Compass is a bottle conditioned sparkling ale
brewed with rose hips. This light straw colored ale
is very high in bitterness, with crisp biscuit
overlaying fresh tropical citrus in flavor. Expect
aromas of black pepper and floral notes from the
addition of rose hips.

The India Pale Ale we brew is
our version of a brewing legacy.
IPA’s name hails from its colonial
roots. British soldiers in India didn’t
have access to fresh beer, and
the malty ales they attempted to
take onboard their ships would
soon go stale. By adding generous
amounts of hops, they found the
beers would better survive the
voyage, thus a new style was born.
It is a beer with a vigorous hop
profile, well-balanced malt
background,
and
medium
body. At Southern Tier, our IPA is
an intrepid ale, triple-hopped on
its journey to your glass for a truly

Hearty
malts meld with a subtle balance of
hops to create a dark and nurturing ale of comfort and complexity. Hints of bittersweet
chocolate and espresso fill the tongue, finishing with just
a touch of smoke. Not too sweet or filling, this versatile

Double Milk Stout
Brewed with 2 Varieties of Hops and 3 Types of Malts
Milk
stout, also called ‘cream’ or ‘sweet’ stout, is
a stout containing lactose, a sugar derived
from milk. Because lactose is unfermentable by beer yeast,
it adds sweetness and body to the finished beer. Milk stouts
have been claimed to be nutritious, and were marketed as
such in the early 1900s with claims that would make the
FDA wince. One ad read, “Ideal for nursing mothers, for the
healthy, for the invalid, and for the worker.” Surely!
Of course, we couldn’t stop at a traditional milk stout.
Ours is a double, an addition to our 2X line, and at 7.5%
abv is every bit as delicious as it sounds. To your health!

Double Milk Stout with

Espresso
is a drink that is not for the faint
of heart. Pulling a perfect shot
is as much a science as it is an art form. Come to think
of it, the same can be said for brewing beer. Of course,
both coffee and beer have certain, shall we say, ‘uplifting’
qualities. To combine the two is a natural progression. Our
2xStout is considered by many to be a perfect milk stout. We
started with that in mind, and added espresso beans and
lemon peels for a true Italian style pick-me-up. The result is
a stout so black, so rich, and so creamy, it’d be at home in a
café served with biscotti. Yet, it’s beer. Che bellezza!

Double Spiced Ale
Brewed in the Tradition of Swedish Glögg
Swedish
flags are a fairly common sight in
our part of the country. Holiday
parties often have warm concoctions of spices and booze at
the ready to knock the ice off of toes while raising spirits.
We were inspired by a “Glögg” party, deciding on the spot
to brew a beer that pays tribute to this Nordic tradition.
2xMas Ale combines traditional brewing ingredients with
figs, orange peels, cardamom, cinnamon, clove and ginger
root. It’s a holiday addition to the 2X line and another
reason to toast to the season, but unlike Glögg, we recommend serving this one chilled.

In Germany, brewers have made “bock” beers for hundreds of years. These
are dark, malty, lightly hopped beers first brewed in the 14th century in
the town of Einbeck. Funny thing about this town’s name – when the style
was adopted by brewers in Munich, their
Municher accents pronounced “Einbeck”
as “ein Bock” which is German for “Billy
Goat.” True story. To this day, many visual
puns using goats have adorned labels of
Bock beers.

Tier de Garde is a Belgian Style India Pale Ale brewed with
grapefruit peel. It is the third in our acclaimed 750ml Belgian Style
series. Akin to a Belgian Tripel crossed with an American IPA.

ABOUT THE BEERS
BREAKFAST: Cascade hops have been a staple of
American craft brewers since the 1970s and have a
flowery, spicy and moderate citrus characteristics.
SUPPER: Columbus hops are pungent in aroma with
high amounts of oil and make excellently bittered ales.
DINNER: Centennial hops have been in service since
1990 and are less citrusy than Cascade.
