Prizes will be given for the best dish in each category. To enter the contest, your dish must be accompanied by a recipe card (see page 2). The winning recipes will be published in our next newsletter. Three Spires Brewing Co. will provide gluten-free craft beer samples and Becca’s Gourmet Goodies will provide freshly-baked gluten-free biscuits. Don’t miss this tasty event! There are many ways that you can get involved and the time commitment is just a few hours per month! We are in need of a Chapter Secretary to write minutes at our board meetings and general meetings. We are in need of a Newsletter Editor, a skill that is easy to learn with basic knowledge of Word (and looks great on a resume). Verify all information before applying it to your individual situation. 3 Surprising research findings, still no answers as to why the rise in celiac disease Two recent studies published in the New England Journal of Medicine have celiac disease (CD) researchers stumped. The first study refuted the idea that delayed introduction of gluten into the diet (after age 1) would decrease the likelihood of developing CD. The second study showed that introducing infants to small amounts of gluten while still breastfeeding did not decrease their likelihood of developing CD. Both studies were done on children at-risk for CD based on testing positive for the HLA-DQ2 or HLA-DQ8 genes. Alessio Fasano, MD, director of the Center for Celiac Research at Mass General Hospital for Children, says that the lesson learned from these studies is that there is something other than gluten that can trigger the immune system to develop celiac disease. He suspects that it may come down to how the modern, hyper-processed diet has influenced the makeup of our gut bacteria. Fasano plans to explore this theory further in his next study. If his theory is correct, a probiotic or prebiotic might be all that is needed to prevent or treat the disease. “That would be the holy grail of preventative medicine,” Fasano says. For more information, go to: www.time.com/3511235/gluten-free-celiac-disease/ Colorado Center for Celiac Disease Now Open The Colorado Center for Celiac Disease (CCCD) at Children’s Hospital in Denver, opened its doors on June 9, 2014. The center is dedicated to the long-term care of individuals with celiac disease and gluten-related disorders. Dr. Edwin Liu, a Pediatric Gastroenterologist, is the Director of the center. He says the center utilizes a special laboratory testing instrument, one of only five available in the US, which is highly sensitive and accurate. With this equipment, they can rule out any false negative tests done at other facilities. Dr. Liu and his team, Dr. Edward Hoffenberg and Dr. Robert Kramer, also work closely with patients with disorders that put them at high risk for CD, including Type I Diabetes and Down Syndrome. The center is currently only available for children, but the long-term goal is to work with the University Hospital Gastroenterology Department to expand their services to adults.
