Ingredients:
3/4 c butter, soft
1 c sugar
1/4 c brown sugar
1/2 tsp vanilla
1 c canned pumpkin
1 egg, beaten
1 1/2 c flour
1 3/4 c rolled oats
1/2 tsp baking soda
1/4 tsp nutmeg
1/2 tsp cinnamon
1 tsp salt
1 1/2 c cinnamon chips
Preheat oven to 350 and line cookie sheets
with parchment paper. Beat butter and sugars together until creamy. Beat in egg,
then vanilla and pumpkin. In another bowl
combine flour, oats, soda, nutmeg, cinnamon and salt. Gradually add dry ingredients
to wet ingredients, stirring with a wooden
spoon. Stir in cinnamon chips. Drop heaping
spoonfuls onto prepared cookie sheets and
bake for 12-13 minutes or until edges are
slightly golden. Let cool for a minute or
two then transfer to a cooling rack.
