A GUIDE TO HOSTING YOUR OWN KENYAN-STYLE BARBECUE Thank you for becoming a Nyama Choma host! By dedicating your summer BBQ to Amref Health Africa you are contributing to our work bringing better health to communities across sub-Saharan Africa. We want you to gather your community together and contribute to Amref Health Africa’s lifesaving work. A simple barbecue translates to improved healthcare, meaning that your community can have a direct impact on the health of communities across Africa. This pack contains everything you need to make your Nyama Choma a success, but if you have any questions then please don’t hesitate to get in touch with the Amref Health Africa team. With best wishes, The Amref Health Africa Team The Swahili phrase ‘Nyama Choma’ (pronounced [knee-amm-er chomm-er]) translates as ‘barbecued meat’. But in Kenya it means much more than that: it brings a sense o f celebration, of bringing family, friends and colleagues together, of good times whatever the occasion. HOW TO GET STARTED: Find a suitable outdoor space; whether it’s your garden, your local sports club or community centre. Decide on a date in July or August when you will host your event. Decide on the food you will serve, as well as your music and decorations. Shout about it! Make sure all your friends know about your event by posting details on social media, sending out Amref Health Africa invites, or putting up posters. As this is a fundraising event, we suggest your guests donate £15 per person. Make sure to download our resources to show your guests why you’re hosting a Nyama Choma event and where their donation will go. For more music suggestions visit our website www.amrefuk.org/bbq NYAMA CHOMA If you really want to bring the flavour of Kenya to your back garden then Kenyan style grilled meat Nyama Choma is the way to go. This recipe works with any red meat although goat ribs are the favourite of many Kenyans. Ingredients: 1 kg of beef or spare rib, 2 cloves of garlic, juice of 1 or 2 lemons, curry powder, turmeric, coriander, paprika, s alt & black pepper. Method: Combine the lemon juice, garlic, and spices in a large glass dish, mix well, and then add the meat. Coat the meat in the marinade and leave to marinate for at least 1 hour. Grill the meat on your barbecue until cooked all the way through. Traditional Kenyan Nyama Choma is usually accompanied by a kachumbari salad, so for an authentic Kenyan feast then make sure you include this simple accompaniment. Senegal Artist: Baaba Maal Track: Miyaabele South Sudan Artist: Emmanuel Jal Track: Elengwen KACHUMBARI SALAD Ingredients: 1 red or green chilli, a handful of coriander leaves; finely chopped, 2 small onions; thinly sliced, 5 tomatoes; finely chopped, salt and black pepper, juice of 1 lime, 3 tbsp olive oil Method: Finely chop the tomatoes, onions, chilli and coriander and mix together in a bowl. Toss with the lime juice and olive oil. Season with salt and pepper and then serve. MARINADE COMPETITION Challenge your guests to see who can come up with the tastiest marinade, guests pay to enter and the winner gets all the glory! All the money you raise will go towards our lifesaving work, bringing lasting health change to communities across sub-Saharan Africa. PRIZE DRAW. TRAINING MIDWIVES Everyone who donates and signs your donation form will be entered into our prize draw. You could win a one-week stay at the picturesque Glen Estate in the Scottish Borders, a crate of Tusker Beer or some beautiful African accessories. Across sub-Saharan Africa women have a 1 in 39 lifetime risk of dying in pregnancy or childbirth, from conditions which are easily treatable and preventable. We believe the key to improving maternal health is to train more midwives. Access to skilled care from a trained midwife during pregnancy, child birth and after delivery is vital to saving a mother’s life and that of her child. Since 2013 we have trained almost 6,000 midwives. Each midwife will care for 500 mothers, which translates to care for 2.7 million women a year. BE SAFE We know you all know how to hold a BBQ, but we want to make sure you stay safe whilst hosting your Nyama Choma. Set up your barbecue on a flat and level surface, away from any trees or plants. Light the barbecue early, and once it’s lit don’t leave it alone. Wait until the barbecue is definitely hot enough to cook meat, when the coals are glowing red with a powdery grey surface. Keep raw and cooked meat separate and making sure you use separate utensils for each. Move the meat around on the grill to cook it evenly, and make sure it’s cooked through before you serve it. When the barbecue is over, make sure the grill is properly extinguished. Esther Madudu is an Amref Health Africa trained midwife working in Uganda. Esther works tirelessly to help the women in her district deliver safely; “I lost a baby myself during birth and ever since then I’ve said that no one should lose a baby when I’m around.” By hosting your own Nyama Choma you can help us to reach more midwives like Esther and the women they support, bringing them critical maternal health care. Cash – It is not recommended that you send cash through the post; you could pay the money in to your bank account and then transfer it to us via one of the following methods.
