Even if you don’t have a sweet tooth you’ll appreciate the
legendary welcome gesture when you check in. Chances are you’ll
succumb to the warm and meltingly good chocolate chip cookie
too – we did! The check-in is so slick and swift that you won’t even
have a chance to finish the moreish snack that you’re handed, but
you can always save it for later.

and long term stays for work; as such the hotel means business.
Realising that business executives don’t have all the time in the
world, the service here is taken up a notch. Speedy assistance and
business facilities aside – there are a variety of different sized
conference and meeting rooms that can be booked – the hotel
is also a great destination for families seeking an affordable break.
We discovered this when we were shown to our suite with its own
separate lounge area, complete with a sofa that can be folded out
into a bed that sleeps two and sliding doors to completely shut
them off from each other. The clever use of space in these rooms
also means that there are two separate flatscreen televisions, one
in each room, so there’s no arguing over the remote control. Suites
make up approximately a third of the hotel’s 126 rooms
and also come equipped with a small kitchenette with tea
and coffee making facilities. With the hotel providing a free shuttle
service to the Hilton Ras Al Khaimah Resort and Spa just down the
road, complete with complimentary kids club access, families can
enjoy all the benefits of a beach holiday, while also being within
walking distance from the malls.

When you lay eyes on the rooftop pool, however, you may not be
able to drag yourself away. Stylishly decked out in interestingly
shaped white wicker chairs, the pool area has a distinct Jetsons
vibe. It also affords one of the best views of the city with the Hajar
Mountains looming up impressively from the one side and the
Hilton’s lush green garden that connects The DoubleTree to the
Hilton hotel on the other. It’s hardly surprising that this is the
regular venue for one of Ras Al Khaimah’s hottest pool parties
in town: at the weekends, well known DJs hit the decks so that
merrymakers can toast the sunset, meet and mingle. They serve
great bar snacks here too from spicy calamari with a duo of dips
to an array of smooth smoothies: the ginger mania with apple,
banana and mango is particularly zingy.
Another area offering spectacular city views is the light and bright
workout studio with huge windows where they hold regular yoga
and Zumba classes. You’ll locate this in the spa and gym area just
a few steps down from the pool. The 24-hour gym means that
stressed out insomniacs can work out at any time of the day, while

From January to December 2012, the total number of visitors to Ras Al Khaimah was recorded at 1,105,191, generating a revenue boost
at almost AED 585.066 (US$ 159.418 million).
Ras Al Khaimah TDA is working on achieving its target to increase the hotel room inventory to 10,000 hotel rooms by the year 2016
compared to 3,000 hotel rooms in the year 2012. With various hotel openings to come, of monumental significance is the soon to be
opened Waldorf Astoria Ras Al Khaimah in Al Hamra. Not only is this the first time the prestigious branch has ventured into the UAE,
the palatial splendour of the 349-room property is set to capture the world’s attention with the same verve as Dubai’s Burj Khalifa.
The main visitor source markets to Ras Al Khaimah were UAE, Germany, Russia, Czech Republic and Ukraine. Germany is the strongest
global market bringing in more than 295,926 visitors followed by the United Arab Emirates with 302,516 visitors and Russia with 165,594
visitors.
Then there’s the supremely stylish 632-room resort Rixos Bab Al Bahr, also due to open this year, followed by the 484 - key
DoubleTree by Hilton Resort, Marjan Island, scheduled to open in 2014 and the 2015 opening of the 442-room Crowne Plaza
on the Al Marjan Islands.
The affordable luxury destination of Ras Al Khaimah received great results for the year 2012, which we would like to share with you.
Rixos Bab Al Bahr
Rixos is the first “All inclusive” property of this magnitude in the UAE. Offering 632 rooms and
suites, the resort is scheduled to open its doors in Q4 2013 at an inclusive luxury environment

The Top Gun theme tune will flash through your mind as you prepare to take off for a dazzling, dizzying experience
at the Jazirah Aviation Club.
Take to the alluring Arabic Sea on board the UAE’s one and only luxury gullet yacht, the aptly named
Prince of Sea.
With a roar of the engine, you secure your headphones and take
a deep breath as you start moving along the tarmac. Suddenly,
after just a few metres, the microlight rises and before you can yell
‘Maverick!’ you are flying. It feels sensational.

Pillai, I’d been fully briefed before taking to the skies. Captain Amith

over 50 microlights, gyrocopters and powered paramotors of
various models and makes, wannabe pilots as well as those along
for the ride are spoilt for choice. I was happy when we walked
towards a cheery yellow model, glistening in the sun like a giant
canary. Yellow feels like a safe colour.
You won’t believe how sensitive these sticks are until you’ve shifted
one yourself! When Captain Amith invited me to go up, I was not
prepared for how swiftly the nose would shoot upwards into the
sky. We went from being level to what felt like a 90-degree angle
in less than a second: exhilarating and stomach churning!

in Ras Al Khaimah, the intrepid sailor revolutionised navigation
through several inventions and innovations. Now Prince of Sea

When you’ve lived in the UAE for a while, it’s easy to become
a little spoilt. Speedboats? Tick. Yachts? Been there, done that.
Super yachts? Yawn. So to be honest we were a bit blasé about
spending yet another sunny day at sea on yet another boat. How
wrong we were! Because Prince of Sea is not just any yacht. Decked
out for unparalleled fun, there are so many activities in which
to partake that the day will fly past you quicker than the wind
changes direction. This is one vessel you won’t want to abandon.
Next up is a demonstration by a muscly young man on how
to body slide. The concept is similar to a zip wire, only you’re
immersed in the sea instead of hovering above it. Your challenge?
To try and pull yourself out of the water using every single
stomach muscle you possess, as opposed to just letting it drag
you merrily along. It’s a lot harder than it looks, but even if you
don’t master it, it’s still heaps of fun.
While you’ll need to have a head for heights there is nothing to fear:
these flying machines may look a little fragile but they’re incredibly
tough. Not only is microlighting the fastest growing recreational
sport in the world, it is also one of the safest.
Your flight will also give a whole new meaning to the term
“birds-eye” view. You’ll cross Marjan Island where they’re building
the Real Madrid theme park, followed by Al Hamra Palace Resort,
the Banyan Tree Ras Al Khaimah Beach and the marina. On your
return you’ll spy dozens of bright white flamingos in a wetland
reserve – it’s encouraging to see an unspoiled conservation area
aiding the breeding of local wildlife.
Your aerial sequences may not look as thrilling as they are in the
movies but they certainly feel like they are. Back ton terra firma
after your stint in the sky, the only thought running through your
head will be: ‘When can I do it all again?”

for you and a group of friends.
Before lunch, there’s the opportunity to go snorkelling
at Al Marjan Island. Alternatively you could always lie back on one
of the mattresses on deck and soak up the rays as the anchored
yacht gently sways you to sleep. A varied spread of food includes
fresh fish, chicken curry and plenty of salads to keep you fortified
for the rest of the activities ahead – don’t forget you can still
wakeboard, jet ski or be pulled along on a banana boat, a tube
or a big maple, as well as partake in a spot of fishing. We told you
that the potential to play is endless!
Its generous proportions can, in fact, accommodate up to 75
people for full day, sunset or dinner cruises. With the music cranked
up after the sun sets, this is the perfect party boat and is also
a sought after venue for weddings. Already married? You could
always use it as an excuse to renew your vows!

then manipulate so that you fly out over the sea and then across
the boat before they drop you down to dip your toes into the water.

The Blue Energy Committee has recently been involved in a community activity to help
underprivileged students from the Philippines by sending study materials , toys and other
essential kids stuffs. With the help of Rak Free Trade Zone community and the people in
the city near Hilton Ras al Khaimah, Dhs1800 was collected and suppliers were bought
and sent overseas to support Filipino community.
The Ras Al Khaimah Tourism Development Authority was excited to participate for the first time in the “UAE Clean Up Campaign 2012,”
organised by the RAK Free Zone and the Emirates Environment Group (EEG).

Special Needs Children’ ,for those who really needed some
intention and love from us all.
The children and their parents were brought to the resort
for a day of smiles and activities.
Donation during summer
Clothes from team members were collected and given to less fortunate
people in an underdeveloped area in Ras Al Khaimah. The clothes were
washed, pressed and packed and then divided into male, female and
kids items in each parcel. It was an overwhelming experience for the
entire team whom witnessed their positive contribution on other
people’s faces.
As part of the Hilton’s commitment to sustainability projects and
protecting the environment, Kids are tought the value of recycling.
One such example is utilising palm tree leaves as an effective method
for car park shading.

The Cove Rotana Resort Ras Al Khaimah team was pleased to spend valuable time at the
‘Specialized Center for Special Needs’ on December 10, 2012.
Twenty employees from different backgrounds and departments spent a fun packed and
giving day interacting with the kids. One of the principle pursuits focused on painting the
activity room.
The children happily interacted with the team and enjoyed a lavish buffet that was followed
by a surprise Santa Claus appearance, who distributed gifts and candy bags for everyone.
We were pleased that 235 team members from 11 hotels, resorts
and different tourism entities in the Emirate, came to help us clean
up our beautiful land. It united the community and brought us
altogether to help save the planet. More than 2,000 bags
of garbage and 6,000 kg of waste were collected, by over 1,000
participants.

for pretending you’re blue blooded as you head up the driveway
of this authentic looking palace.
You can’t miss Al Hamra Palace Beach Resort. The colossal

The soul of Sicily
The aromatic flavours of Sicily have been imported to Pesto thanks to Chef Giuseppe’s
wonderfully authentic cuisine.
Sicily is renowned for its swoon-worthy food. The fertile island
comes with an abundance of quality olive oil to nourish your soul
and make your skin supple. Then there are the lemon trees that
perfume the sultry night air, and the rich pistachio nuts – originally
taken to the island from Arabia in the 9th century – that are used
liberally in both sweet and savoury dishes. And, surrounded as it is
by the ocean, don’t forget the frutti di mare – the fruit of the sea.
Sicilian-born chef Giuseppe has brought both his wealth
of knowledge and his passion to Ras Al Khaimah’s Corniche,
delivering authentic and inventive food alongside the Arabian Sea.
At Pesto you’ll dine like a Sicilian and sink your teeth into meaty
fish dishes, light, crispy pizzas, colourful antipasti platters and salty
savoury focaccia bread.
First up is the antipasti platter that arrives looking like a work
of modern art with four completely different, but equally
spectacular items, each taking up a corner of the plate. The tuna
piedmont style is thin layers of tuna draped over a round mound
of iceberg lettuce and dramatically drizzled with a mustardy
mayonnaise. Trying to outshine this fish ensemble is the smoked

salmon and tuna sashimi with anise-flavoured fennel. Meanwhile
the mussels coated in breadcrumbs taste as if they’ve only just left

a cacophony of brilliantly contrasting flavours, this is one to share
– and to return for. It’s even better when accompanied by chef’s
signature focaccia with sweet roasted red onions and crispy beef
bacon sprinkles.

Loosen your belt, take a deep breath and get ready for the next
dish: the multi-hued pizza fruitti di mare. We’d watched it being
painstakingly prepared in an authentic pizza oven downstairs so
we knew before it even arrived how delicious it was going to be.
With tender squid, prawns and mussels – the latter still in their
shells – garnished with a smattering of flat-leaf parsley and
oregano, it’s easy to imagine you’re in the Mediterranean. When
you sit back and admire the sea view before you, it’s even easier to
be transported to Italy. The superbly stylish setup with its
expansive wooden deck and atmospheric lighting all help to
achieve a smart but laid back holiday vibe.
Why I chose this dish
I am from Sicily and my dishes are authentically Sicilian. I love the fresh flavours of the
sea and fruiti di mare is a famous and favourite Italian staple. Pesto has a wonderful
position on the seashore so I want to create dishes that suit the setting while also
conjuring up the idea that you are in the south of Italy.

You’ll find yourself feasting deep into the night at Pesto. Chef Giuseppe’s favourite dish is the filletto di salmon mondello.
Marinated in lemon juice and olive oil, pan-fried and served with a topping of garlic, onions, capsicum, zucchini, celery
and cherry tomatoes, it’s a zesty, zealous dish.
You’ll need to undo your belt another notch in order to fit in dessert. The Triogia Pesto, a trio of cannoli with creamy
ricotta and pistachios, a velvety cassata and a fresh fruit salad is definitely worth it: a seductively sweet ending to a magnifico evening.

To make the pizza dough, knead the flour, water, yeast, olive oil and salt in the mixer and divide into 220 grams of dough.
Place in the cooler for improving (for fermentation) for a minimum of three hours then roll out with the tips of the fingers
to make pizza base. before placing the toppings on pizza dough need to sauté all mixed seafood in olive with chopped
garlic.
Spread the tomato sauce onto it. Lightly sauté the mixed seafood toppings in olive oil with chopped garlic and place
on top. Sprinkle with cheese. Bake for approximately seven minutes until it is slightly crispy on the sides and cooked
underneath.

There’s a fresh quality about the design of seafood restaurant Samakmak that you just
know is going to transfer to the food.

In complete contrast to the palatial hotel, Samakmak, a recent
addition to Al Hamra Palace Beach Resort, opts for a cool, laidback
vive: think charming Caribbean wooden beach house
and soothing white nautical-inspired décor.
Not only does Executive Chef Rohan Bastian pride himself
on the straight-from-the-sea fish that they serve, the Arabic bread
is freshly baked on a traditional oven outside, meaning that it is
delivered to your table piping hot.
With all the buzz about overfishing and sustainability, it’s often
difficult to know exactly what is and what’s not acceptable to eat
nowadays, especially given that the Gulf’s one-time favourite fish,
hammour, is now on the endangered list. It’s therefore a relief
to learn that Sea bream is totally fine to consume, which is just
as well as it is Smakmak’s most popular dish.
The Two Bar Sea bream, which likes to hang around the reef at
depths between two and 20 meters, is called Faskar in Arabic.
Prepared with love and care as well as with traditional Arabic flair,
the fish is presented whole, complete with eyes and tail. But don’t
let that put you off as it has been poached to perfection and the
mild, fragrant meat slips of the bone with alacrity.
Arabic flavours shine through courtesy of the sumac, coriander
and cumin in which the fish has been marinated as well as through
the side dish of peppery rocket salad. Served on a bed of braised
potatoes, these are soft and flavoursome. To add extra gusto to the
dish, there’s a side dish of spicy capsicum and tomato sauce.
While this hearty dish is a fully comprehensive one, not all the fish
dishes come with accompaniments so you’d do well to check with

Why I chose this dish
Sea bream is a famous fish found in the Arabian Gulf, Indian and Mediterranean Oceans and the Caspian
Sea. Because it is so prolific, most guests know of this fish and it is popular for its mild flavour.
Importantly, it is not overfished, so it is sustainable – especially the Two Bar Sea bream. Interestingly
the colour of Sea bream changes according to which ocean they originate from.
Samakmak promises to deliver fresh seafood to its guests and to give them a memorable experience.
My Sea bream with potatoes and rocket salad served with a spicy tomato sauce is by far the most
popular dish. I think this is because it has distinctly local flavours. Not only is it authentic,
it is also delicious.

your waiter when you order. The Snapper, for example, (also on the
‘safe’ list), which is fried until it is golden and attractively presented
in a basket, is delicious – crisp on the outside and flaky within – but
it is not a balanced dish and would benefit from some starch
and a bit of greenery.
To start your meal you’d do well to order the fried prawns, also
served in a paper-lined basket. A generous portion, the plump,
pert prawns are meaty and wonderfully al dente. Aside from the
conspicuous lack of sides with some of the dishes, the portions
here are exceedingly generous so if you share a starter, you’ll still
have room for dessert.
The chocolate molten cake which came recommended is like
a posh Terry’s chocolate orange, only darker, gooier and richer.
Perched above a pool of orange infused sauce, as you crack
open the cake, decadent larvae-like liquid oozes out. It tastes
like Christmas.
• 300g cleaned whole fresh Sea bream
• 8g Sea salt
• 10g Red chilli flakes
• 20g Garlic, finely chopped
• 1 Onion chopped
• 1 Tomato deseeded and finely diced
• 1 Bunch of baby rocket leaves.
• 30g Sumac powder
• 3 Potatoes peeled and sliced to 2 cm thick
• 100g Vegetable mirepoix (White onion, leeks, celery)
• l cup Fish stock
• 7g Whole pepper corns
• 40g Tomato paste
• 30g Red and yellow cherry tomato
• 1 Lemon
• 60ml Extra virgin olive oil.
• 5g Cumin powder
• 5g Coriander powder.
• 3 Red, green and yellow capsicum deseeded and diced
into medium sized pieces
• 30ml Fresh lime juice
• 3 Canned, peeled tomatoes
• 1⁄4 Cup tomato juices from can, puréed
Directions
• Take the whole fish and score in three places. Marinade with15 ml lime juice, 8g sumac powder, 6g chopped garlic, cumin, coriander powder,
salt and pepper to taste. Keep aside for about 20 minutes for the marinade to absorb into the fish.
• Mix half the chopped onion and tomato with the rest of the sumac powder and season with salt pepper 10 ml olive oil and place aside.
• Arrange the sliced potato on a baking tray. Spread mirepoix and pepper corns over the potato and then place the fish over the potato
and mirepoix mixture.
• Mix fish stock and tomato paste together pour over the fish and mirepoix until cover fish with stock. Finally, cover the mixture with a baking paper.
• Heat the oven for 220 C and braise the fish in the oven for 20-25 minutes.
• In the meantime take remaining onion and garlic and sautée over medium heat. Add the capsicums and remaining tomato, the peeled tomato
and the tomato juice and cook for 15 minutes. Add chili flakes and season with salt and pepper.
• Mix remaining lime juice and olive oil and season with salt and pepper set aside.
• Take out the fish once it is cooked. Arrange the potatoes overlapping each other on the plate and place the braised sea bream over the potatoes.
• Set the rocket leaves on the side and sprinkle with olive oil and lemon.
• Serve with the spicy tomato and capsicum sauce with a grilled half lemon.

Most definitely. The Waldorf Astoria Ras Al Khaimah’s Moorish

What do you love most about working
in Ras Al Khaimah?
Having opened Hilton Ras Al Khaimah as the first hotel in the
emirate back in 2001, I knew this city would have bigger plans
in the foreseeable future and it’s been a wonderful experience
being part of this growing tourism development.
Even to this day, I still love the journey to work; we don’t have the
traffic and congestion of Dubai so it’s always a short trip to and
from the office. There is a sense of calm in our hotels – most guests
are visitors from Europe enjoying a weeklong break so they are very
much in holiday mode and this vibe is prevalent.
How is Ras Al Khaimah developing to become the
new hotspot in the UAE?
The unmatched natural beauty of Ras Al Khaimah includes
64 kilometres of sandy beaches great for water skiing, scuba
diving and parasailing, mountains in the horizon, vast desert
plains perfect for desert safari, dune bashing and nature watching
and the green belt in the southern region. With a favourable
geographical location convenient for Dubai Airport and being
close to the lively city of Dubai and the friendly welcoming Oman,
it’s easy to travel around with excellent infrastructure. RAK is well
connected to most of the neighbouring countries and other
emirates by air, sea and roads.
There are also several museums, forts and palaces that depict the
emirate’s rich culture and heritage.
Then there’s the first man made island in the emirate, Al Marjan
will feature high end hotels including our new DoubleTree by
Hilton Resort Marjan Island, set to open next 2014.
What type of guests do your current hotels attract
and whom are you targeting?
The hospitality industry and government have successfully
combined efforts to promote Ras Al Khaimah as a global
destination and it is fast becoming one of the region’s top
destinations for both leisure and MICE, primarily for the quality
of its tourism and hospitality industry.
It reached the one million visitors mark back in November 2012
from various source markets including Russia, the UK, Italy, Ukraine,
and Czech Republic, with Germany as its strongest market
followed by the UAE and Russia.

The hotel, scheduled to open at the end of 2013’s second quarter,
will be part of a luxurious development which includes an 18-hole
championship golf course, a 350-metre private white sandy beach,
a number of outdoor temperature controlled swimming pools,
a huge kid’s area with its own swimming pool, a helipad, tennis
courts and water sports activities. There are also ten restaurants
and bars, of which four will offer fine dining in an entirely different
league to what is currently available in RAK and a sleek and
sophisticated spa, making the hotel the ideal location for both
domestic and international guests looking for a secluded oasis
of relaxation.
It is already observed as the signature hotel of this emirate and the
concept is to blend Arabian heritage and modern elegance. This
particular Waldorf Astoria is inspired by palaces in the Arabian
Peninsula so all 346 rooms combine that luxury into spacious
rooms of up to 170 sq meters size, with lavish amenities
and fantastic views of the Arabian Sea.

What’s your favourite restaurant in Ras Al Khaimah
and why?
Piaceri da Gustare at Hilton Ras Al Khaimah Resort & Spa is the only
Italian fine dining restaurant in the city and the extensive authentic
menu is impressive. The knowledgeable waiters are quick to
suggest dishes that will suit your tastes and cravings. The menu
has all the authentic basics, but seasonal ingredients are also
incorporated into new dishes, so I always look forward to dining there.
What do you do in your spare time?
I’m a regular at the gym and fitness also translates to my weekends
of wake boarding, beach volleyball with family and friends,
and a quick game of football every now and again. I like to stay up
to date with current affairs so I read a lot.
Whilst I do travel for business quite often, I enjoy travelling with
my family especially to Italy and Egypt where my wife and I are
from; the kids enjoy the big family reunions. Not many people
know this but I enjoy cooking too. My favourite part of the house
is the kitchen, and I love cooking while watching TV.
What’s the best part of your job?
That every day is different. I am currently responsible for four very
different hotels as well as two new openings so the requirements
vary according to the different hotels.
