These companies are able to take advantage of the economies of scale and efficiencies characteristic of chain restaurants, while also enjoying the local patronage and menu flexibility of independent restaurant operators. Such operators run the gamut from industry giants like Lettuce Entertain You, Levy Restaurants and Wolfgang Puck Companies, to smaller operations such as Kalamazoo's Millennium Restaurant Group (6 concepts), Cincinnati's Tavern Restaurant Group (5 concepts and 15 units), and Denver's Sage Restaurant Group (9 concepts). While the companies may not command market share comparable to the country's largest chains, they do occupy a potentially important niche for foodservice suppliers and distributors, with 116 of the top 200 Multiconcept Operators (MCOs) having annual sales of at least $30 million. Overall, the top 200 MCO companies represent 1,448 concepts, 2,367 units and over $5 billion in annual sales. "There are a number of trends contributing to multiconcept operators' Wolfgang Puck current success," says Technomic Director Mary Chapman. "The Food Network has given a number of chefs celebrity status, and that has provided an eager customer base for their concepts. Many customers may not even be aware of the relationships between concepts and think of these restaurants in the same way they view other local independent restaurants in their area." Chapman also points out that these companies can quickly rebrand units, utilize unused space within a particular concept to introduce a new brand, or easily change the allocation of resources between brands in order to stay ahead of the curve when it comes to industry trends. In order to help operators and suppliers better understand this vital restaurant segment, Technomic introduced The Top 200 Leading Multiconcepts Operators Restaurant Report, which includes rankings and detailed profiles for 200 of the nation's leading multiconcept operators. The report is based on Technomic's ongoing tracking of chain and independent restaurant operators, as well as interviews with operators. In addition, the report draws from a number of recent Technomic studies dealing with the foodservice industry's composition and trends, as well as secondary research conducted through Technomic's Burnsville, MN – bd’s Mongolian Grill, the famous create your own stir fry restaurant where guests “rule the experience,” has announced plans to develop new locations across the United States. Calling for several new locations throughout the Midwest, Mid-Atlantic and Southeast during the coming years, the strategic fran- chising plan aims to attract experienced restaurant operators who have deep roots in their regions. Currently expanding in the Tampa area with existing franchisees Darryl or Karen Thomas, will be three to four more restaurant locations opening. In the Jacksonville area up to four new bd’s restaurants will be born. Orlando will have between three and four new bd’s locations and in Miami up to six will be opening. The growth strategy will significantly increase bd’s Mongolian Grill’s operations throughout each region. Currently, the brand’s restaurants operate in 13 states, with its most prominent presence in the Midwest “As bd’s Mongolian Grill expands, it is carving out a new niche in the casualdining segment. It’s a fresh approach to dining that restaurant operators can grab hold of now and grow it in their home markets,” said Tom Ragan, Vice President of Franchising for bd’s Mongolian Grill. “There’s nothing else like it and our innovative menu choices and energetic environment have the attention of the next generation of diners.” Currently, nine new bd’s Mongolian Grill restaurants nationwide are in the development phase, with several slated to open in 2011. Businesses join the group and offer their products for sale. You can purchase a goat that another member is offering for a dollar value and pay for it with an equal value of your products. Let’s look at how it works in today’s economy. John’s Restaurant needs a new fryer. John would contact a barter company and join the group. A one time membership fee is usually paid to the barter company. Once John is a member he will have access to the other members of the group and the information about the products they are selling. After investigating all of the members in the group John finds a used fryer that Michael’s Restaurant Supply is selling for $400.00. In ancient times John and Michael would exchange their offerings and the deal would be completed. In the new barter world Michael and John would agree on a price and would submit information back to the barter company who maintain the balance of trade dollars in each one of their accounts. Let’s assume both John and Michael have established accounts with 1,000 barter dollars in each one of their accounts. John would transfer 400 of his dollars to Michael’s account and Michael would provide John with the fryer. John’s account is now 600 and Michael’s is now 1400. Just like a checkbook transaction. The barter company charges a fee for the transaction either to the buyer or the seller depending on company policy. How did John get the 1,000 barter dollars in his account? Steve, Mary, Bill, and many more members came to his restaurant to eat and paid John with their barter dollars which were credited to John’s account. John actually paid for the fryer with his food but did not hand it to Michael directly. Barter works for companies that have a low cost for their products and for selling excess space like a hotel room or seats at a show that hasn’t sold out. Barter works if you can find the products you need within the barter system you join. You don’t want to do more than about 10 percent of your daily business in barter unless you can spend an equal amount. Check on barter companies in your area and the next time you need to buy a goat you’ll be all set up. Lauderdale and will be located downtown at the corner of Broward Boulevard and Federal Highway (35 Federal Highway). Chef Marco designed the kitchen space, planned the menu and trained the culinary staff. Bertolini’s is still operating today with the original Chef Marco menu. After a year he was homesick for Orlando so returned. In Orlando, he decided he wanted to ‘strike it alone’. Within a short time, his vision of what an authentic Italian restaurant should ◆ Orlando be was realized. Adriatico Trattoria Italiana quickly gained a reputation in the College Park/Winter Park areas of Orlando, second to none. Chef Marco, through determination, hard work, and many sacrifices, realized his dream and true passion.
