EHL Group
The EHL SA holding company, set up at the beginning of 2015, ensures the management of separate entities,
each of which focuses on a specific business or activity.
This structure enables EHL to create and develop a rationalized, coherent portfolio of specialized activities,
both in Switzerland and abroad.
The structure organizes its units into three main fields: hospitality management education, which
remains the core mission of EHL, international activities and the campus.

EHL Foundation is the sole owner of EHL SA holding company and its Board of Governors defines the EHL SA
vision and founding values. It makes use of the Swiss and international network of its President and members,
while producing a positive impact on the reputation and brand.

André Witschi
Chairman, Board of Governors
André Witschi became President of the Board of Governors of the Ecole hôtelière de Lausanne on 5 March 2012,
after having been a member for over ten years.
André Witschi is also President of the Board of Directors of the Swiss School of Tourism and Hospitality, Member
of the Supervisory Board of Lindner Hotels AG, Member of the Board of Sausolitos Restaurants, Member of the
Board of Directors of Build S.A and Member of the Board of DEHOGA / IHA (German association of hoteliers and
restaurateurs).
Benefiting from a solid experience in the european hotel industry for over 40 years, this son of a hotelier and
graduate of the Juventus School of Commerce and the Zurich Hotel School, holds two MBAs from the GSBA in
Zurich and the New York State University.

Ecole hôtelière de Lausanne (EHL), founded in 1893 is widely recognized as the best hospitality management
school in the world thanks to its unique educational model and strong industry ties. The founding stone of the
university-level studies is the combination of art and science of hospitality. this principle gives students the
possibility to learn from hands-on operational experience with advanced academic courses.
The Swiss School of Tourism and Hotel (SSTH) joined the EHL Group in 2013 and offers complementary
vocational training geared towards practical experience and recognized professional degrees.
This founding principle of combining practical learning with academic courses reflects the Swiss dual system
which aims to deliver real and applicable professional experience alongside theoretical classes. The Swiss

Hospitality Management
A developing industry
The hospitality industry is continuously changing and needs to
adapt in order to address factors
such as open markets, the international political and economic
climate and new technology. These
factors are revolutionizing practices in the industry in which our
future graduates will develop their
careers. In light of this situation
and in response to the needs
expressed both by employers and
by our partners, keen on finding
young graduates armed with a new
skill set, we developed a brand
new Bachelor degree program in
2013.
Students are actors of
their education
The program is focused on personal development, and mirrors a
progression in hotel hierarchy.
Students start with a solid grounding in hospitality service fundamentals during the Preparatory
Year where students work in all
operational areas: kitchen, pastry
station, restaurants, bars, banquets, stewarding, laundry, events,
cost control, etc. Students therefor
become an active player in their
education.

After the Preparatory Year, students
follow courses on managerial
competencies, and continue on to
advanced management skills.
In the final year, students consolidate what they have learned
through an external consulting
mandate, called Student Business
Project, or an individual applied
research project.
They also undertake two internships which provide the reallife experience needed for a flying
start in their career.

Student Business Projects
Introduced in 2000, Student Business Projects (SBPs)
are consultancy contracts carried out by groups of final
year Bachelor students and are designed to deliver
results and solutions for businesses or entrepreneurs.
Each project is entrusted to a group of five students,
who work on it full time for ten weeks under the supervision of expert EHL coaches.

Master’s program in Global Hospitality Business
spanning across 3 continents starting in September

PolyU’s School of Hotel and Tourism Management is a world-leading provider of
hospitality and tourism education. It was ranked No. 2 internationally among hotel

published in the Journal of Hospitality and Tourism Research in November 2009.
With 65 academic staff drawing from 20 countries and regions, the School offers

The Executive MBA in Hospitality
Administration is an accelerated,
full-time program that is designed
to help creative, resourceful people
acquire the solid hospitality and
management skills that will enable
them to turn their projects into

This fall, 27 professionals joined the
Executive MBA program, from 19
nationalities.
The focus is on hospitality but
extends to the services sector in
general, preparing students to be

The Executive MBA in Hospitality Administration
is designed to be the catalyst that helps students

A “Capstone project” concludes the program, providing
a customized opportunity to reinforce career prospects
by addressing a practical, real-world challenge using
the skills and knowledge acquired during the program
of study, mentored by both academics and industry

Charles Ray Thomas Jr, Director of the Executive MBA in
Hospitality Administration, is a seasoned professional
with a huge array of international experience, both
hands-on and theoretical, in addition to which he also
has in-depth skills in both finance and the hospitality
industry. He has taught finance, managerial accounting
and accounting for decision-making as part of a
number of MBA and EMBA programs in the United
States. American by nationality, he obtained a Master’s
in Taxation studies from the University of Baylor and a
PhD in finance and accounting from the University of
Texas, Arlington.

Acquired by EHL in 2013 and part of the EHL SA Holding
Company, the Swiss School of Tourism and Hospitality
(SSTH) is located in Passugg, in the Swiss Alps, near
the well-known mountain resorts of St Moritz, Davos
and Flims.
SSTH offers a variety of practical and academic courses
in a vocational education perspective to respond to the
needs of the hospitality industry. Located in a former
Victorian-style hotel, students are immersed in a true
hotel atmosphere with a modern learning environment.

Located on the outskirts of Lausanne, Switzerland,
Ecole hôtelière de Lausanne (EHL) offers students
a modern environment that fosters learning,

With innovative academic facilities, operational

accommodation and an assortment of food and
beverage outlets, the campus at EHL invites students
from around the world to discover the Swiss sense of
hospitality.
Switzerland is regularly recognized as one of the best
places to live in global reports. From our tradition of
quality and quest for excellence, our reputation in the
fields of new technology, the high quality of life, to the
breathtaking natural splendors, Switzerland has many
advantages to offer.
The campus itself offers over 78,000 sqm dedicated
to its students in a privileged environment, combining
the natural settings of the surrounding landscapes
with easy access into the lively city center.
Our learning facilities reflect the school’s position as
the leading institution for hospitality management
education in the world. Our innovative auditorium
offers modular space for large conferences and
seminars, and our classrooms benefit from the latest
technology. The EHL library is easily accessible and
offers direct access to a wide range of documentation,
while several more private study spaces are available
to students across the campus.

EHL continues to develop its campus with an
extension for the learning facilities and the addition of
a third floor on its primary buildings.
In 2014, the elevation of one of the three main
buildings was completed, hence increasing the
number of classrooms and administrative offices. The
extension of the third building and the main academic
building is currently ongoing. The construction and
finalization of the interior will continue until autumn
2015.

A responsible campus
Le Berceau des sens
For fifteen years, we have resolutely adopted an environmental approach to our infrastructure. Solar panels,
biogas and wind power units are now very much a
feature of the School.
Le Berceau des Sens, the highly praised training restaurant at EHL, is open to the public and provides the
ideal setting for students to learn, through practical
experience, the activities they will later manage during
their career.
The School’s goal is to develop a high-quality, sustainable, environmentally responsible infrastructure in line
with the increase in students.
New accommodation (450 studios in 2020, compared
with 320 at present) is planned for the site, as well as
new classrooms and a scheme to build an environmentally-friendly teaching hotel.
A unique system of waste
management
A distinctive aspect of the recent construction works
concerns the kitchens which are equipped with a cutting-edge waste evacuation system. This is comparable
to what is used on cruise lines: the work counters feature hatches that recuperate all organic waste. These
are then aspirated, crushed and stocked in a container
in the basement. This transformed waste is then taken
to a nearby farm which transforms it into biofuel in
partnership with the City of Lausanne. This system is a
premier in Switzerland and brings students a new understanding of waste management and the search for
innovative solutions. Today, 60% of the waste produced
by Ecole hôtelière de Lausanne is recycled.
The School is part of the “Green Tours” organized by
the City of Lausanne on the theme of sustainable development for groups, companies and press.

Designed by the award-winning London interior designer Stuart Wilsdon, Le Berceau des Sens reflects the
chic and understated elegance of modern five-star
establishments. Over-looking the Alps through floor-toceiling bay windows, students learn the requirements
of service excellence and a sharp attention to detail.
With white gloves, they handle the finest equipment
and utensils provided by the restaurant’s renowned
sponsors: Riedl glasses, porcelain chinaware from
Maison Bernardaud and silverware by Christofle. The
private dining room is surrounded by translucent wine
display cabinets offered by Hess Collection Winery
providing an exclusive space for small groups.
Le Berceau des Sens has become a reference in the
world of culinary expertise and fine dining experience.
In 2013 the restaurant entered the prestigious Gault &
Millau Swiss guide with 15 points out of a total of 20, a
ranking complemented by the “Western Switzerland
Discovery of the Year” award.
Sustainable vegetable garden
Discovering oenology
Like other large establishments that produce their own
fruit and vegetables in order to have optimum traceability and be a leader for environmentally responsible
projects, Ecole hôtelière de Lausanne is creating its
own kitchen garden, intended to be a future practical training garden that will adopt the ‘permaculture’
technique.
The oenology room, sponsored by the Californian Peter
Michael Winery, endows the School with a modern tool
that would provide the optimum technical conditions
for the theoretical and practical discovery of wines.
This is a specialised method of cultivation based on
a progressive system that includes perennial plants
which keep going by themselves year after year.
The learning objectives of the kitchen garden :
• Enable the discovery of new tastes through forgotten vegetables
• Promote biodiversity
• Raise awareness and initiate the students into this
type of cultivation
• Compare the taste of a vegetable produced on the
spot with a standard vegetable
• Produce varieties that are becoming extinct
A 100 m2 test bed has been planted with varieties of
vegetables that will subsequently be planted properly
from 2013 in a new 500 m2 bed.
All the mandatory courses on the knowledge and management of wines and spirits are taught here, as well
as the optional courses such as wine-tasting.
The oenology room, with an area of 108 m2, is designed
to be highly practical and enable the product to be
discovered in fine detail and with passion.
Outside speakers from wineries enjoy coming to share
their passion with the students and with Ecole hôtelière de Lausanne Wine Club, which holds its meetings
in this exceptional venue.
A Carnotzet for the Office des vins
vaudois
Inaugurated in 2014 and designed by the Jordi+Partner
AG architecture firm, the Carnotzet was financed by the
wine producers of the Vaudois wine office (Offices des
vins vaudois – OVV).
The collaborative strategy with OVV is articulated
around two axes: academic and institutional. On the
academic side, first year students will be able to participate to presentations of the Vaud vineyards and
commented wine tastings. On the institutional level,
the complete line of Premiers Grands Crus Vaudois is
available since 2013 at the Berceau des Sens, EHL’s
gastronomic restaurant.

A campus for students,
designed by students
After 120 years of existence, EHL is definitely turned to
the future and imagining a campus for tomorrow’s students, teachers and researchers in a dynamic based
on excellence.
EHL is defining the campus of tomorrow using a
unique, innovative and international architectural
approach: in 2013, a crowd-sourcing project of some
385 architecture and landscaping students from 4
continents contributed their ideas with the support of
professionals and world-renowned experts.
Four students were rewarded for their work and continue to work in close collaboration with local experst
including architects, landscapers, civil engineers,
HVAC engineers (heating, ventilation and air conditioning) and MEP (mechanic, electric and plumbing) to
define the architectural drawings

Future development son site will begin at the latest
end of 2016, as soon as the planning and construction permits have been obtained. The project includes
the construction of new student lodging on campus,
enhancement of sports and wellness facilities, namely
with a pool, a new restaurant and spacious study, exchange and relaxation rooms.
The finalization of construction work is expected within 6 to 8 years.

Bernhard Bohnenberger, EHL graduate of 1986, joined
the company that would eventually become Six Senses
in 1991 as development director and was appointed
managing director in January 1996, and then president
in July 2011.
From July 2009 until April 2011, Bernhard served
as honorary advisor to the president of the Senate
of Thailand. In 2013, he became a member of the
International Advisory Board of EHL.
