm, but not taught position. The band blade should track on the band blade pulleys (RD-475), close to shoulder, without rubbing. Readjust band blade pulleys if needed.' Band blade should also bottom in band blade guide (RD-447) lightly, and without disturbing proper tracking. Band blade guide, can be set from 118" to % " back from blade edge. For % " dice, set at 1/8". Also, dheck up and down position of b~ade'~uide, after band blade has been checked for proper tension. Turn the machine over, with the hand crank, t o assure proper clearance, of the blade pulleys, from the sides of the discharge chute, and proper clearance, of the band blade, as it moves into the spiked roller. Be sure that the limit switch arm has been properly located, on thedib a r blade. . 3. Proceed t o turn the machine, by means of the crank handle (288-9-2) until the carriage (28D-279) is in the extreme backward stroke position. Then engage lock bar (28A-295-1) t o hold carriage in this position. 4. Loosen tension on band blade, by turning the tension screw counter clockwise located on bracket (288-281) and remove band blade 5. To lower infeed conveyor t o the vertical position, swing the lock levers (28A-162-3) which support the conveyor outward and carefully drop the conveyor. 6. Now you can remove the meat comb assembly (28A-74-3) by Lifting the assembly upwards off the pins' on which it is mounted. 7. Remove panel (28B-126-3) located on side guard (28C-126-4) Now you can move the vertical connection rod (28A-59-21 up and down. This will move (Rotate) then spiked roller (28C-69-11 t o move the drive tangs on drive shaft (28A-6-1) t o the vertical position. 8. When that has been accomplished you can remove the spiked roller (28C-69-3) by lifting it directly upward after opening bearing blocks (28A-70-1). Take care t o not damage the spikes during this process. With the foregoing accomplished, the machine is now ready for wash down with either steam or hot water. TO REASSEMBLE Proceed with the foregoing instructions, in reverse order. PROCEDURE FOR CHANGING DICE DIMENSION Remove "hold" collar (28A-55) by pulling it off camshaft (this is inside the hinged door). Now proceed to relieve pressure of cam roller, operating on the cam (28654-1) by lifting on the vertical operating level, and proceed t o pull the cam off the shaft, and replace it with the desired cam required for the dice size. When making the changeover, be sure that when the cam is replaced, the lettering appearing thereon, is t o the outside (visible). Standard equipment calls for one size cam. It is important when you make a changeover of that nature, that the proper rotary blade assembly matches the changeover. IMPORTANT NOTE Proper sequence of the spiked roller is important. If any parts are worn, damaged, or bent, it may result in improper timing of the spiked roller. This can result in premature breaking of the blade. Operating the machine manually, for a short run under power, without product, will make it possible to determine if there is a malfunction in that area. The spiked roller should index when the pulley assembly is almost, or actually in the farthest position, from the discharge chute. The ROTARY DlCER comes standard equipped, with a pressure attachment, for the hold down fingers (28C-106-1). That attachment, is set at the factory, to accommodate both the 1 " and 1-112" thick slabs, providing of course, the slabs are fed to the machine, are of fairly uniform thickness. If there is any excess variation in the thickness of the slab fed t o the machine, the hold down fingers can be adjusted up or down, by sliding and inserting locking screw on end brackets (28A-97-1). MODEL 2800 ROTARY FRESH MEAT DICER The machine is equipped with an Overload Safety Device (Part #517P). This OSD can be adjusted by turning the nut clockwise to tighten; the opposite to loosen. The puapose for this unit is to keep vital parts fiom breaking if something should malfunction during operation. The unit should be set so that the machine will operate with product cutting without any slip-page. 1. Run Carriage to "out" position 2. Set Cam at high point. 3. Position spiked roller by adjusting connecting rod threads so band blade centers between two rows of spikes. 4. Feed ratchet should be in detente position and locked, (7116" Hex Head Screw). R. F. M. Turn blade pulleys over with crank several times to cycle mechanism in and out. Check for circular and band blade clearance. B. Adjust for band blade alignment if required. C. Band blade tension should be snug but not tight. D. Limit switch must be riding on band blade. A. Trim excess fat and connective tissue. B. Place meat on center of feed conveyor. C. Do not overlap the meat. D. Do not overload conveyor. Maximum meat dimensions I-1/2" thick, 9'' wide. DISASSEMBLE DICE INCREMENTS CHANGEOVER A. Lower feed conveyor. 6. Remove circular blades. A. Release ratchet pawl from detent ratchet by pulling hand ring attached to pawl and turning clockwise. 5. Lift lever arm to disengage cam follower (6-1). C. Remove cam detent and cam. D. Insert new cam and lock with cam detent. E. lmplace circular blade assembly. F. Reengage ratchet pawl. G. (Power Off) Turn pulleys with crank to check for timing and clearance. C. Remove cutoff comb. D. Remove spiked roller. E. Reverse order to assemble.
