ADVANTAGES OF USING CALCMENU Greatly facilitates the whole process from the basic product definition management to the printing of the labels on your food products. Helps in making sure that the information provided by suppliers about their products is complete, accurate and validated. Creates the composition dynamically based on the recipe, the chosen products, and by following the law. The composition can be reviewed, edited and finalized before being approved for label printing. As an important requirement in marketing products, applying food labeling enables the consumers to have a better understanding of nutritional content of the food. In CALCMENU, the food label includes helpful information on food safety and nutrient content of the product, to ensure in making healthier decisions on food choices based on the information provided. Labels provide consumers useful information on allergens, expiration dates, and other food restrictions (e.g. religious/diet). The system provides the necessary information to create and print composition labels, and also be exported to a POS-scale, or other system, etc. *Contact us about compatibility with the law of your country. Information needed for the label is processed by CALCMENU, but may come from various systems interfaced with CALCMENU. Place of Provenance • Any place where a food was obtained or produced, and not necessarily pertaining to its country of origin. • The name, business name/ address of the food business operator on the label, shall not constitute an indication of the food’s country of origin or place of provenance, within the meaning of this Regulation. Specific Determination A brief description of the food in order for the consumers to know its true nature and to easily distinguish from other similar products. Allergens • Any ingredient or processing aid or derived from a substance/product which causes allergies or intolerances, used in the manufacture or preparation of a food that is present in the finished product, even if in an altered form. • Traces of allergens are also managed by the system. • Allergens of recipes are inherited from allergen of their ingredients and can be adjusted at the recipe level. Food Net Quantity The net quantity of the product in Volume for liquids (e.g. litre, centilitre) and in Mass for other products (e.g. gram, kilogram). Ingredients • Any substance or product used in the manufacture or preparation of a food that is present in the finished product, even if in an altered form. (e.g. flavourings, food additives and food enzymes, or any constituent of a compound ingredient). • Ingredients are generated automatically based on the composition, which are also associated with the weight. • All ingredients must be listed in descending order of weight. Primary Ingredient An ingredient that represents the majority of the food composition. It is usually associated with the food name given by the consumer, and a quantitative indication is required in most cases. Date of Minimum Durability of a Food Pseudo-allergens or food additive • The function of the pseudo-allergens is also indicated (eg. Antioxidants, Colours, Emulsifiers, stabilisers, gelling agents, thickeners, Flavour enhancers, Preservatives and Sweeteners). • Pseudo-allergens and food additives are part of a built-in software dictionary. Both components can have long and/or short names. Translations: CALCMENU can handle multiple translations of ALL information on the label. • The date until which the food retains its specific properties when properly stored. • The “Use By” and “Best Before” dates indicate how long food will stay fresh and edible. • “Use by” is used for food that spoils quickly (e.g. meat, eggs, dairy products). All packaged fresh products bear a “use by” date. You should not consume products after the “use by” date since that could result in food poisoning. • “Best before” is used on food that can be kept longer (e.g. cereals, rice, spices). It is not dangerous to eat a product after this date, but the food may begin to lose its flavour and texture. Nutrients can be displayed in terms of values (weight) or as percentage. The system also provides few templates for the printing format on reports or labels, depending on the user's preferences. GDA (Guideline Daily Amount) Assign, Search and Print Recipes with Allergens and Pseudo Allergens What is GDA? Nutrient information at a glance Guideline Daily Amount (GDA) is a nutrition facts label designed by the Confederation of the Food and Drink Industries (CIAA), a European trade organization. It is created to help consumers understand the nutrition information provided on food labels. m Here is a typical sample of GDA label. GDA is based on nutrition recommendations from experts. This translates science into consumer-friendly information and put the nutrition information they read on a food label into the context of their overall diet. This will help the chef to balance the nutrient values in recipes and menus. What’s inside GDA? In general, GDA focuses on 5 key nutrients. It shows the actual value of each nutrient contained in one serving or portion of your food. It also includes the percentage of an adult’s Guideline Daily Amount for a specific nutrient. Here are typical reference values used for GDA. You may configure that with your own values. *These nutrients can vary and you can configure which nutrients you want to include. GDA values are displayed inside CALCMENU Web and can also be printed on some reports, labels, etc www.eg-software.com
