Best Way to Cook a Steak
temperature is the key to the perfect steak. At the
“High
restaurant we use a top down infrared broiling system
that can reach temperatures of 2,500°. For grilling at
home, heat grill to 600° with the lid of the grill closed,
brush steak with olive oil and sprinkle with sea salt
and crushed peppercorn. Sear both sides with the lid
open, flip once and finish at a medium temperature
with the grill closed. Remove steak a minute before it is
done, as it will continue to cook and lock in juices as the
temperature comes down.

is a delicious 100 percent
Chardonnay from vines that
are at least thirty-five years
old. This Chardonnay produces a big,
rich mouthfeel and is from the Russian
River Valley of California. It is a nice
aperitif since it is full of varietal flavors
and not overoaked. Also perfect with
grilled seafoods, chicken with a light
sauce and healthy summer salad (but
skip the vinegar). $16 PER BOTTLE

Nicholas Maillet MaconVerze 2010 The Maconnais
region is a bit south of
Chassagne Montrachet
and has lovely growing
conditions for this 100 percent
Chardonnay. Nicholas Maillet is a
very small, fully organic winemaking
vineyard. This wine is great to enjoy
by the pool, good for a light lunch or
with a cold seafood appetizer. You can
serve this to all of your friends and be
the hit on the block.

blooms. It’s all about texture. A dynamic centerpiece
for the summer would be a collection of bright jewel tones
that includes flowers such as beautiful plum dahlias, fresh

and beautiful open roses in deep pink. Add a few succulents
to complete the design. Succulents are available in
many shades of purples, grays and greens. This textural
centerpiece is very versatile and would be beautiful in a
weathered container for a casual summer gathering or
arranged in a silver compote for a more formal affair.

When doing cardio, try interval
workouts. Exercising at 85 to 90
percent of your maximum heart
rate for thirty seconds, and then
recovering for as long as needed to
bring you down to 60 to 70 percent
of your max for twenty minutes
(the amount of time can vary
depending on your fitness level).
You will increase performance and
post-workout caloric burn.
