All the elements of heaven surround two townsites that offer every earthly delight—fine accommodations, shopping, dining, sports, leisure activities, nightlife, arts and culture. Banff and Lake Louise offer a natural richness that is becoming increasingly rare and which was recognized in 1985 when the Park was designated a United Nations World-Heritage Site. A unique preserved and protected World-Heritage Site, it is virtually the same sight which greeted explorers, mountain climbers and adventurers when they came to the Rockies from around the world more than 100 years ago. Using hemp ropes and sheer determination, mountain guides (imported from Switzerland) led parties of enthusiastic climbers on first ascents of the surrounding peaks and traversed prehistoric glaciers. Its very essence was the enjoyment and preservation of the wilderness and wildlife, a philosophy which Canadians have entrenched in law and in their hearts. Today, Banff National Park draws people from every corner of the world to catch a glimpse of big horn sheep, elk, moose and mountain goats. Banff also lures people year-round who want to explore their own piece of the wilderness by skiing and snowboarding, hiking, climbing, dogsledding, horseback riding, ice skating and canoeing. When visitors come to explore, they are surrounded by some of the most spectacular scenery in North America. It’s not just people who come from around the world to visit Banff. Food of the world can be found here, too, as there is a cornucopia of outstanding restaurants featuring every type of cuisine imaginable. Many of the restaurants in Banff have been delighting taste buds for more than 30 years and to survive that long means one has to be good. Erwin Widmer has operated his Ticino Swiss-Italian Restaurant for 35 years. Albert Moser of Le Beaujolais and Bistro Café de Paris is another restaurateur with more than 30 years of service. His restaurant is renowned for exceptional French-inspired cuisine and he recently added an interesting new menu for serving breakfast and lunch at the Bistro. El Toro Restaurant first opened in 1978 and offers many outstanding continental dishes. Numerous other restaurants have been clients of ours since they first opened their doors and the following is an outline of what you can expect to find in our little bit of heaven on earth. There’s exceptional dining at many of the area hotels, such as the AAA Five Diamond-rated Eden at the Rimrock Resort Hotel. The award-winning restaurant delivers an exquisite dining experience and the exceptional scenery is just a bonus. The Rimrock is also home to the Primrose Restaurant, which features continental cuisine for breakfast and lunch and an Italian menu for dinner. At the Banff Park Lodge, the Terrace Restaurant serves classic Canadian dishes in very intimate surroundings while the Sleeping Buffalo Restaurant, at the Buffalo Mountain Lodge, features a cozy cabin atmosphere and uses the freshest of ingredients to serve rocky mountain cuisine. At the Fairmont Banff Springs Hotel, the hardest decision may have to be made before you even open the menu. The resort boasts eight restaurants, including their signature dining room, the 1888 Chop House. The Juniper Bistro at the Juniper Hotel is also a restaurant known for sourcing local ingredients and has an incredible patio with one of the best views in Banff. Contemporary Canadian cuisine is featured at the Evergreen Restaurant at the Delta Banff Royal Canadian Lodge. If you’re looking for a taste of AAA Alberta steaks specially aged for extra tenderness, there are several excellent choices around town. 6 www.atasteofbanff.com Saltlik Restaurant is very well known in Banff as an excellent steakhouse and they are located downtown on Bear Street. The Keg, with two Banff locations, is a favourite Canadian institution, having been around for over 40 years. There are also a number of restaurants that feature Canadian dishes. The Maple Leaf Grille & Lounge serves Canadian steak, seafood and wild game, including bison, elk and duck. Earls is a Canadian favourite and has an outstanding selection of dishes. The same can be found at the Bison Restaurant & Terrace on Bear Street. Downstairs from the Bison Restaurant, the Bear Street Tavern is a funky place where great pizza is featured. At Toque, visitors to Banff will have a new way to experience what Canadian culture is all about. Banff is also blessed with many excellent ethnic restaurants. Greek cuisine is featured at Balkan Restaurant, which has been in Banff since the mid 80s. Magpie & Stump has been a tradition in Banff since the 70’s and is famous for their exceptional Mexican cuisine. Thai cuisine is well represented and Pad Thai, at Clock Tower Village Mall, is an excellent choice. East Indian fare is available at Banff’s only Indian restaurant, Masala. Banff’s only Western restaurant and bar, Wild Bill’s, is renowned for their entertainment and good wholesome food. Around the corner from Wild Bill's is Tooloulou's, which specializes in cajun and creole cuisine and their breakfasts are a Banff favourite. Equally interesting and also close by is Block Kitchen + Bar - a favourite for a fusion of Mediterranean and Asian tastes and whose specialty is tapas. Banff is also home to many well-known restaurants with other locations in Canada. Chili’s Grill and Bar features signature burger and steaks, as well as many other dishes. The Old Spaghetti Factory serves much more than great spaghetti, as the menu features a vast selection of other pasta dishes and other entrees, which are served in a fascinating nostalgic atmosphere. Tony Roma’s® is famous for their BBQ ribs, but also features BBQ chicken, prime rib, pork, Alberta steaks and more. Ricky's All Day Grill is proud to have something for everyone whether it be for breakfast, lunch or dinner. GREEK LEMON CHICKEN BY CHEF JASON BLOOMFIELD Ingredients 1 large chicken 1 lemon, juice of 3/4 tablespoon dried oregano (if you can get the Greek stuff, you’re really cooking!) 3/4 teaspoon salt 1/4 teaspoon pepper 4 garlic cloves, minced Red Baby Potatoes 8-12 potatoes, peeled and cut into big wedges (probably 1/4s) 1 lemon juice 1/2 cup extra virgin olive oil 1/2 cup water 1/2 teaspoon salt 1/4 teaspoon pepper Directions • Wash the chicken well and pat dry. • Combine all the remaining ingredients and massage the chicken, inside and out, with this mixture. Put the chicken in a big bowl and put in the fridge while you prepare the potatoes. • Put the potatoes and all remaining ingredients into a large baking pan. Wash your hands and put them in the pan and toss the potatoes around to coat with other ingredients. • Put in the oven and heat to 250°C (480F). • Start roasting the potatoes and when they’re goldenbrown, stir them to bring the white sides up and push to the side of the pan to make room in the middle for the chicken. • If all the water has evaporated, and potatoes have started to stick to pan, add 1/2 cup more. • Add the chicken, breast-side down, and pour any juices that have accumulated in bowl over. • Return to very hot oven and roast until chicken is golden-brown. • Turn over, breast-side up and continue roasting until chicken is nearly as golden-brown on other side. • At this point, turn the oven off- don’t open it- and leave the chicken in for another 1/2 an hour. I like to think I’m saving energy this way, but it also cooks the chicken beautifully. Serve with pan juices. Cook Murgh Makhani Dip 2T oil 1T ginger 1T garlic 1T sugar 1t red chili powder 1t dried fenugreek leaves 1t turmeric 1t garam masala 1 green chili 1 cup canned tomatoes ½ cup greek yogurt 1T chopped cilantro 1T lemon juice salt In a medium size pan on medium heat, add oil. Once hot, add the spices and fry for 1 minute. over low heat until tender. Once cooked, remove from heat. Place in a cast iron pan and brush with garlic butter, sprinkle with bread crumbs and cook until richly browned. Finish with parsley and serve with the Murgh Makhani Dip. To the pan, add the ginger and garlic and fry until cooked, add in the green chili and the tomatoes. Mix well to combine. Allow the sauce to come to a boil and then lower the heat and let the curry simmer for 10 minutes. Add in the sugar and the curry leaves and allow it to cook for another 2 minutes. Add the yogurt, mix and allow it to come to a simmer and take it off the flame. At this point, do a taste test and adjust the salt and sugar. Mix in cilantro and lemon juice. Rinse, place in a hotel pan add duck fat to cover and cook in a 225 degree oven for 4 hours in high fan. • Once cooked remove legs from fat let it drain, remove meat from any cartilage and bone add to sautéed mushrooms, chopped tarragon and roll in brick pastry. Parsnip Puree and Bark • Roast parsnip in a 350 degree oven till soft, remove cut the skin length wise from one side scoop the flesh out. • For puree:- cook the flesh in milk and blend to a fine puree • For bark:- scrape the skin clean dip in anise scented simple syrup and dehydrate Preserved Cherry Glaze 250g Cherries from Okanagan pitted 500mlSherry vinager 70g Sugar 4 Anise 4 Bay leaves 6 Juniper berries 10 Peppercorns ½ Vanilla pot • Bring vinegar to a boil with sugar and spices, add cherries and split vanilla pot. Store in a mason jar for 2 months. • For glaze: puree the cherries in a blender till smooth and thick. Baby Turnips • Cut the top of cook till tender in water. Peel cut into quarters and reheat in chicken stock and finish with butter. Trumpets, Hedgehog, Hon Shimeji • Sautee all above mushrooms in clarified butter, deglaze with chicken stock and finish with soft butter. Water 250 g Butter 2 Small Mangoes 1 Cucumber 60 g Salad Mix (Belgian Endive, Butter Lettuce/Lola Rossa/Baby Frisee) 1 Avocado Curry Salad Dressing Balsamic reduction Curry Salad Dressing Step 1 Remove the tail meat and claws from shells—try to keep the knuckle attached to the claws, Cut the tail in half lengthwise. Reserve meat for later use. With each quarter use your knife to create a fan. This is done by cutting the flesh 3 to 4 times lengthwise at the base of the avocado. Ingredients Step 2 Beurre monté – Cut the 250 g of butter in inch cubes. Heat 2 tbsp. water to 80 degrees Celsius. Slowly whisk in the cubed butter until all the butter it is combined. Keep the butter mix around 60 degrees celsius. This is the temperature for which to poach the reserved lobster pieces. Cook four to five minutes. Step 3 Cut the mango in ¼ inch thick cubes. Two tbsp per portion. Slice cucumber ¼ inch thick lengthwise. It will resemble a parpadelle. Cut the avocado in 4 pieces. 500 ml Virgin Olive Oil 185 ml Rice Vinegar 150 g Honey 7 g Dijon Mustard 50 ml Chicken Stock 12 ml Lemon Juice emulating 1 Tbsp. Curry Powder Salt & Pepper To Complete In the centre of the plate, place a small round cutter and add two tbsp of diced mangoes. At the base of the mango place your avocado fan. At the tip of the mango place your cucumber. Wrap the slice of cucumber in a circle shape. In the centre, place 20 to 25 g salad leaves. Remove the lobster from the butter and place a half lobster tail on the mango with the claw on top and drizzle the salad sauce over the lettuce, mango and the lobster. Garnish the lobster with a mango chip and balsamic reduction. Ingredients 1 cup sour cream 1/2 cup mayonnaise 3 Tbs. minced fresh cilantro Grated zest of 1 lime 1 Tbs. fresh lime juice 2 tsp. ground ancho chile powder 1/2 tsp. ground cumin 3 cloves garlic, minced 1/2 tsp. kosher salt 2 Tbs. olive oil 1/4 tsp. freshly ground black pepper 3 lb. firm-fleshed whitefish fillets (halibut, snapper, mahi-mahi, cod) 2 dozen 6-inch corn tortillas 2-1/2 cups shredded green cabbage 2-1/2 cups shredded red cabbage 4 limes, quartered use Lime-cilantro sour cream sauce Pico de Gallo • Combine all the ingredients in a 2-cup measuring cup and whisk until smooth. Refrigerate up to 4 hours until ready to use. Directions • In a small bowl, combine the ancho powder, cumin, garlic, salt, and pepper and stir to mix. Add the oil and whisk until a loose paste is formed. Rub the fish with the spice paste and let marinate in the refrigerator for at least 30 minutes and up to 4 hours. • Light a charcoal fire or preheat your gas grill on high. Oil the grill’s cooking surface. Let the coals burn down to a medium-hot fire or adjust the gas grill burners to mediumhigh. • Grill the fish until just cooked through, 3 to 4 minutes per side. Transfer to a cutting board and coarsely chop. • Divide the tortillas into 2 stacks and wrap each in aluminum foil. Place on the grill until heated through, about 5 minutes. • In a large bowl, combine the green and red cabbage. • To assemble the tacos, take 2 tortillas, top it with chunks of fish, a dollop of the sauce, a spoonful of the Pico de Gallo, and some of the cabbage. Squeeze a wedge of lime over the filling, fold the tortillas, and eat. Bring to a boil, turn down heat and simmer for about 3540 minutes. Maple Beurre Blanc 3 medium shallots 2 bay leaves 1 tsp. pepper corns 2 cups of white wine 750 ml 35% cream 1 ½ lbs cubed butter Salt & pepper (to taste) Place first four ingredients into a sauce pan and reduce liquid to ¼ of the original volume. Add cream and reduce again to ½ the volume or until sauce boils and thick bubbles appear. Remove from heat and whisk in butter cubes little by little. Finish with seasoning and a dash of maple syrup. 400g of boar belly – seasoned with 100g sugar, 50 g salt, 8 peppercorns, zest and juice of 1 orange, thyme sprigs, 1 garlic clove crushed. Mix all seasoning ingredients and rub the mixture over the pork belly – let marinade overnight. The next day, rinse pork with boiling water and roast in a preheated oven (300 F) for 30-40 minutes. Let cool, then cut pork belly into equal quadrants and cut each quadrant in half again. 12 Fresh Scallops (3 each) (Membrane removed) Assembling the dish Heat a pan or skillet to med/high heat. Sear scallops for about one minute or until you see a good brown color. Flip scallops and add boar belly then add prepared pears and a pinch of finely chopped garlic. After five seconds add a splash of white wine to deglaze. Assemble all ingredients on your favourite crockery and garnish with cherry/grape tomatoes, caper berries/capers, and your favourite herb. Heat heavy pan over medium heat and sear ribs until brown on all sides, add vegetables and continue browning. Add tomato and paste, continue cooking over heat for a further few minutes. Add wine stock, thyme and bay leaf. Place lid on pan and put into preheated oven 300˚F/150 C until meat starts to fall off of bone. Approximately 2 hours. Add stock or water as required. Meat should always be covered with liquid. Remove meat from sauce and let cool. Strain sauce and reduce until sauce starts to thicken, adjust seasoning. Melt butter in heavy saucepan; add shallot and sauté without colour. Add rice and continue cooking for further minute. Add wine and stir until it has evaporated, add stock one cup at a time stirring frequently. After 3 cups of stock have been absorbed by the rice, add mushrooms and remaining stock. Cook until the rice is slightly crunchy in the center. Add parmesan and more liquid if required. Adjust seasoning. To serve, place risotto in center of large bowl, remove meat from bone and slice. Arrange around risotto and drizzle sauce. Garnish with shaved parmesan. Set aside. • This will be your ratatouille mix. Step 3 • Sweat off shallots and the remaining garlic in olive oil. • Add rice, sauté for a couple of minutes and deglaze with white wine. • Pour in vegetable stock; simmer until rice is almost cooked. (al dente) • Add ratatouille and Edamame and cook until liquid is absorbed. • Finish with Parmesan and season to taste. • Let mix cool, form into oblong shapes and then put in freezer till they are hard. Step 4 • Lightly flour, gently toss in egg and crumb with Panko bread crumbs. Step 5 • Deep or pan fry then finish in oven. Serve with a tomato sauce or your choice of sauce.
