THE NORDIC KING OF LIQUORICE
Liquorice is an old classic, but has also become a new Nordic delicacy. Johan Bülow
has created a product that exudes Scandinavian taste and success. But the road
to success has not only been paved with liquorice and laughter.

INTRODUCTION
BLOOD, SWEAT AND LIQUORICE
Johan Bülow is Denmark’s uncrowned king of liquorice, and a man
who is passionate about his craft and his product. In just seven years,
Johan has built a liquorice empire and a product that oozes with
passion and Nordic quality.
Why liquorice?
“After a number of years in the restaurant business the choice fell on
liquorice, because I started to appreciate it as a delicacy on par with
wine, tobacco and similar things. I have always had a preference for
liquorice as candy, and I couldn’t understand why so many liquorice
manufacturers didn’t put more care into the raw material of their final
product. I saw a gap in the market and spotted an opportunity to
combine quality raw materials and thereby make a better product.
It was also just an idea that was too good to let go of, it had to be
done,” he says.
BORN TO CREATE
How did your liquorice adventure start?
“I always knew that I needed to create something of my own. I wasn’t
going to be a pilot, policeman or firefighter. My mother, who is also
one of the reasons why I am where I am today, has always said that
I needed to create something that would make me feel happy and
proud”, he says and continues:” There are many people who never
take risks and just go for it. It is important to take some risks in life
and not to end up with the annoying feeling of regret as you get old,
while asking ‘why didn’t I just do it?,’” Johan says.
“It’s important for me to accomplish
something. To achieve something
in life.”
Nevertheless the road towards creating his own liquorice wasn’t
an easy one. It took blood, sweat and tears, and many hours in the
kitchen on the island of Bornholm, where he and his girlfriend were
fighting an uphill battle in extracting the right stuff from the liquorice
root and thereby making a good quality product.
“The first time we had a finished product, and opened the doors
in Svaneke, Bornholm in 2007, we had no idea how it would turn
out. But as the store was filled with customers, and all products
were sold out in 2.5 hours, I knew that we got it right. It was
overwhelming. The fact that I had 50 business cards after three
months of sales, from people who would like to sell my product in
their stores, I knew that we were going to need more capacity,”
he says.
One thing led to another and they have now expanded from the
35m2 small kitchen in Svaneke, to a 3500m2 production hall in
Hvidovre close to Copenhagen.

PROGRESS IS THE KEY WORD
What is your definition of good quality?
“The raw material is essential in creating a product of high-quality
and good taste. There’s a difference whether a liquorice root comes
from China or Italy. The same goes for our chili. We use a lot of
chili in our production, and we get our chili’s from a local gardener
as they are simply the best. If we are going to use salt, well then
we look out into the world for the absolute best salt suited for our
product. It’s about experimenting and making the most out of the
raw materials,” he says.
“Touch it, taste it, and I will guarantee that you can taste the
quality of the ingredients and the love that goes into making it”,
Johan points out.
What is important to you in life?
“It’s important for me to accomplish something. To achieve
something in life. I need to see progress, both in terms of the
company and on a personal level. The process of opening more
stores around the world, looking at the results, staff and customers
in my shop. It’s a great feeling and means a lot to me. In addition, I
like to improve my skills and my knowledge. To learn more and to
know more is an important part of my life. To have the energy while
being able help others at the same time, also means a lot to me. I
like solving other people’s problems. It’s really quite simple, if I can
help or advise someone who is in a difficult situation then I will gladly
do so,” he says.
NORDIC CRAFTSMANSHIP IS UNIQUE
What defines Nordic craftsmanship?
“It’s almost too easy to mention the restaurant NOMA when it comes
to taste, but they have just created something really unique in terms
of the Nordic cuisine. There are also some local artisans from
Bryggen, for example Copenhagen Cabinet Making (Københavns
Møbelsnedkeri), which make beautiful and sleek designed furniture.
I have made use of them several times in the decoration and
furnishing of my home. But generally I believe that it is the small
niche companies, which supply special products and experiences,
everything from food, furniture, kitchens and so on. They are
altogether the people who define the Nordic movement, mindset
and style. I deeply respect the cuisine that Claus Meyer and other
chefs have created. That someone has been able to create a Nordic
cuisine, where raw materials and healthy values are paramount,
and created a brand for Denmark and Scandinavia in the process.
It is quite unique and something we should be proud of,” he says
and concludes by stating that when he is exhibiting his products
abroad, he has noticed a growing interest because he comes from
Scandinavia and Denmark.
”The raw material is essential in
creating a product of high-quality.”
There is no doubt that Johan is a man of passion and a unique drive,
which influences people around him. You feel an urge to create, get
started, and show the world that you can accomplish something and
offer it something unique. Finally before we go our separate ways, I
would like to hear Johan’s recommendations if you are going to visit
Copenhagen.
What would you recommend to people visiting Copenhagen?
“If I had to recommend something, besides Frederiksberg Garden, I
would definitely recommend The Marble Church as a must-see. It
is very special. Really beautiful. I also think that Tivoli is absolutely
fantastic, and there is also the Cafe Royal, which is quite unique
in terms of both dining experience and decor. They have merged
Japanese sushi with traditional Danish open sandwiches. It tastes
fantastic and is simply something you have to experience.”

ROSENBORG CASTLE
The beautiful castle is set in The King’s Garden and features 400
years of splendour including the crown jewels and royal regalia.
Numerous art treasures are displayed, and among the main
attractions is the Great Hall, which features the coronation throne with
three silver lions standing guard. The magnificient crown jewels and
royal regalia sparkle in the three treasuries beneath the castle.

AMALIENBORG PALACE
Step inside the palace and experience royal life past and present.
Amalienborg’s scope stretches back 150 years and as a journey in
time the rooms of the most recent kings and queens stand intact. The
large garden room gives an insight into royal life and the monarchy
in the 21st century. On Saturdays there is admittance to the Royal
Reception Rooms, which are still in use by the royal family.

THE NATIONAL MUSEUM
Denmark’s largest museum of cultural history, and its main domicile
is a classical 18th century mansion just a stone’s throw from ”Strøget”.
The museum provides free access to the history of the Danes from
the first Ice Age to the hash stall from the ’free state’ of Christiania
as well as an extensive collection of foreign treasures from all over
the world. The permanent exhibition Danish Prehistory is an absolute
‘must-see’. Highlights like the Vikings’ gold and silver hoards, the
3400-year-old unique Sun Chariot and the bog find Egtved Girl are
important keys in understanding the history of Denmark.
THE ROYAL DANISH ARSENAL MUSEUM
The museum is located in King Christian IV’s impressive arsenal
building completed in 1604 and once part of a hidden naval harbour.
Today, the museum provides free access to permanent exhibitions
about the wars of Denmark since the 1500s as well as temporary

ONE LITTLE MERMAID: TWO WOMEN
Few people know that sculptor Edvard Eriksen asked
prima ballerina Ellen Price to model for the now world- famous Little
Mermaid sculpture, unveiled in 1913. However, the dancer absolutely
refused to pose in the nude! So, the mermaid we know and love today
is actually two women: The head is Ellen Price’s, but the body is
Eriksen’s wife, Eline! The Little Mermaid celebrated her 100th birthday
in 2013 - still looking forever youthful. Hans Christian Andersen’s
fairy tale mermaid has been sitting bashfully by the waterfront at
Langelinje since 1913 - deliciously enticing every visitor’s imagination.

DEN BLÅ PLANET, NATIONAL AQUARIUM DENMARK
Den Blå Planet is Northern Europe’s largest aquarium,

Public transportation in Copenhagen runs like clockwork. The city has
a joint-ticket system: The same ticket is valid on busses, Metro, and
S-trains. A 2-zone city ticket costs DKK 24 and is valid for 60 minutes.
HOW AND WHERE TO BUY TICKETS
Tickets bought on the bus: Cash only, no cards accepted. Tickets can be
bought at DSB ticket machines found at all S-train and Metro stations,
almost any credit card is accepted. Many S-train stations have 7-Eleven
kiosks, where tickets can be purchased using credit cards. Note: PIN
number needed.
TAXI
Cruise Copenhagen Network recommends Amager-Øbro Taxi 4x27. The
yellow-black cars offer a high service level, and can be pre-ordered for
a fixed rate, when going to the ship, hotel or airport. Naturally, you can
also simply hail a taxi in the street.
All taxis accept US Dollars and Euros as payment. You can pay with all
major credit cards as well (card fee: 3.25%).
