Jalapeño Corn Muffins INGREDIENTS: Dry Ingredients • 1 cup unbleached white flour • 3/4 cup cornmeal • 1/3 cup sugar, or to taste (see note) • 2 1/2 teaspoons baking powder • 1/4 teaspoon baking soda • 1/4 teaspoon salt Wet Ingredients • 1 cup fat-free yogurt • 1 cup well-drained canned corn • 1/2 cup pickled jalapeños, drained, seeded, and minced, or to taste (see note) • 3 tablespoons butter, melted Preheat oven to 400 degrees. Then: In a medium bowl, combine all dry ingredients—the flour, cornmeal, sugar, baking powder, baking soda, and salt, and stir to mix thoroughly. In a large bowl, combine the yogurt, corn, jalapeños, and butter. Stir the dry ingredients into the wet, using as few strokes as possible to combine. Spray a 9-cup muffin tin or 4 mini-loaf pans (6 x 3 x 2 inches) with nonstick cooking spray, and fill halfway with batter. (If you don’t have a 9-cup tin, fill unused cups of another tin or tins with water before baking.) Bake until a toothpick inserted into muffins emerges with clinging moist crumbs, and muffins are lightly browned, about 25 minutes. Transfer to a rack to cool. How can they avoid bankruptcy? DR. DOBSON: There may be a way to get it done. Donna Partow, author of “Homemade Business,” has of- fered specific advice about starting your own business, which could involve desktop publishing, pet grooming, sewing, consulting, transcribing legal documents or even getting into mail-order sales. Choosing the right business is the first of three preparatory steps. Consider taking a personal-skillsand-interest inventory to identify your abilities and to discover what you might enjoy doing. The second step is to do your homework. Begin by using the Internet to help you research your chosen field. Look up books, magazines, and newspaper articles. Talk to other people who have done what you are considering. Join an industry organization and a network. Subscribe to industry publications. According to Mrs. Partow, the third step is to garner as much support as you can. Get your children, your spouse and your friends on your side. Then marshal your resources and go for it. Before telling me why this alternative is impossible in light of your circumstances, let me tell you about the Van Wingerden family in Colorado Springs. They have 22 children, twelve of them adopted and ten born to Lynn, the mother. They own a strawberry farm and all the children old enough to work are involved in it. Believe it or not, Mrs. Van Wingerden homeschools all the kids personally. The family is highly organized and structured, with the teenagers having specific and rotating responsibilities for routine tasks and for the care of the youngsters. Visiting their home is a delight. The Van Wingerdens prove that many things are possible for those who set their minds to it. QUESTION: Just how much opportunity do parents have to remake the personalities of their children? Can they change characteristics that they dislike? My son is painfully shy and I’d like him to be strong and assertive. Can we redesign him? DR. DOBSON: You can teach new attitudes and modify some behavioral patterns, but you will not be able to redesign the basic personality with which your child was born. Some characteristics are genetically programmed, and they will always be there. For example, some kids appear to be born to lead, and others seem to be made to follow. And that fact can be a cause of concern for parents at times. One mother told me that her compliant, easygoing child was being picked on and beaten up every day in nursery school. She urged him to defend himself, but it contradicted his very nature to even think about standing up to the bullies. Finally, his frustration became so great that he decided to heed his mother’s advice. As they drove to school one day he said, “Mom, if those kids pick on me again today ... I’m ... I’m ... I’m going to beat them up -- slightly!” How does a kid beat up someone slightly? I don’t know, but it made perfect sense to this compliant lad. Like you, some parents worry about an easygoing, passive child -- especially if he’s a boy. Followers in this society are sometimes less respected than aggressive leaders and may be seen as wimpy or spineless. And yet, the beauty of the human personality is seen in its marvelous uniqueness and complexity. There is a place for the wonderful variety of temperaments that find expression in children. After all, if two people are identical in every regard, it’s obvious that one of them is unnecessary. My advice to you is to accept, appreciate and cultivate the personality with which your little child is born. He does not need fit a preconceived mold. That youngster is, thankfully, one of a kind. A: Most of the time, most of the meetings are open when the members are discussing the public’s business, but there are exceptions. The one absolute is that ALL votes must be taken at open meetings. Q: What are those exceptions? A: The law permits a public body to discuss “personnel” matters in a closed meeting, including hiring, firing, promoting or demoting public employees. However, disciplining an elected official for conduct related to official business must be done in an open meeting. WILLIS Willis, Betty Marcella, of Springfield, died June 27, 2009 at Forest Glen Health Campus at the age of 82, after a long courageous battle with Parkinson’s disease. She was born on April 28, 1927 in Springfield, to Carl and Belva Crawford. Betty was raised by her stepmother, Hattie. She married the love of her life, Carl Willis, on March 18, 1944. Betty worked at Ohio Thermometer for a few years. When her last child was born, she stayed at home to be a great wife and mother. Betty is preceded in death by her husband, Carl; her parents and stepmother; and 2 sisters. Betty is survived by three children, Hattie (Rex) Harbison, Mike (Annette) Willis, and Linda (Tom) Rockwell; 7 grandchildren; 9 greatgrandchildren; 1 great-great grandson; 2 sisters; best friend, Ginnie Rockwell; special son, Doug Harrison; and numerous nieces and nephews. In fact, the American cuisine on the menu comes from his family’s time-tested recipes, from the restaurants and his family’s home kitchen, including the Pineapple Upside-Down Cake, which was his father Larry’s own special recipe. All the Peruvian dishes and drinks come from Diana’s mother’s recipes whose family was from Ica, Peru, a town—where Spanish is spoken—located on the desert coast near the Andes, in the heart of Peru’s Creole culture. For a unique Peruvian taste, several of the Peruvian dishes are made with the aromatic Aji (A-hee) Amarillo (yellow) peppers, bright orange chilies from Peru. One of the drinks on the menu us one called Chicha, made with purple corn, pineapple juice, lime juice and flavored with cloves-- mmm, delicious! They were encouraged to add Diana’s recipes to their restaurant’s menu by their friends’ reactions to their Peruvian dishes. “People are not exposed to Peruvian dishes in this area, but we prepared the food for our friends and they loved it.” Williams Eatery has had a great first year and just like the couple’s friends responded, always asking for more, Williams Eatery has had a lot of repeat business. The Cincinnati Review and Indianapolis Star both recently wrote very positive reviews about Williams Eatery & Gathering Place. Part of the ambiance of the restaurant is created by an inviting color scheme, the tropical plants, and the art hanging on the walls. The couple supports local artists in a symbiotic relationship, giving artists a place to display their work and Williams Eatery its unique atmosphere. Besides its main dining area, Williams Eatery has an atrium that can seat up to 50 guests for special occasions like birth- day parties and wedding receptions. Photos by Marianne Nave SPRINGFIELD, Ohio — James and Jo Ann Bodenmiller, 1800 Providence Ave., are the fifth winners of the Community Beautification Committee Home of the Week Award this season, according to Chairman Marianne L. Nave and Co-Chairman Theresa Mills. The winning home this week was selected by CBC members Betty Jones and Heather Hickle. The Bodenmillers received their first year shield award in 2008, after being entered in the annual contest by CBC Judge Brian Cason. They enjoy doing their own yard work and will receive a Home of the Week plaque and numeral award at the October 11th CBC Awards Presentation at The Courtyard by Marriott - Downtown Springfield. The CBC is conducting its 44th annual Home Beautification Contest this summer and twelve Home of the Week winners will be selected from those persons entered in the con- test. Suggestions for the Home of the Week may be mailed to the committee for consideration, however only entrants already in the contest are eligible. If the person suggested is not in the current contest, the name will be held for automatic entry in the next contest. Only city residents are eligible for the residential contest. Bid those pesky fleas and ticks adieu with a couple of homemade remedies along with some optional prescribed ones. For both dogs and cats, brewer’s yeast and garlic tablets may suffice. It takes a while to get into the pet’s system, but I’ve heard it works. Another homemade remedy against a flea invasion is to put a small amount of vinegar in the pet’s drinking water. For prescribed medication against fleas, the ingredients found in Program, Frontline and Advantage work best. The ingredients are not absorbed into the bloodstream and are toxic only to fleas, flea and tick natural ingredients to see what maybe found. Another suggestion is to conduct a daily grooming routine for your pet which includes a visual as well as a hands-on inspection to detect if there are any fleas or ticks. In addition, it’s always a good idea to keep grass cut short and use a petsafe weed control on your lawn, if possible. Remember, never use any flea or tick remedies without first consulting a veterinarian. Got critters that live on your critters? The ceremony will be held in conjunction with the annual DayTony Awards on August 16, 2009 at the Dayton Marriott Grande Ballroom. The event is open to the public with tickets. He is the composer of over 400 published pieces of sacred and secular choral, piano, organ, instrumental and ballet music.
