It’s that time of year again – time to make the tough choice between a Broad Breasted White and a
heritage Bourbon Red turkey. Decisions, Decisions! Luckily, since you’re buying your turkey from
Stone Barns, whichever bird you choose, you know it’s being raised the way a turkey should be.
Early Bird Special: Exclusively for Gardener Level Members and Above

If you are a Stone Barns member at the Gardener ($250) level or above, send an email to
turkeys@stonebarnscenter.org stating your request to reserve a turkey. Include a phone number(s)
where you can be reached. Members will be contacted and asked to provide detailed order information
(see “How to Order” below). NOTE: We will not respond to emails received before 9 AM on October 9
or emails from non-members or members at the sprout or seedling level.

General Sales
Beginning on Monday, October 22, 2012
To reserve your turkey(s), send an email to turkeys@stonebarnscenter.org stating your request to reserve a
turkey. Include a phone number(s) where you can be reached. You will be contacted on a first come, first
served basis and asked to provide detailed order information (see “How to Order” below).
NOTE: We will not respond to emails received before 9 AM on October 22.
If your email is received after the turkeys are sold out, you will be notified by email.
How to Order
When contacted by phone, you will be asked to provide the following information:
• Type of turkey(s)*
• Weight Range (Bourbon Reds: <9lbs. or 14-17lbs.;
• Credit card number and expiration date
Broad Breasted Whites: 15-20 lbs., or > 20 lbs.)
A non-refundable $40 credit card deposit is required per bird. The balance will be due upon pick-up and will be billed to
the credit card on file.
*Please note: reservations are limited to two turkeys per person.
Prices
Broad Breasted Whites: $5.00/lb.
Bourbon Red: $8.25/lb.
Bourbon Reds cost more per pound because they grow more slowly, requiring more time, effort and feed to raise.
About Turkey Weights
Because our birds are raised outdoors, variations in size are natural. We take orders for birds
in weight range rather than for an exact weight. While we cannot guarantee that your bird will
be a specific weight, we’ll do our best to accommodate your preference.
Pick-Up
Turkeys will be available for pick-up at Stone Barns Center on Tuesday, November 20 from
10 AM to 6 PM. All turkeys will be fresh, not frozen.

About the Turkeys Raised at Stone Barns
BROAD BREASTED WHITE TURKEYS
• Known for their larger size and greater breast width, this fast-growing hybrid is the
dominant bird on the market and the turkey with which most Americans are familiar.
(Over 99% of the turkeys consumed in the United States are Broad Breasted Whites.)
• Stone Barns Broad Breasted White turkeys are not the same as those raised on factory
farms and destined for the supermarket. Here they roam the pastures and eat a diverse
diet of fresh grass, grains, seeds, insects and worms.
• Harvested at about 16 weeks of age, Broad Breasted Whites typically weigh 14 to
24 pounds.
BOURBON RED TURKEYS
• Bourbon Red Turkeys are a heritage breed, the livestock equivalent of an “heirloom”
vegetable. An historic breed left behind by modern agriculture, they are prized for their
rich flavor and beautiful plumage.
• Bourbon Reds are listed on the American Livestock Breeds Conservancy Watch List,
meaning there are ten or fewer primary breeding flocks and an estimated U.S.
population of fewer than 5,000 birds (as opposed to more than 5 million Broad
Breasted Whites).
• Since domesticated livestock breeds don’t exist in the wild, they will become extinct
unless consumers eat them, thereby increasing the demand for farmers to raise them.
• Bourbon Reds cost more per pound because they grow more slowly, ultimately
requiring more time, effort and feed.
• Harvested at 26 weeks old, Bourbon Reds typically weigh 8 to 16 pounds.
What Pasture-Raised Means:
We raise all our turkeys on pasture. As soon as they are big enough to be less vulnerable to aerial predators, they
are rotated through our pastures and allowed to forage to their hearts’ content. Turkeys are active foragers seeking
fresh grass, insects and acorns. As they roam from place to place, they fertilize the pastures, helping the grass to
grow for our sheep. We supplement their diet with grain and give them extra corn and oats just before Thanksgiving.
This helps them add just the right amount of fat to make them succulent, delicious roasters.
