SHOPPING AT CHRISTMAS
We start planning for Christmas in January. It is our
busiest, most atmospheric and highly anticipated
time of year. We try very hard to serve as many
people as possible in our shops, whilst at the same
time ensuring everyone has the time to taste cheese
at one’s own pace. Because of this we may have
long queues, particularly in the last few days before
Christmas. If possible, try to think about the cheese
you might need in advance and plan when you visit
us. It’s worth noting that our shops are generally
quieter in the morning and on a Sunday. We expect
our busiest days to be :
Saturday 20th, Monday 22nd, Tuesday 23rd
& Wednesday 24th December
In addition to our Borough Market and Covent
Garden shops, we have been selling a selection of
our best tasting cheeses from our site in Bermondsey,
which is generally less busy. The Bermondsey shop
is open on Saturdays all year round and on a few
extra days before Christmas.

leaflet and on our website.
CHRISTMAS COLLECTION
CHEESE CLASSES
If you want to buy from us at Christmas but know
that time will be tight you can place an order for
collection. You will not need to join the main queue
and can pay in advance. We begin taking orders
on Saturday 1st November for collections between
the 8th and 24th of December. Orders may be placed
in person in one of the shops, or by calling our
dedicated Christmas Collection telephone number
on 020 7500 7571.
We regularly hold cheese classes above our Borough
Market shop. These classes are informative and
cover a variety of subjects including an introduction
to British Farmhouse Cheese, pairings with wine,
sherry, champagne and beer. We also have a series
of classes in which we teach you the basic steps
involved in domestic cheesemaking. For details

MAIL ORDER
GIFT VOUCHERS
Should you prefer to have your cheese delivered,
or if you wish to send cheese as a gift, we can send
cheese by courier throughout mainland UK. Orders
can be placed in our shops, through our online shop
at www.nealsyarddairyshop.co.uk, or over the phone
by calling 020 7500 7575. To process and pack
orders we need at least 3 days’ notice. The deadline
for placing orders for delivery before Christmas
is 5pm on the 16th of December.
Gift vouchers, in £10 and £20 denominations,
can be bought in our shops or online. These can be
redeemed against purchases of cheese in our shops,
through Mail Order or as payment for cheese classes.

HOW MUCH CHEESE TO BUY
As well as our three shops, we also retail at other
locations around the UK in various markets and
events. This year we will be at :
It can sometimes be hard to know how much cheese
to buy. If you are at all unsure please let us know.
As a general rule of thumb, we would recommend
between 50 and 100 grams per person, however, it is
often easier to judge suitable pieces of cheese by eye.
Often one large piece looks better and keeps better
than many small bits.

BLUE CHEESE
COLSTON BASSETT STILTON
Until 1990, Colston Bassett Stilton was made with
raw milk but from that date the cheese began to
be made with pasteurised milk. The cheese is still
made to an old recipe exclusively for us, which uses
traditional animal rennet to set the milk and involves
piercing the cheese less. Our ideal Colston Bassett
Stilton is not too heavily blued, with a savoury,
almost syrupy flavour and a light and silky texture.
STICHELTON
Stichelton began as a collaboration between
cheese maker Joe Schneider, Neal’s Yard Dairy
and the Welbeck Estate. Now in its eighth year of
production, it shares many of the attributes of a
traditional Stilton cheese. Stichelton’s flavour has
a tendency to be more acidic than that of Colston
Bassett, with juicy, fruity, and sometimes yeasty
elements. The paste, particularly under the rind, can
have an almost caramel flavour. Overall the flavour
is layered, complex, and long-lasting.

CHEDDARS
We sell a number of Cheddar or Cheddar style
cheeses. As well as the Somerset Cheddars that are
listed below, we carry Isle of Mull Cheddar, a drier
cheese with a fruity, peaty flavour ; Hafod, a rich,
buttery Welsh cheese with a satisfying smooth
texture ; and Lincolnshire Poacher, a waxier textured
cheese with a fruity, sweet finish.
THE SOMERSET CHEDDARS
There are very few farms still making a clothbound,
raw milk Cheddar in Somerset. These are large
cheeses from which smaller pieces are cut for sale.
Cheeses made this way have natural inconsistencies
that set them apart from the large-scale industrial
Cheddar manufacturers, where uniformity and
convenience often take precedence over flavour.
These variations, which may even occur from one
cheese to the next, are what make these Cheddars
unique and taste so delicious.
KEEN’S CHEDDAR
Keen’s Cheddar is the creamiest in texture, and often
the sharpest in taste, with earthy flavours and an
acidic bite. It is moist and dense with a mottled grey
clothbound rind, which imparts a grassy flavour right
next to the rind and a milkier flavour towards the
middle of the cheese.
MONTGOMERY’S CHEDDAR
Our best-selling Cheddar, Montgomery’s has a dry
texture and a meaty, savoury flavour, sometimes
accompanied by a slight crunch. The flavour is long
lasting, often with caramelised notes and a delicious
toasted taste towards the rind, where it is often
a more rosy colour and crumbly in texture.
CHESHIRE & LANCASHIRE
APPLEBY’S CHESHIRE
Appleby’s Cheshire is a delicate, crumbly cheese.
The flavour is savoury and milky with a lactic,
mineral tang. The Appleby family make their cheese
on the Cheshire plain and are the last producers
of Cheshire who use raw milk from their own herd
and use cloth to bind the cheese.
KIRKHAM’S LANCASHIRE
Graham Kirkham is one of the last Lancashire cheese
makers using a traditional method that mixes the
curds from two or sometimes three consecutive days.
The recipe is also unique in that it uses raw cow’s
milk from Graham’s own herd, traditional animal
rennet and involves wrapping the newly formed
cheeses in cloth before coating them in melted butter.
The cheese has a light, creamy texture and a rich,
full, buttery and fruity flavour.
SOFT COW’S & WASHED RIND
CHEESES
To compliment traditional British and Irish blue
and hard cheeses during the festive season we often
recommend soft cow’s milk cheeses. As cow’s milk
cheeses are available all year round, we have a
large supply of ripe, full-flavoured and pungent soft
cheeses, such as Milleens, Ardrahan and Gubbeen.
In the ‘mould ripened’ category, we might suggest
St. Jude if you are looking for something light,
creamy and smooth or Tunworth if you prefer
a cheese with a more rich, potent flavour and the
truffle-like notes associated with Camembert.
GOAT’S & EWE’S MILK CHEESE
Whereas most cows have been bred to produce milk
all year round, most goats and ewes will give birth
in the spring and give milk through the summer into
the autumn. At Christmas time we are reaching the
end of many of our goat’s and ewe’s milk cheese
supplies. It may be worth asking if we will have your
favourite at the start of December if you would like
them for Christmas. Having said that, the Neal’s Yard
Creamery goats’ cheeses – Ragstone and Dorstone –
are available throughout December as are the Innes
Log and Innes Brick.
WILD SMOKED SALMON FROM
WOODCOCK SMOKERY
In the early 1980 s we discovered a salmon smoked
by Sally Barnes at the Woodcock Smokery near
Castletownshend in West Cork. Traditionally, all
salmon was wild and was smoked to preserve it,
so the smoking process would have been much more
thorough than today. Sally Barnes is one of the few
people who still smoke fish in this traditional way.
The result is a fish with a drier texture that is less oily
than farmed smoked salmon.
