HANDLES:
Ergonomically designed for comfort and control.
BLADES:
Rust-resistant, stainless steel and hardened to a Rockwell
C-Scale Hardness Grade of 52, they are harder than almost
anything you cut which allows each knife to keep its edge
sharp and ready to use every time.

Each Slicer blade has small stipples (teeth which extend
beyond the Miracle Blades' exclusive convexor edge). These
are incredibly hard and designed to cut through bone, grizzle,
and cartilage. Sandwiched between every two stipple teeth
is the heart of the cutting edge: the specially designed convexor edge. Similar to a straight edge but with a slight convex
shape, it slices through almost any food like a hot knife
through butter. The stippled edge protects the convexor edge
so you get a knife that never needs sharpening. The All
Purpose Slicer and Rock ‘n Chop are also hollow ground on
each side so they're perfect for lefties and righties.

ALL PURPOSE SLICER
Always remember that not every blade is meant for every kind of cut. By using the correct knife you
will see how easy it is to cut, carve and slice.
Use this blade for most carving, slicing and frozen foods.
Slicing:
Use light downward pressure and long even strokes. Let the
blade do the work.
the back of the blade and draw straight towards yourself to set
a groove. Use long easy strokes and be careful. Try using a
hand towel to hold food as frozen foods may be slippery.
Carving:
This is the hard one for most people. Point the tip on a slightly
downward angle and cut against the grain of the meat. Use
long even strokes. When cutting roasts, chicken and turkey,
allow the meats to sit for 10 to 15 minutes after coming out of
the oven.
Breads and Cake:
Use light, even and long strokes. NEVER PRESS DOWN. Let
the knife do the work.
Frozen Foods:
You are cutting a block of ice. Pick your spot. Start the cut from
Great for:
• Carving meats • Slicing breads and cakes • Slicing tomatoes,
watermelon and pineapples • Cutting frozen foods
ROCK ‘N CHOP AND CHOP ‘N SCOOP
ROCK ‘N CHOP:
Our most unique knife. The blade is curved so you can use the
front edge for slicing and the back end for chopping. The control ball is placed so when you hold it, your hand is centered
over the foods for easy cutting and perfect handling.
Chopping:
Place knife where you want and press straight down. You can
also try rocking the blade back and forth to chop and julienne
your food. Hold the handle only to use like a cleaver. For slicing, push down, pulling slightly back at the same time.
Great for:
• Cutting ribs and chops • Chopping tuna, chicken and turkey
for salads • Chopping cabbage, celery or any hard vegetables
• Cutting frozen sausage • Cutting fresh herbs, spices and nuts
CHOP ‘N SCOOP:
A perfect compliment to our Rock 'n Chop. It has the control
ball and a straight edge for chopping and mincing. It's flexible
and works like a spatula for scooping up food and placing it
right into the pan.
Great for:
• Mincing herbs • Cutting frozen cookie dough and sausage

F I L E T:
A great knife for filleting and boning. It's flexible so just run it
between the skin and the meat of the fish. A slight movement
back and forth and you'll filet like a pro.
Great for:
• Deboning chicken • Skinning fish
P E R F E C T I O N PA R I N G K N I F E :
A terrific little knife with an inward curving blade for easy
peeling and precision slicing of vegetables and fruits.
STEAK/UTILITY KNIVES:
Great for cutting meat and doing light utility jobs around
the house.
PERFECTION SHEARS:
A great pair of all-around kitchen shears for cutting chicken,
snipping flowers, opening bags. The handle can be used to
assist with hard to open bottle caps.
KNIFE USE AND CARE
• Always handle with care and keep out of the reach of
children.
• Always wipe your hands clean from grease, animal fats
and oil before use.
• Store your knives in a knife block to reduce the risk of

dishwasher used, put big knives on top rack, small knives
in silverware tray blade down. Never use sanitize cycle.

TONY’S STUFFED CHICKEN ROLLS
(This one takes time but is well worth it)
6 (8-ounce) boneless chicken breast halves
1/8 cup finely chopped sun dried tomatoes
1/2 pound thinly sliced baked ham
12 ounces low fat ricotta
6 ounces drained feta cheese
1/4 cup chopped herbs; parsley, tarragon, basil, oregano
1/4 cup pitted calamata olives
1 cup all purpose flour
1 cup seasoned breadcrumbs
3 eggs
2 ounces good olive oil
Salt and ground black pepper
Use the Filet knife to butterfly each chicken breast. Place plastic
wrap over each slice and pound thin. Set aside. (Be sure to
clean cutting board well when working with raw meats.)
Using your Chop 'n Scoop, finely chop all herbs and scoop into
medium mixing bowl. Combine ricotta and feta cheese with
chopped herbs and mix well. Fold calamata olives and sundried tomatoes into mixture. Place one slice of ham over each
chicken breast. Roll tablespoon of mixture into ball. Place on
top of ham and lightly pat, spreading almost to each end.
Leave about 1/2 inch on each side. Season lightly with salt and
pepper to taste. Roll chicken over mixture, tuck in sides and

chicken breasts. Set aside. Place flour and bread crumbs into
separate bowls. Mix eggs together until blended well. Place
each chicken roll into flour, then egg, then breadcrumbs. Place
onto glass plate and refrigerate for 1 hour.
Preheat oven to 350 degrees. Place olive oil in a large skillet and
heat to almost smoking stage. Carefully place each chicken
breast into hot oil and brown on all sides. Remove and drain on
plate with paper towel to remove excess oil. Place chicken rolls
into lightly greased baking sheet and bake for 15-20 minutes.
Suggested side dishes: Steamed buttered asparagus and rice
pilaf. Servings: 6-8

salmon filets in pan. In a medium microwave safe bowl, melt
butter in microwave. Add juice of lemon, lime and Tabasco®
sauce. Mix well. Coat each salmon filet generously. Sprinkle
chopped dill over each piece. Bake in oven for 12-15 minutes.
Put oven to broil and finish by broiling until top of salmon is
golden brown. Servings: 6
Suggested side dishes: Fresh sautéed spinach and buttered
parsley potatoes.
JUICER INSTRUCTIONS
• Only use fresh fruits and vegetables.
• Cut thick skinned fruit (oranges, lemons, limes, etc.) in half.
• Place 1/2 fruit in lid. Starting on a slight angle to get the fruit
started, rotate and press out juice.
• You may also press juices from berries (strawberries, blueberries, red currants), even melons (honey dew, cantaloupe,
watermelon, etc.), but be sure and cut into small pieces.
• With whole fruit like an apple, begin twisting on an angle so
the blades slowly begin to work into the fruit, otherwise it may
not juice properly.
Pour, store or drink right from the cup. Try mixing different fruit.
To prevent vitamin and mineral loss, juice should be immediately consumed. Enjoy!
Cleaning:
Wash and rinse by hand to help get rid of pulp, but the juicer is
dishwasher safe.
