This is the flagship of the company.
This salami is made with lean meats and mixed with lard
cubes. Seasoned following an ancient home recipe according
to the customs of Romagna. Cold meat, wrapped in a “kind”
hand-tied gut. Matured for at least 60 days.
The smell is inviting, with a delicate scent
given by a mixture of homemade natural flavours.
The flavour is typical of the Romagna region; tasty,
not too fat, free of foreign, metallic or overly acidic ingredients.
The appearance is typical of a 1 kg salami seasoned
with a “Gentile” gut. The rustic look is due
to the natural mould that covers it. Long cylindrical shape.
Inside, the salami features evenly
distributed fine-grained fat.

Coppa Stagionata
The traditional DelVecchio coppa is selected
from pigs dissected directly on the factory.
After the choice of the best pieces we proceed
to the “churning” of the product together
with a part of ingredients and flavours.
The coppa is then laid in stainless steel tanks
where it rests for 20 days with continuous mixing.
Once the 20 days have passed, the meat is inserted
in the gut (bovine bladder), harnessed and bound:
the product is then ready to be dried and then seasoned.
The curing of this product only consists
of salt-pepper without spices.
