Hanover Area Chamber of Commerce 3 The Pixie Restaurant and Lounge may be gone, but Pixie Dressing still has a life of its own. The sauce, a variation of Thousand Island dressing, contains copious amounts of mayonnaise, ketchup, oil and sugar. It's useful not just for salads, but fries, onion rings, burgers and any dish that needs a little zing. You can still find it at the Hillside Family Restaurant in York Springs, and a recipe for Pixie Dressing hangs on the bulletin board in the kitchen at the Hanover Knights of Columbus. The Pixie Restaurant, formerly located on the Carlisle Pike just north of Cross Keys, was a local landmark known for its steaks and the dressing that shared its name. With a 16-unit motel out back, it was built in 1960, closed in the late 1990s and was later razed. 4 Discover Hanover Magazine o other dessert embodies Pennsylvania Dutch cuisine quite like shoofly pie. The traditional “wet-bottom” shoofly pie has a gooey filling of molasses and brown sugar with a crumb topping. Shoofly pie uses ingredients that didn't need refrigeration and were kept on hand in the pantry. The finished product also does not need refrigeration. The name of the pie comes from the brand of molasses called for in the original 19th century recipe. Traditional Pennsylvania Dutch recipes are usually simple and call for readily available ingredients, says food columnist Elaine Nagle of Myerstown. She has been writing the Cooking Corner column in the Merchandiser for 19 years. “The Dutch are very frugal and thrifty. They use everything,” she said, adding that recipes came over with our German ancestors and were adapted to what was available here. Schnitz pie is another example of a dessert made over the winter with what was stored, and dried apples would have been a staple in a Pennsylvania Dutch household. The German word “Schnitz” means “cut,” and came to be applied to the sliced, dried apples. The dried apples are cooked to a pulp, combined with sugar and other ingredients and baked in a pie shell. Heather Sheppard Lunn of the Carriage House Market, 117 Frederick St., rear, Hanover, explained that this Pennsylvania Dutch delicacy is the traditional sweet of choice on the day before Lent begins. “It’s the last binge” before the “fasting” that ends with Easter. However, rather than the traditional yeast doughnut, the market uses a funnel cake-style batter sprinkled with powdered sugar. The fasnachts are preservative-free and made to order … and not just on Shrove Tuesday. She added that fasnachts are one of the ways that Hanover has kept its traditions that “give people a sense of place. It’s important.” Hanover Area Chamber of Commerce 5 Down Home Pennsylvania Cookin’ Whether it’s pahnhaus or scrapple, it’s good eats in Central PA. This breakfast favorite, served at home and restaurants, is made of finely chopped beef and pork, mixed with broth, cornmeal and seasonings. The mixture is put into loaf pans and chilled. Once set, the “loaf” is cut into slices that are fried and, according to Shane Nell of Wayne Nell & Sons Meats Inc., East Berlin, eaten with syrup. A similar treat is pudding, a looser version of scrapple, that Nell said his father likes with hominy—a dried and rehydrated corn. There’s also cornmeal mush that is like a “vegetarian” scrapple, although most recipes include meat broth. 6 Discover Hanover Magazine Hog maw is more than just a pig’s stomach in Pennsylvania Dutch cuisine. While recipes vary, most include sausage, potatoes, onions, cabbage and spices. These ingredients are stuffed into the maw (stomach), which is stitched closed and baked in the oven. Old-Fashion EATS Sending out an S.O.S. for chipped beef gravy Chipped beef gravy is an economical comfort food many Hanoverians of a certain age grew up with. Served for breakfast, lunch or dinner, this is dried beef in a white sauce made of butter, flour and milk. Chipped beef gravy on toast earned notoriety among members of the armed services for its euphemism, S.O.S., which has nothing to do with a distress signal. But no matter if you call it creamed chipped beef or creamed dried beef, it is traditionally served on toast, or alternately over biscuits or home fries. Pickled red beet eggs Pickled eggs aren’t a Pennsylvania Dutch invention but using beet juice (with or without beets) as part of the pickling solution that also includes vinegar, sugar and spices is. The peeled and hard-boiled eggs can remain in the vinegar solution (in the refrigerator) anywhere from overnight to a few months. The longer the eggs stay in the pickling juice, the darker red and more rubbery the “whites” will become. Usually eaten as an appetizer, these sweet-sour goodies can also be turned into a tangy deviled eggs. Chicken and waffles is a classic Pennsylvania Dutch food for both special occasions and everyday meals. This is tender stewed chicken in gravy and served over waffles -- not the dish involving fried chicken and syrup that is found in other parts of the country. The thrifty Dutch find it is a good use for leftover chicken. The delicious topping can alternately be served over biscuits or mashed potatoes. The culinary tradition is a long-time favorite of church suppers and fire hall fundraisers across Dutch Country. Hanover Area Chamber of Commerce 7 It’s a Wrap at Elsner Engineering Works If you have a can of wipes, or any other type of pop-up cleaning cloth in a small, round container, chances are it was processed on a machine that was manufactured in Hanover. Founded in Hanover in 1934, Elsner Engineering designs and builds machines for the packaging industry. Elsner-built machines are winding, packaging and folding all sorts of consumer roll products including aluminum foil, plastic wrap, gift wrap, wallpaper, baby wipes, fabric softener and fancy napkins as well as surgical drapes, gauzes and swabs. Elsner has earned a worldwide reputation for their converting equipment for the paper, film, foil and non-woven material industries. There are more than 2,400 Aluminum foil rewinder Elsner machines operating in nearly 60 countries around the world. The company has recently purchased two new pieces of equipment and enlarged its workforce by about 10 percent, resulting in an increase in production. “We're looking to expand what we do and do it better,” said Bert Elsner II, who became president and CEO in 2012 and is the third generation to lead the family business. Two new computerized numeric control (CNC) milling machines are the latest additions to Elser's assortment of mills and lathes. The Clausing mill works on three axis to drill flat steel. The V-Tech bridge mill also drills flat steel and is one of the few CNC bridge mills among area manufacturers. Both work more efficiently than the manual versions. With a substantial inventory of raw materials on hand, in the form of steel, stainless steel and aluminum, and 50 machine tools for metal working, Elsner is able to fabricate and repair parts for other local manufacturers. They have worked with McClarin Plastics, SKF, Hanover Pen, Snyder's-Lance and Schultz Foods. “So we can augment their maintenance departments,” Elsner said. The plant also includes an electrical shop, where they make their own computer controls, welding shop, surface painting shop and shipping department. The business has been located on Fame Ave.since 1969. Elsner Engineering Works, Inc. 475 Fame Ave., Hanover 637-5991 8 Discover Hanover Magazine Legacy of Excellence Customers know a Legacy product when they see it, and Paige Wingert, owner and president of the Hanover supplier of highquality custom headwear and accessories, plans to keep it that way. Even as the company at 300 Fame Ave., Hanover, has expanded its offerings from its traditional ball-cap lines into jewelry, footwear, and other accessories as well as most recently into home wares, the casual vintage-inspired look remains the same, giving all of Legacy’s products a distinctive look. Started in 1992 by Wingert and his roommate because they wanted a lowcrown wool baseball cap that mimicked the traditional cap, Legacy has had its ups and downs but now has firmly found its place. After getting a bachelor’s in business administration then his law degree, passing the bar and practicing law, Wingert eventually decided that Legacy was his passion and he’s never looked back. While the company no longer produces its well-known retro cap in wool, it is still about that classic look and feel, Wingert explained, with the low-profile ball cap remaining a best seller. From 1996 to 2000, the company made everything in-house, then as apparel prices dropped and outsourcing increased, Legacy had to make tough business decisions. Now the clothing items are produced overseas, with the decoration and design done in house, which means that Legacy can offer low minimum and small incremental orders as well as quick turnaround. The company’s 44,000 square-foot warehouse/factory houses seven embroidery machines—each valued at more than $100,000—that can process 15 hats at a time and a laser-bridge machine that “kiss-cuts” patterns for multi-colored designs on products. As a 50-state wholesale business, Legacy has two main channels of distribution: collegiate and its fast-growing resort/ destination market (such as Ocean City or any place people go to recreate). It sells to about 1,200 colleges and community colleges nationwide with Hanover serving as its base, offering a good pool of hardworking people, including productdevelopment and graphic-design teams. In addition to the clothing and accessories, last year Legacy launched a collegiate home-décor line with signs, paperweights, and picture frames. It’s done very well, according to Wingert. But even these products have the Legacy vintage, broken-in feel, from the distressed edges of the signs to the use of the retro/vintage mascots. “Vintage is timeless … classic,” Wingert said and is a large enough category that the company can weather any fashion trends and cycles to stay in business another two decades. Hanover Area Chamber of Commerce 9 Emeco Stands the Test of Time Emeco's tradition of craftsmanship, environmental responsibility and design began with a single purpose in 1944 and continues today. The Electrical Machine and Equipment Company -- Emeco -- was founded by Wilton C. Dinges when the U.S Navy gave him a tall order during World War II: Make chairs that could withstand water, salt air and sailors that were lightweight, strong and would last a lifetime. Emeco named the chair with a number, 1006, pronounced Ten-o-Six, although it is commonly known as the Navy chair. At the request of the Coca-Cola Co., Emeco created a version of its iconic chair made from recycled materials and the 111 Navy chair was launched in 2010. Each chair is made from 111 recycled Coca-Cola bottles. Emeco chairs, stools and tables are now purchased by clients and industries around the world and can be found in corporate offices, retail design, restaurants, casinos, museums, universities and airports as well as in dozens of movies and TV shows. 805 Elm Ave., Hanover (717) 637-5951 www.emeco.net The two-week, 77-step process of forming, welding, grinding, heattreating, finishing and anodizing an Emeco chair remains unchanged since 1944. The aluminum chairs have a life expectancy of 150 years and come with a lifetime guarantee. The government was the largest purchaser of the 1006 chairs through the 1970s. But as the military was shrinking during that era, so were sales of the Navy chairs. Jay Buchbinder bought the struggling company in 1978 and continued manufacturing at the plant. In 1998, his son Gregg Buchbinder acquired Emeco and repositioned the company to make furniture in collaboration with architects and designers like Philippe Starck and Frank Gehry. The church's famed Austin pipe organ, the eighth largest in the world, is undergoing a $1.3 million, multi-year total renovation. Scott Fredericks, minister of music at St. Matthew for 33 years, calls it a long adventure and expects the work to continue for a few more years. “This will make sure the organ is working well for the next 100 years,” he said. Constructed by the Austin Organ Company of Hartford, Conn., which is also undertaking the current renovation, it was installed at St. Matthew’s in the mid 1920s. Enlarged and rebuilt over the years, it now has 14,341 pipes. The new console, a year in the works, was expected to be installed this spring. When the project is complete, Fredericks said the instrument will be worth near $7 million. It will be modernized with user-friendly computer technology, he said. Fredericks previously hosted 50 to 60 bus tours a year for church groups, retirement homes and organ societies like the American Guild of Organists. Although tours are suspended for now, they will resume when the renovation is complete. “I already have a list of people waiting. They are eager to hear the finished instrument,” Fredericks said. Visitors will be able to see and hear the organ at Christmas concerts, special events and tours. The shop is well-known to weavers, hand spinners, felters, rug hookers …“anything fiber arts-related, we carry it,” explained Sara Bixler of Mannings. The business was started as a weaving school in the 1940s, she said, with retail items added for the students. Overtime more supplies were offered and the location expanded by subsequent owners. The latest, Carol and Ron Woolcock who bought the shop in 1985, expanded the display and classroom space to more than 12,000-square-feet. The classes are led by teachers from around the world and in-house instructors, such as Tom Knisley, Manning’s general manager, Bixler’s father and an internationally-known weaver, who recently released a new book on rug weaving. Customers and students regularly travel hundreds of miles for specialized instruction, as well as hard-to-find materials. Visitors can walk through four barns, two for stallions and two for mares and their foals, and along the surrounding fields. Gunjan Patel, a Shoe Farms guide, said the best days to visit are Tuesdays and Thursdays and the best time of year to see the mares and foals up close is in the spring, from March through May. The farm is open for self-guided tours seven days a week during daylight hours. Visitors arriving between 8 a.m. - 4 p.m. may encounter a worker who can answer some questions about the farm or the horses. The farm is located three miles south of the Hanover square on Route 194. The 60,000-squarefoot facility opened in March 2013 to serve all the company's lines, including Snyder's of Hanover pretzels, Lance sandwich crackers, Cape Cod potato chips, Tom's, Jays, Archway, Stella D'oro and more. The center contains a sensory lab, where Snyder's-Lance foods are tested against competitors' products and technicians seek a consistent quality for consumers, says Travis Grim, the director of research and development. Workers also test for quality and food safety across all their brands. Snyder's-Lance gets some help from area taste-testers -about 400 of them, Grim said, who sample foods and give feedback. Twothirds are nearby residents and the remainder are employees. “We want the community to be part of this,” Grim said. Anyone interested in becoming a taste tester can go to the website -- snydersofhanover.com -- and fill out an email form to apply. New recipes are also under development. Grim says creating innovative products is “a mixed bag of both art and science” for their food scientists and bakery technicians. The research and development building also houses some administrative offices and a health services center for employees and their families. The building was designed to be environmentally friendly and earned a LEED Silver Certification for meeting the Leadership in Energy and Environmental Design requirements for the construction and operation of green buildings. The Snyder's campus on York St. -- the manufacturing plant, support center and R&D facility -- receives 30 percent of its electricity from the company's adjacent 26acre solar panel field. Historical Society Houses History The Hanover Area Historical Society (HAHS) offers programs, house tours, and a lot more, including the Yelland Research Library, named in honor of the Yelland family. The library contains about 400 books on Hanover area history. There are several hundred collections sorted by subject or surname, and hundreds of unique documents, along with numerous special document collections. The library, located at 105 High St. (HAHS office), is open by appointment. Also, for a nominal donation, the volunteer staff of the library will conduct research for individuals. Originally a “dump,” the land was transformed into an arboretum in the 1920s by the Myers’ family. Currently, more than 50 trees and shrubs along with a bell tower populate the space. For a better understanding of the arboretum’s specimens, such as the unusual dove tree, the Hanover Area Historical Society holds a tree walk each fall. Dylan and Rachel Ellicott opened downtown's newest eatery in July 2013 in the Hotel McAlister, offering their own home-made breads, a fun menu, a cool industrial atmosphere and open mic nights. The lunch and dinner menu features burgers and grilled chicken breast sandwiches cooked to order and dressed with a variety of toppings. The menu is rounded out with wraps, salads, grilled cheese and all-vegetable sandwich selections. Both the home made potato chips and fries are liberally sprinkled with The Hub's own seasoning blend. The bistro, brew pub and catering business is owned by Keith and Melinda Stambaugh, who are planning an upcoming expansion. The Warehouse Gourmet opened for catering, carry-out and delivery in 2005. The bistro opened in 2010 with sit-down dining, and the restaurant's Upstairs Pub opened in 2012 after receiving a brewer’s license. Their brewer's license allows them to sell their own homemade beer and Pennsylvania wines. They offer local wines from Reid's Orchard and Winery, Adams County Winery and Allegro Winery and Vineyards. Keith says the Warehouse likes to offer a well-balanced variety of beers -- from pale ales, to porter to stout -- with eight on tap at all times. He names Leggy Blonde as the biggest seller, and noted it is their beer with the highest alcohol volume at 7.5 percent. Cezanne, Saison, a Belgian farmhouse ale brewed with orange peel, will debut this spring. Some new equipment, including a mash tun, which steeps the grain, has allowed them to increase production. Now customers can now get that beer to go. The Warehouse started selling growlers, which hold four pints of beer and can be filled for consumption at home. Stambaugh is also working on plans to expand the Upstairs Pub and brewer's room. The redesign would include a restroom and additional seating in the pub as well as allow them to have a separate mill room for grain storage and a larger walk-in cooler for the brewery. After graduating in 1949 graduate from the Eichelberger High School, she attended Carnegie Institute of Technology (today Carnegie Mellon University) and soon began a career that has spanned decades and had her working with Hollywood stars such as Meryl Streep, Jane Fonda, Nicole Kidman and Daniel Day-Lewis. Roth lives in eastern Pennsylvania, but recently visited as part of an exhibition of her work at the Warehime- Myers Mansion, 305 Baltimore St., which was organized by the Hanover Area Historical Society and spearheaded by volunteer Colleen Reese. Reese herself had three of Roth’s costume drawings, which inspired the idea for the exhibit. These along with others loaned by current or former Hanoverians as well as drawings and memorabilia that Roth shared came together for special exhibition. The pictures were “working” drawings with spills and stains and even sketches from actors that Roth was working with. Reese said that Roth didn’t value these sketches in of themselves but as teaching tools, evident when the costume designer spoke with students invited to the private luncheon during the Famous Hanoverians Come to Life in Downtown The Saturdays on Main Street (SMS) Committee, in collaboration with South Western High School students, transformed the Hanover Theater facade. Under the direction of Bob Glover, students completed the next art rotation, which feature’s “Famous Hanoverians.” This is the second series of artwork to adorn the Theater’s exterior. Previous art featured Civil War figures created by Hanover High School students. This initiative was created by SMS Committee Member Kristin Newman, Panebaker Funeral Home, as a way to beautify the downtown. In all, the sketches represented only 20 of the movies on which Roth has worked, including the Oscar-winning designs for “The English Patient” as well as films like “Mama Mia” and “Singing in the Rain.” Reese commented that it’s obvious that Roth “still enjoys designing” and added that she doesn’t do the work for the awards. In addition to her four Academy Award nominations, she has received four Tony The P ixie s Thre e Ha il from Ha nove r On a carport in Hanover in 1957, The Pixies Three sang and started what became a decades-long career as entertainers. By 1963, the trio of teens—Midge Bollinger Neel, Debby Swisher Horn and Kaye McCool Krebs—had signed a record contract and hit the Top 40 with “Birthday Party.” Quickly after, they released another chart topper, “442 Glenwood Avenue.” As this girl group found success, the music scene began to change and soon the Pixies Three called it quits. Then, Bonnie Long Walker (who replaced Midge when she left the group in 1964) and Debby were getting ready for their 25th high school reunion. They called up Kaye and begged her to perform with them. She said no; she hadn’t practiced in decades. They finally talked her into it, after they assured that they would only be lip syncing. Well, her friends had told her just a little fib. When Kaye got to Hanover, she found that her band mates had planned a four-hour performance and that it was sold out. Area Roots Award nominations for her costume designs for the stage and three Emmy Award nominations. In addition to the films represented at the exhibition, Roth has designed costumes for films, time periods and performances that are as varied as “The Day of the Locust” (1975), “Hair” (1979), “The World According to Garp” (1982), “The Birdcage” (1996), “The Hours” (2002), “Cold Mountain” (2003) and “Julie & Julia” (2009). That was the beginning of a rebirth for the group. Kaye said that the second time around they were even more popular, and for the next 20 years, the trio performed—in all its permutations with the four members. By 2010, their lives once again diverged and they retired. Through it all Kaye said that Hanover audiences have been kind and supportive. Hanover Area Chamber of Commerce 27 “Girl Interrupted” at Sheppard Mansion Hollywood came to Hanover in 1999 when a scene for the movie “Girl, Interrupted” was filmed at the Sheppard Mansion. The mansion's basement bowling alley caught the attention of a location scout for the picture. The film's crew was working at the former Harrisburg State Hospital when a producer contacted Historic York. “We got a call from Columbia Pictures,” said Kathryn Sheppard Hoar, owner of the Sheppard Mansion Bed and Breakfast. “At first I thought it was a joke.” The producer came down from Harrisburg, and Hoar showed him the bowling alley and other rooms at the 117 Frederick St. property. A brief flashback scene was also filmed while the crew was on location in Hanover, but Hoar is unsure if it made the film's final cut. But it was the bowling alley that earned the fame. The regulationsize lane has a gravity-fed ball return system and can be used for standard or duck pin bowling. The all-wood construction, from the tongue and groove lane to the wooden pins, makes quite a racket when in use, Hoar says. In the movie, Winona Ryder depicts Susanna Kaysen and the account of her stay at a mental hospital in the 1960s. The film also stars Angelina Jolie, Elisabeth Moss and Brittany Murphy. In the scene filmed here, the girls escape their ward at night and find a bowling alley in the tunnels under the hospital. The production spent five days at the Sheppard Mansion in the spring of 1999. The stars were filmed while bowling for most of an afternoon, Hoar said. 28 Discover Hanover Magazine Hanover has Grown a New Farmer's Market The Amish Markets at Hanover last December in a 50,000-square-foot former warehouse. The enterprise is modeled after the Markets at Shrewsbury, which has the same owners but features different vendors than the Hanover location. One of the owners, Joe Silbaugh, bought the building on Broadway about 15 years ago. “He was kind of waiting until the Golden Mile developed a little more,” said spokeswoman Tanya Querry of the nearby Eisenhower Dr. “It was the right time.” Fresh foods are prominent at the Amish Markets. Local produce is sold at Susquehannock Fruits and Vegetables and McGregor's Garden, which is also known for its stand at the Hanover Farmer's Market downtown. Stoney Point Farm Market offers meats, cheese and deli items as well as pantry staples, jarred goods and pet products. Shoppers can get a meal at Varsity Fine Delicatessen, Farmstead Fresh Foods, Pretzels Plus or Korean Garden. A Mexican restaurant is also planned. Shady Maple, known for its smorgasbord and farm market in Lancaster County, has brought its famous baked goods to Hanover. Pick up additional eats and treats at Amy's Custom Cakery, Hanover Coffee Co., Sharon Smith Sweet Shop, Shrader's Candy and Snacks, Amish Family Recipes, Adams County Winery and Seven Valleys Winery. The market offers a large seating area for diners. Amish-made furniture for the whole house, from dining sets to bedroom suites, can be found at Stoltzfus Furniture and Crafts. Note whether you will be charged according to weight, volume or count. York County farms offer seasonal PYO strawberries, cherries, blueberries, peaches, grapes, apples and pumpkins. The PYO season generally begins in mid-May with strawberries and runs through October with apple and pumpkin picking. 8. Walk in the rows; don’t step on plants. 6. Chestnut St. since 1933, the market includes 114 stalls with 34 vendors offering local meats, fruits and vegetables, dairy products, baked goods, flowers, candy, coffee and wine. In addition, there are two restaurants serving breakfast and lunch. Shoppers can also find crafts, jewelry, Tupperware, kitchen knives, Christmas lighting and clock repair. Approximately 1 mile of trail was created from Cherry Tree Court to Gitts Run Road in the plan to link Hanover to York using the 16.5-mile historic corridor that once contained York-Hanover Trolley line. The new Penn Township trail connects to another section that runs from Cherry Tree to Moul Field in the Hanover Borough. Together they create an out-and-back distance of just over a three miles. Designed for pedestrians and bicyclists, the trail passes along open fields as well as through the township’s industrial park. All of these sections of trail have built with cooperative partnerships among the state, county, local municipalities and volunteers.
