You know, the one that has the perfect atmosphere,

trade show. Each year SIA attracts 30,000 winter

Islandic wanted to rise above the noise at SIA
and create a one-of-a-kind event at which attendees
could get outdoors, experience the beauty that surrounds Denver, check out not-yet-released products
and enjoy live music. In short, Islandic wanted
to create a community within the larger SIA
community.
For its event venue, Islandic chose the crown
jewel of the Denver park system, Red Rocks
Amphitheatre. Red Rocks is located in Morrison,
a suburb of Denver located 20 miles southwest of
the city. Red Rocks isn’t the area’s newest park
(it’s been around for an estimated 250 million
years) nor is it the most modern (if you’re looking
for plushy padded seats that provide stellar back
support, you’ll be disappointed) but it is perfect…
in many ways.
Red Rocks sits at an altitude of 6,450 feet above
sea level—approximately 1,200 feet higher than
Denver—and gives visitors a stunning 360-degree
view of the Great Plains, the Denver metro area and

the Rocky Mountains. If you want to
sell winter sports as lifestyle, there’s no
better place to do it than Red Rocks.
The facility has a 30,000-square-foot
visitor center, which can be used for
indoor events, and a variety of other
unique spaces and outdoor plazas that
can also be used for smaller, more intimate gatherings.
But the real treasure of Red Rocks
is its 9,450-seat amphitheater. To get a
sense of what it’s like, picture yourself
sitting in the middle of a giant Frisbee with the stage
at the lower end
and two huge rock
formations, each
about the size of a
30-story building,
behind you. The

the world’s only
natural acoustically perfect outdoor
theater.
It’s because of
this perfection that
bands such as the Beatles, U2 and
The Moody Blues chose the facility to
record live albums. And corporations
such as Microsoft, Google, Genentech
and Merck have hosted private events
and concerts at Red Rocks, because it’s
unique and offers an outdoor musical
experience that can’t be duplicated
anywhere.
Sam Warren, Islandic’s manager
of promotions, says that he came up
with the idea for the SIA/Islandic event
several years ago, but because the city
owns and manages the facility, he
had to get city officials on board. He
was repeatedly told that opening Red
Rocks to 9,450 people, four bands and
winter sports equipment vendors in the
dead of winter wasn’t going to happen
because of the potential liability.
Warren was determined to host an
event at Red Rocks and spent almost
two years selecting the partners that
Islandic wanted as part of the event.
His big coup was signing with AEG
Live, the world’s largest producer
of live entertainment, to manage the
event. The partnership with AEG
Live helped convince the city that the
impossible might be possible.
The result, Warren says, was a
microcosm of what the winter sporting lifestyle in
Colorado is all
about. Islandic’s
partners created a
vendor village on
Red Rocks’ plaza
level where they
displayed current
and future model
skis, poles and
snowboards, gave
away samples and
actively engaged
in face-to-face
discussions with
customers to hear
first hand about
changing consumer tastes.
But what really helped build the
sense of community was a 100-squarefoot fire pit erected in the middle of the
plaza. People from all over the world
gathered around, roasted marshmallows, had some drinks and shared their
love of winter sports.
And as if the party on the plaza
wasn’t enough, Islandic booked four
bands to perform for the attendees.
Even though the nighttime temperatures dipped to a chilly 22 degrees
Fahrenheit, a few adult beverages,
a large bonfire and several hours of
music kept everyone warm.

The Learning Lab
Marriott opened a new Springhill Suites hotel in downtown Denver this past August. The 150room property, which took more than five years and US$45 million to complete, will feature 7,500
square feet of meeting space and nearly 500 pieces of original artwork. Ordinarily, news of this
sort would earn barely a mention in the local paper. But this hotel is unique.

It’s unique because it’s one of only 10 “teaching” hotels built
on a U.S. college campus—this SpringHill Suites property sits on
the campus of Metropolitan State University. Another unique
quality about the property is the way it’s staffed. Eighty percent of
its workforce is made up of students from Metro State’s School of
Hospitality, Tourism and Events (HTE). Working at the hotel is part
of the core curriculum for students majoring in HTE. The other 20
percent of the hotel’s employees are from Sage Hospitality, who also
serve as trainers and mentors for the Metro State HTE students.
The crown jewel of the property, for the students, is the
28,000-square-foot, super-high-tech Hospitality Learning Center,
which provides them with state-of-the-art classrooms and interactive labs. The students get hands-on F&B experience by working in
test kitchens where they learn food preparation and management
techniques. They’re also able to develop different menus and food

themes and test-drive the ideas with hotel guests.
The learning center also has a sensory analysis lab where the
students learn the differences between various types of beer, wine
and spirits and how to manage inventory. After all, a decent-sized
wine, beer and spirits collection can represent more than a $250,000
investment for a property.
The lab is outfitted with specialized lighting that can be altered
to simulate different types of indoor settings. It’s also completely
soundproof, has its own HVAC system and the room is equipped
with special tables that light up, enabling the students to study the
“legs” of different types of wine.
Dr. Chad Gruhl is an associate professor at Metro State and was
the project manager for the hotel’s construction. He says that teaching students how to closely manage a hotel’s F&B operation makes
good business sense.

“You need to know everything about the F&B business,”
he said. “For example, in a restaurant, there’s always a certain amount of employee theft. As the restaurant manager,
you have to let the employees know that you’re watching so
less is stolen. If they think you’re not watching, then stuff
will just constantly be walking out the door.”
Gruhl jokes that some students mistakenly think that
taking a class in wine cellar management will be easy. After
all, how hard can it be to sit in class and taste wine everyday?
They quickly realize, however, that the class has more to do
with chemistry, geography and the production of wine than
actual consumption.
However, not all the students’ time is spent learning how
to prepare meals and sipping wine. They also spend time
behind the scenes in the less glamorous side of the hotel
business by working with the housekeeping staff, where
they learn the proper way to change a bed and scrub a toilet.
While the students only spend a week cleaning rooms, Gruhl
says that week is important because the students have the
opportunity to learn, first-hand, one of the most important
aspects of hotel operations.
While it’s not mandatory to have a degree to work in
the hospitality industry, it’s advantageous if a student has
aspirations of climbing the corporate ladder, says Kara
Wolf, program director for hospitality leadership at Bradley
University.
“As hospitality companies become more global, they like
to recruit people that have gone to college [to study HTE]
because it shows a four-year commitment to learning the
different aspects of the industry,” Wolf said. “Turnover is a
very big issue in our business, so showing the commitment
to earn a degree shows that you have interest. But a degree
alone isn’t going to get you a job.
“In class, we not only discuss the theory and the big-picture types of things but we also try to do projects that can be
applied,” she continued. “There are also expectations that
students will find internships because we want you to come
back to class and say, ‘Oh I understand now’ when we’re
talking about human resource and labor laws (for example)
because you saw it in action.”
Another motivation for aspiring hospitality executives
to earn a degree in HTE is having the credentials to address
a growing concern among some industry watchers—succession planning. As baby boomers begin to reach retirement
age, it isn’t always clear who will take over the senior leadership positions within hospitality companies.

ARAMARK has announced plans to
eliminate all pork from animals bred
using gestation crates for its U.S.
operations by 2017. Gestation crates
confine breeding pigs 24 hours a day
during their four-month pregnancy.
Many farmers, animal scientists,
consumers and companies in the food
service industry are working to phase
out gestation crates and provide more
humane breeding. Nine states have also
passed laws banning gestation crates,
including Colorado, Ohio and Michigan.
To meet its goal, ARAMARK has
asked its primary pork suppliers to
develop plans for reducing, and then
eliminating gestation crates. In addition,
it will begin immediately requiring
new pork suppliers to provide a plan
that addresses how they will phase
out gestation creates to meet these
important goals.

with lots of good infrastructure, lots and
great experiences—and there is still luxury
to be a found at bargain prices for planners
who do their homework.”
Bennett is one of a compendium of veteran Colorado planners who all say their
business has bounced back in the past year,
in some cases to pre-recession levels.
“I think Colorado is really well-positioned to be the leading edge of a meetings
industry growth surge because it has lots of

For small groups seeking great scenery
in a getaway locale, Opa’s Taylor Hut, an
850-square-foot lodging at a 12,000-foot
altitude, 1.5 miles from the Taylor Pass
Summit near Aspen, recently opened as part
of the Alfred A. Braun Hut System around
Aspen. The three-bedroom hut rents for a
flat fee of $200 per night.
The Aspen Art Museum began construction of its new, 30,000-square-foot Shigeru
Ban-designed building in 2012. Opening of
the new building is scheduled for next year.
Elk Camp Restaurant, a $13 million,
scenic venue near the Snowmass Ski Gondola, opened in November. The restaurant
was built to LEED certification standards,
can handle groups up to 300 and offers
an outdoor dining area with sun exposure. Also in 2012, the Westin Snowmass
reopened after a $55 million redo.
Boulder
Boulder, about 50 miles west of downtown Denver and home of the University of
Colorado, is booming with tours, including
food tours, bicycle tours, guided walking
tours in historic areas and the most popular tours of all—beer tours of the city’s
14 microbreweries. A recent addition to
the beer tours is the Boulder Brew Bus, a
former school bus converted to look like
a mountain shack with wheels on it, with
entertainment touches like banjo music for
the tour participants.
Boulder’s B-Cycle bike-sharing system,
similar to the system in Denver, expanded
in 2012, and now offers 22 bike stations.
B-cycle is popular with groups in search of a
pleasant outing and a good “green” activity.
New to the area are three restaurants,
Bramble and Hare, Pasto Vino and Beehive,
plus a new microbrewery, West Flanders
Brewing Co. Opening this summer in the
Gunbarrel District in northwest Boulder
will be a new, 100-room Hampton Inn,
with a boardroom and conference center
for small groups.
Colorado Springs
Colorado’s second-largest city, about an
hour’s drive south of Denver and near one
of America’s most famous summits—Pike’s
Peak—is loaded with new group experiences for 2013. This summer Colorado
Springs’ Cheyenne Mountain Zoo opens
a new, $13.5 million exhibit, Encounter
Africa, featuring an amphitheater where
guests can see elephant training, enrichment
and husbandry. Also new is an exhibit for
the critically endangered black rhinoceros,
featuring a mud wallow and a new exhibit
area for African lions.
Participatory adventures await groups
who visit the newly opened Adventure
Out West Zipline course, with five zip lines
ranging from 225- to 650-feet-long, offering two hours of opportunities to soar over
the edges of cliffs in the Front Range of the
Rockies with impunity. Also open for stimulating outdoor adventure is the Manitou
Springs Incline, a former narrow-gauge rail
route that ascends 2,000 feet in less than
a mile. The incline officially opened for
public hiking in February. Also now open
for serious exercise enthusiasts is the Pike’s
Peak Highway, which now allows bike riders to ride up the roadway to the 14,115foot summit. Until recently, the route was
only open to bike riders who wanted to be
taken to the top by a van and then descend
on their bikes.
In Colorado Springs lodging news, the
venerable and historic Broadmoor Hotel,
one of the state’s most popular conference
properties for generations, is undergoing a
$60 million renovation, to be completed
in 2014, and the New Mining Exchange,
a Wyndham Grand Hotel set in a historic
building, opened in 2012 downtown with
117 upscale guest rooms and 9,000 square
feet of meeting space.
Estes Park
Surrounded on three sides by mountains
and adjacent to Rocky Mountain National
Park about 70 miles northwest of Denver,
Estes Park has a strong following for both
winter and summer events, including “ataltitude” training for runners and other
outdoor sports enthusiasts. A local entity,

Active at Altitude, has rolled out a group of
outdoor training workshops and seminars
at Estes Park for the spring and summer
of 2013. Another group activity purveyor,
the Rocky Mountain Nature Association,
is offering several outdoor experiences for
groups this summer in the region, including white-water rafting and classes on
“Thirteen Creatures You’ve Never Seen”
and “Secret Places in Rocky Mountain
National Park.”
Two hotels in town, the historic Stanley
Hotel and the Aspen Lodge, have recently
completed renovations, and in November, a
new restaurant opened—Picnic in the Park,
which offers gourmet sandwiches packed in
reusable baskets and backpacks, designed
for the great outdoors.
Vail
The world-famous ski resort community
celebrated its 50th anniversary and the
start of the 2012-13 ski season with the
opening of a new gondola in Vail City.

offers heated, cushioned seats and free
Wi-Fi. The new gondola is the fastest of its

Telluride
Grand Junction
The nearby town of Palisade added three
new wineries in 2012—Colterris Wines,
Hermosa Vineyards and Gubbini Winery—
bringing the total number of wineries in
the area to 21, further enhancing the group
wine touring activities in the Grand Junction area, which also include bicycle tours.
Bicycle tours for groups have long been
popular in the massive wilderness park at
the Colorado National Monument. Newly
added for groups is standup paddle boarding on local lakes.
Several group-friendly hotels completed
upgrades in 2012, including a $2 million renovation of the Doubletree hotel,
with new technology systems in its executive boardroom, and the addition of a
1,500-square-foot meeting room at the
SpringHill Suites.
