After the choice of the best pieces we proceed to the “churning” of the product together with a part of ingredients and flavours. The coppa is then laid in stainless steel tanks where it rests for 20 days with continuous mixing. Once the 20 days have passed, the meat is inserted in the gut (bovine bladder), harnessed and bound: the product is then ready to be dried and then seasoned.
