Ingredients:
• 2 to 4 eggs
• 1 tablespoon butter
• ½ cup 35% cream
• ½ cup Montérégie cider
• 2 slices of ham
• 1 French shallot or small onion
• Salt and white pepper according to taste
Preparation:
To make the sauce, fry the shallot in butter, add in the cider, reduce and then incorporate the cream. To make the poached
eggs, pour 2 litres of water into a large pot and bring to a boil. Add 100 ml white vinegar and some salt. Break the eggs into a
bowl and gently pour the eggs in the boiling water, one at a time. Poach the eggs for 3 minutes over medium heat. Remove
the poached eggs from the hot water and place them in a casserole dish on top of the ham slices. Top with cream sauce, place
the eggs into the oven and broil. Garnish with diced apples.

Prep time 5 min • Cook time 10-15 min • Recipe for 4 people
Ingredients:
‚‚3-4 kg fresh mussels
‚‚20 g of butter (about 1 1/2 tbsp.)
‚‚4-5 chopped shallots
‚‚1 cup of 35% cooking cream
‚‚1 cup of ice cider from Montérégie
‚‚2 sliced apples
‚‚1 tbsp of maple sugar
‚‚salt and pepper
Preparation:
Clean and wash mussels. Heat butter. Add shallot. Pour the mussels,
apples and ice cider, and then cream, salt and pepper. Cover and
cook 10 to 15 minutes. Sprinkle with maple sugar and serve.

French double-cut pork ribs with maple caramelized apple
Recipe provided by Hôtel des Seigneurs Saint-Hyacinthe • Yields six servings
Ingredients:
• 4 double-cut pork ribs
(225g each)
• Canola oil
• Salt and pepper
Sauce and side dish:
• 2 chopped French shallots
• 120 ml dry white wine
• Cortland apple (½ per person) • 120 ml maple syrup
• Pinch of powdered mustard
• 30 ml butter
• 175 ml demi-glace sauce
Preparation:
In a fryer, sear the pork chops over high heat. Season with salt and pepper. Bake in
oven for 15 minutes at 350ºF, then keep the pork ribs warm. In the same fryer, fry the
French shallots, deglaze with wine or cider and half of the maple syrup. Reduce by half,
add in the remainder of the maple syrup, a pinch of mustard and incorporate the butter
while whisking. Serve with a half-apple caramelized in maple syrup.
