The Boss Man
Roderick Grant is a Jamaican born restaurateur
and entrepreneur and is passionate about his
roots and about cooking. Boss Man Food is his
latest endeavor to share his passion for food and
his culture with you. All products are produced in
Jamaica and imported to Australia just for you.
Jamaican Cuisine
Jamaica is an island full of history, heritage, and
people from all corners of the world. With an
island having so much influence from all over
the world, it’s no wonder that the food is just as
original, unique and tasty – boasting of influences
from the Spanish, British, East Indian, West
African, Portuguese, Chinese, French and the
Dutch. One cannot be but fascinated with the rich
culinary choices of Jamaica.
Boss Man Jerk Chicken
• Ingredients
½ kilo chicken maryland or thigh fillets
3 tablespoons olive oil
4 full tablespoons Walkerswood Jerk Seasoning
• Directions
Mix olive oil and Walkerswood Jerk Seasoning in
a bowl, rub seasoning on chicken all over including
under the skin. Leave to marinade overnight in a
sealed container. Preheat oven to 170 degrees, place
chicken in baking pan and cook for 30 minutes.
Remove from oven and place on a BBQ for a further
20 - 30 minutes, turning continuously. For best results
use a coal BBQ. If you do not have a BBQ, please
leave in the oven for a further 30 minutes or until
fully cooked.
Serve with Walkerswood Jerk Sauce and bread
or cassava chips.
Boss Man Ackee & Salt Fish
• Ingredients
1 can of ackee, drain water
½ lb boneless salt fish (COD)
3-4 table spoons olive oil
1 large onion - chopped
¼ table spoon dried thyme
1-2 fresh chilli (chopped)
1 small tomato (chopped)
Black pepper and salt to taste
• Directions
Soak the salt fish in a pot of water to remove salt
then chop into small pieces. Heat oil in a frying
pan, add salt fish and fry for 2 minutes, then add
onions, thyme, fresh chilli and tomato, stir for a few
minutes, add the ackee minus the brine! Cook for a
few minutes add salt and black pepper to taste.
Best served with bread or fried dumplings.

beginning in the kitchen of Norman Nash who
started the process as a hobby in 1921.The products
are aged for a minimum of one year to achieve their
unique flavor. There are no chemicals or additives
used - vinegar is used as a preservative.
