Medium to large, two pound average squashes are perfect for a two
person dinner. Acorns always lead the fall parade of winter
squashes, the first to be harvested with their airy, slightly sweet
flesh. Save the oven heat and pan fry acorns in thin strips or enjoy
the warmth from a baked squash on a chill fall evening.
Store in a DRY location;best temperature range 60-70 degrees.
Imagine a cross between Acorn and Delicata, a squash-offspring
that is acorn shaped, yet striped/speckled like a Delicata. The flesh
favors the Delicata flavor with the denseness of an Acorn-- a
perfect squash. Use for baking, purees, or pan-fried rings. The
skins is thin enough to not peel. Store in a DRY location; best
temperature range 60-70 degrees.

How delighted we are to purvey a crop from our old friends, Noah
and Fannie Swarey, now moved a few hundred mile further down
the Appalachians, but still great sustainable farmers using
biologically-approved methods. Their bright-yellow spaghetti
squashes are flavorful, firm and well-stored, still boasting another
month+ of shelf-life. This crop is of varied sizes, all well-matured
and full of that inimitalble stringy noodle-like flesh, so expect a
range of sizes.

"Stringy" flesh texture is reminiscent of noodles, thus spaghetti

breeders treasure fruits with extra crunch and deep flavor. Grassgreen Mutsu will not disappoint with its sweet-tart balance and a
crunch that is exceeded only by Granny Smith. These apples run
large, some even huge, and they're the perfect candidate for slicing
for pies, baked apples or peanut-butter topped snacking events.

Dried Mushroom
Soup Mix
Dried mushrooms make for a delicious pot o' stew, simply
simmered as a stock base; add butter, of course! Myco-mix
contains Oysters, Lion's Mane, Shiitake, Lobster and Butterball
mushrooms. You add the soup fixin's and invite these fun-guys
(fungis?) to a soup party. We'll never tell what happens next, but
bets are on that it's a super supper!
Pint jars contain approximately 1 oz each.
Dried Mushrooms,
Porcini
PorciniCep, Steinpilze, Penny Bun, et al. Its reputation is well
deserved as the King among gourmet mushrooms. They have a
hearty, rich and nutty taste, making them a forest delicacy of
divine decadence. Add these flavorful bulbous beauties to soups or
rehydrate and sautee in butter to add a succulent, savory touch to
your favorite dishes!
Pint jars contain approximately 1 oz each.
Dried Mushrooms,
Lobster
Lobsters: Thisdelicious, seafood-flavored meaty moker is unlike
any other gourmet mushroom. Its texture and flavor are as distinct
as its form and color. Make a vegetarian Lobster Mushroom Bisque!
Trust us... it's divine!! Or add to any variety of soups to enhance
the flavor profile by orders of marvelous mushroom magnitude!
Pint jars contain approximately 1 oz each.
Dried Mushrooms,
Matsutake
Matsutake Pine mushrooms are one of our absolute favorites! This
mushroom is one of the most unique tasting (and aromatic)
mushrooms in the world. The flavor is better in water soluble
preparations, so we recommend making 'Matsutake Gohan' and
steaming these delicious morsels into rice, or rehydrating them in
soups. The texture and taste are absolutely exceptional! Every dish
will soak up the umami Matsutake flavor!
Pint jars contain approximately 1 oz each.
Dried Mushrooms,
Oyster
Domestic-cultivated at Gnomestead Hollow, these oyster
mushrooms are super versatile and flavorful. They have a mild,
nutty, shrimpy flavor, and are especially delicious when rehydrated
and sauteed with butter, garlic, seasonal greens, and eggs!
Whatever you use them in, they’ll add a meaty complexity to the
dish.
Pint jars contain approximately 1 oz each.

Accurate Labeling of Local
Produce
What’s in a Word?
As purveyors of fresh produce and other products from local farms, GFGP strives to be clear and
informative about farm production methods to our customers. The following definitions are used for
marketing local products through GFGP.
ORGANIC/ CERTIFIED ORGANIC/ ORGANICALLY GROWN Under the federal National Organic Program
(NOP) law, the “O Word” or any form thereof may be only employed for farms that have been inspected by an
approved third-party agency (who is itself audited by the USDA). This rigorous certification process requires a
detailed paper trail to prove the farm’s claims of organic production. Growers maintain trace-back records of
every crop from Non-GMO seed through sale, including documentation of approved fertilizers and pesticides, crop
rotation, tillage programs, safe harvesting and packing routines. Certification costs exceed $1000.00 per year.
GFGP reserves use of ORGANIC, CERTIFIED ORGANIC AND ORGANICALLY GROWN for growers who have
successfully completed a bona fide certification program.
CERTIFIED NATURALLY-GROWN: This is a new peer-review system that some small growers are employing to
distinguish their products. Standards are very similar to Certified Organic, but the program is much less costly
financially and less demanding in terms of paper work. On-farm inspections are undertaken by other local farmers
in the program who understand its ideals and goals. Although this system is much more honor-based than USDA
certification, it is gaining popularity among local farmers as a cost-effective and community-based model of selfregulation.
BIOLOGICALLY-GROWN/BIO-GROWN: This is GFGP’s own in-house term and has no legal definition outside
our “trust certified,” face-to-face relationship with each grower. Given the extensive and expensive demands of the
USDA Organic Certification program, many small farmers are unable to cost-justify this marketing handle. After
years of considering other terms like “unsprayed” (organic folks do spray, just not synthetic pesticides), “chemical
free” (hard to imagine food without the chemicals that compose the food itself!), “natural” (what does that
mean??)—we’ve settled on BIO-GROWN to indicate “grown under certifiable practices, but not legally third-party
certified.” We feel confident that bio-grown products from trusted suppliers have not been exposed to synthetic
pesticides, herbicides or fungicides, and that growers use Non-GMOplants/seeds, as well as environmentallyfriendly tillage and soil building techinques.
__________________________________________________________________________________________
_________________________
CONVENTIONAL: This descriptor has replaced the old and inaccurate term “commercial” for crops that have been
subjected to practices or inputs that are not acceptable by organic consensus. Since a wide spectrum of practices
are lumped together under the category of “CONVENTIONAL” (ranging from “minimally-sprayed” through
“industrially-raised”) a further explanation may accompany this term. All conventional crops marketed through
GFGP will be accurately labeled to encourage transparency and promote consumer choice. No GMO crops are
allowed unders GFGP's definition of "Conventional" or any other category.
At every opportunity, GFGP strives to support organic and natural practices, resorting to conventional suppliers
only when absolutely necessary. Many crops are difficult or impossible to produce on a commercial (for sale) scale
in our region without sprays that hold back epidemic pests and diseases (i.e. tree fruits and sweet corn). Faced
with a choice of “conventional” product or NO product, GFGP believes that well-informed and well-fed customers
are happier than customers who need to shop at chain stores to fulfill their food needs with non-local products.
We at GFGP also believe that the best way to promote organic ethics is to work with local growers toward
realistic (vs. idealistic) goals that account for weather and market conditions, rather than to eschew them for their
current methods. We make our preferences clear to growers as we encourage them with better prices, information
and grower assistance toward lower-toxin substances as well as preventative practices that minimize the need for
sprays. Over the course of our 20-year existence, many GFGP suppliers have altered their practices to meet
our—and your—requests for cleaner food. Now that’s progress!!
