Throughout the course of the year we share with each other in many events,
celebrations, remembrances, holidays, seasons, and even the daily routines of our
lives. In that spirit of “family”, I would like to share with you my plan of retirement
from my position as the Nursing Home Administrator of Oakview. I’ve been working full-time in healthcare for 42 years. My employment at Oakview began 30 years
ago. My final day of employment at Oakview will be June 12, 2015. Oakview and all
of you will always hold a treasured place in my heart and in my prayers. However,
life is dynamic and change brings growth. It’s time for Oakview to move forward to
the next chapter in our history.
It is with excitement, enthusiasm, support and deep appreciation, that I invite
you to join me in offering my sincere “Congratulations” to Jannice Lamm, CTRS,
NHA, as our next Nursing Home Administrator. Jannice has been a part of our Oakview family for 20 years. Throughout that time, she has held positions as the Director of Therapeutic and Recreational Therapy, along with the Unit Manager of our
Sutter Living Center, and more recently as the Assistant Nursing Home Administrator (ANHA). Jannice successfully achieved the professional level of a licensed NHA.
Following her intense study, and completion of all of the Federal and State required
testing for licensure, she achieved her goal. Those are, indeed accomplishments to
be highly regarded.
Oakview is a vibrant, dynamic, and loving environment of quality care, for
those whom we serve. There are many exciting challenges for the future, and Jannice will be the leader that Oakview will depend upon to bring the facility forward.

SPEECH THERAPY
May is Better Hearing and Speech Month (BHSM) and was
founded in 1927, by the American Speech-Language-Hearing
Association (ASHA).
Speech Language Pathologists also
known as speech therapists are health professionals that
specialize in the treatment of speech, communication and
swallowing disorders. Speech therapists have a master’s or
doctoral degree in speech language pathology; completed
post graduate clinical work, passed a national examination
and are certified by ASHA.
There are many different medical conditions that can lead to speech, language
or swallowing problems in older adults. Examples include a stroke, head injury
or diseases like Parkinson’s, Multiple Sclerosis and Alzheimer’s. Depending on
the condition, speech therapy may help people who have difficulty speaking,
listening, reading, writing, thinking and swallowing. Not only do speech
therapists work with people to improve communication and swallowing they
also talk with patients and families about the problems the patient is having and
what can be done to help. Speech therapists work closely with other healthcare
professionals including doctors, physical therapists, occupational therapists and
dietitians. If a patient can’t talk a speech therapist may help find other ways to
communicate called augmentative and alternative communication (AAC).
Brenda Smolinski provides speech therapy services for residents
at Oakview. Brenda has worked as a speech therapist for 22
years in all different settings including nursing homes, private
practice, outpatient, home care and in schools. Brenda loves
many aspects of her profession but one of her favorites is
meeting different people and learning their life story. For Brenda the most rewarding part of her job is seeing a person reach
their highest potential. Please join the Rehabilitation Department in thanking Brenda for nearly 13 years of speech therapy

Playing Sports for National
Nursing Home Week
The week of May 11th– 15th is National Nursing Home
week. We will be adding a Sport theme to all of our activities this week. We will be having some special entertainment along with sport themed activates provided through
out the week. We will have a different Sport theme each
day.

After leaving Campobello Island, we started driving east. We travelled about
70 miles to St. John. This is the capital and also the largest city in New Brunswick.
We stopped here and spent some time walking around the water front. There was a
big mall right there on the water front with stores and restaurants so we decided to
have some lunch. After lunch we decided to walk over to the capital building. Someone had mentioned that it would be a good idea to go see the mayor so that is exactly
what we did. The mayor turned out to be a very nice woman and she actually
showed us around St. John and told us all about the local history. St. John has a
long history of ship building at the city’s dry dock which happens to be one of the
largest in the world. She even gave us a flag and tokens for souvenirs.
St. John is also known as Fundy City since it is located on the north shore of
the Bay of Fundy right at the mouth of the Saint John River. It is actually the only
city on the Bay. The Saint John River flows into the Bay of Fundy through a narrow
gorge several hundred feet wide right into the center of the city. This is where you
can see the Reversing Falls. This is a big tourist attraction and really quite interesting to see. The Reversing Falls is caused by the tremendous rise and fall of the tides
of the Bay of Fundy and are actually the highest in the world. We head over to the
Fundy National Park to set up camp for the night. It is very much like a state park
back here in the states. The sand on the beach is red here. The next morning we
packed up and crossed over to Nova Scotia

Recipe of the Month
Ingredients:
12 slices home-style white bread, cut into 1-inch cubes, divided
2 (8 ounce) packages cold cream cheese, cut into 1-inch cubes
1 1/2 cups sliced fresh strawberries
2 cups half-and-half
12 large eggs
1/3 cup pure maple syrup
Sauce:
1 cup white sugar
1 cup water
2 tablespoons cornstarch
1 cup sliced fresh strawberries
1 tablespoon butter
Directions:

Generously grease a 9x13-inch baking dish.

Arrange half the bread cubes in the prepared baking dish. Evenly distribute cream
cheese cubes over the bread cube layer; sprinkle 1 1/2 cups sliced strawberries atop
cream cheese layer. Layer the remaining bread cubes over strawberry layer.

Pour half-and-half into a blender; pulse for a few seconds. Blend eggs into half-andhalf until fully incorporated. Add maple syrup and blend until smooth. Pour mixture
evenly over bread mixture. Cover the baking dish with aluminum foil and refrigerate
8 hours or overnight.

Remove baking dish from refrigerator 45 minutes before baking.

Preheat oven to 350 degrees F (175 degrees C).

Bake the covered casserole in the preheated oven for 30 minutes. Remove aluminum foil and continue baking until French toast is puffed and golden brown, about
30 more minutes.

Stir sugar, water, and cornstarch together in a small saucepan. Cook, stirring occasionally, over medium heat until mixture has thickened, about 5 minutes.

Mix 1 cup sliced strawberries into the sugar mixture; cook and stir until strawberries
are softened, about 10 minutes.

Add butter and stir sauce until butter is melted.
