Use only the designated rings or pits on gravel or dirt, never grass. 2. Clear the area of any dry leaves and sticks and make sure that tents, campers, and other items are placed at a good distance from the fire. 3. Check the weather forecast. Even a small amount of wind can blow burning debris or sparks. 4. Don’t bring firewood from another area. 5. NEVER leave the fire unattended. 6. NEVER USE FLAMMABLE LIQUID TO IGNITE YOUR FIRE! 7. Keep your campfire small and contained. 8. Never allow children or pets to play or stand close to the fire. 9. Keep a bucket of water or a fire extinguisher nearby. 10. Be sure to extinguish the fire completely. Page 10 Y E L L A V R PIONEE 4 3 1 2 Partridge Hollow Monson (413) 267–5122 Open: April 16–October 11 Sites: 229 Base: $27–43/2. Preparing and sharing simple and delicious meals is a big part of that equation. With a little bit of planning, a few tools of the (camp kitchen) trade, and some basic know-how, you can serve dishes that are simple yet remarkable. Secret RV Kitchen Tip 1 + Marinade Recipe Consider a delightful dinner featuring garlic-marinated shrimp on skewers, flavorful chicken kabobs, or a tender pork lion, cooked to perfection on the grill. In my RV kitchen, the secret to making these dishes stand out is marinating the meat or seafood in a zip top bag overnight, mixing and matching spices and liquids with my main dish. Whip up this favorite RV Cooking Show marinade in a large zip top bag, mix well and add meat or seafood: 3 tablespoons each of dry jerk seasoning and canola oil, 2 tablespoons of low-sodium soy sauce, and 1 tablespoon of cider vinegar. Secret RV Kitchen Tip 2 + Spicy Condiment Recipe What goes better with perfectly grilled burgers than crisp hot fries? This secret RV kitchen tip will have you rethinking the drive-thru and craving fresh fries from your grill. Make it happen by cooking regular or sweet potatoes in the microwave or in boiling water until soft but not cooked through (you can do this at home). Cut them into wedges, brush with either olive or canola oil, sprinkle with salt, pepper, and fresh chopped herbs and grill on all sides until cooked to perfection. Serve them with a spicy dip of mayo, Sriracha Hot Sauce, and a small squeeze of lemon. Trust me, they’ll be a hit! Secret RV Kitchen Tip 3 + Yankee Pot Roast Recipe Want to serve a meal that tastes like you were in the kitchen all day but you know better? Then pack my old RV kitchen workhorse, the crockpot, with your camping gear. One of my most productive secret RV kitchen tips, do a little front-end work at the start of the day and you’ll be richly rewarded when it’s time to get dinner on the picnic table. Always a winner and an easy one-dish dinner, may I interest you in Crockpot Yankee Pot Roast? While there are endless variations on the recipe, I offer this basic recipe that you can customize to your liking. In a crockpot combine: 3 pound chuck roast 6-8 sprigs of fresh thyme 3 onions, sliced 1-15 oz can of crushed tomatoes 6-8 carrots, roughly chopped 1 cup of dry red wine 3 ribs of celery, roughly chopped 2 cans of low-sodium beef broth 1 pound of potatoes, chunked 1 teaspoon of black pepper 6 cloves of garlic, roughly chopped 1/8 teaspoon of salt Cook on low 8-9 hours or on high 4-5 hours or until the roast is fall-apart tender. Serve with fresh crusty bread. Go Camping and Go Gourmet Eating well when you go camping is not only an unexpected pleasure but it enhances the entire experience. At the RV Cooking Show we believe in meals as memory makers and simple dishes as souvenirs. Create recipes that bring back those wonderful outdoor adventure memories anytime of the year.
