Cracked crab, johnny cake, conch salad (with extra hot flavoring) and guava duff are just a few of the delicious treats awaiting you in The Bahamas. Enjoying an island beer, frozen cocktail or locally- produced rum will amplify the experience, so turn to page two to learn more about the culinary delights of the islands! Laughter is brightest where food is best. – Irish Proverb A Bahamian Food Primer Caribbean food is an exciting gastronomical experience, and the variety to be sampled from island to island is amazing. Those of us who eat jerk chicken and think we’ve experienced the “island ting” are cheating our taste buds of exposure to a thriving food culture. Have you ever eaten freshly picked spondias, mangoes or papaya , or joined an older Bahamian in a bit of iguana (now considered endangered)? Just as Jamaica is known for its use of jerk spices, Trinidad for its curried crab and goat, and Granada for “oil down”, the Bahamians have put their individual stamp on traditional Caribbean cuisine. And it is delicious! Bahamian meals often begin with a soup such as fish stew, conch chowder or callaloo (leafy vegetable soup), or a just-off-the-dock raw conch salad, famed for its spiciness and flavor. Seafood obviously figures in the Bahamian diet and anything that can be caught is fair game for frying, stewing or baking (but you might want to pass on the barracuda). The national dish is conch which is prepared in a variety of ways including steaming and deep-frying (aka cracked conch or conch fritters). Crab, bonefish and red snapper are popular; fried grouper fingers may be one of the most heavenly things on earth! Side dishes are varied and flavorful, with the ubiquitous peas ‘n rice leading the way. As a side note, the name for the stray dogs inhabiting Nassau is “potcake” (as in the scrapings from the bottom of the peas ‘n rice pot). Plantains, macaroni and cheese and cassava bread are also popular. Guava duff is a unique Bahamian dessert treat made of guava folded into a pastry shell.; other popular dishes include soursop ice cream and anything featuring coconut or papaya. Bahamian beverages are frosty, potent and delightful. Non-alcoholic choices include Goombay Punch (a sweet soft drink) and coconut water. Rum is a key ingredient in the popular drinks Bahama Mama, Yellow Bird and Goombay Smash and the favorite local beers are Kalik (named for the sound made by Junkanoo bells) and Freeport’s Sands. On your next trip to Club Land’or be sure to visit our award-winning Blue Lagoon Seafood Restaurant, but make it a point to visit local eateries such as the Fish Fry on Arawak Key or Traveler’s Rest on the West End for more Bahamian delicacies! Easy Bahamian Grouper Fingers This affordable dish serves 6 and can be served with dipping sauce or on a bed of greens in a salad. Enjoy! 2 pounds grouper filets cut into finger size portions 3 eggs 2 tbs flour 1/4 tsp baking powder 1/2 cup evaporated milk 1 1/2 tbs grated coconut Cracker meal (Ritz crackers may be substituted, about 30) Minced hot pepper, lemon juice and salt ******** Marinate fish in hot pepper, lemon juice and salt for one hour Make a batter with ingredients 2 through 5 (eggs - coconut) Dip fish in batter and roll in cracker meal Deep fry in hot oil ******** Dipping Sauce In a small bowl, combine 1/2 cup mayonnaise , 1/2 cup grated onion , 1/2 cup dill relish and 1/2 teaspoon of dill. Season to taste with lemon juice, salt and pepper. Just In From TripAdvisor Club Land'or is the best place to stay in Paradise Island for your money, and it is directly on the Marina. What a view! I am always very relaxed when I stay at Club Land'or. I have been staying there for the past ten years, and have always enjoyed my stay.……...The Housekeeping Supervisor is always available if you need additional items in your room. If you are looking for a quaint boutique timeshare to purchase where people remember your name and treat you like family, I highly recommend that you consider Club Land'or. My next visit will be for two weeks instead of one week. One week is too short:-) I almost forgot to mention the Blue Dolphin Restaurant [sic]. You have to try the seafood, and if you are there on Thursday listen to the jazz at 8pm.
