To make the poached eggs, pour 2 litres of water into a large pot and bring to a boil. Add 100 ml white vinegar and some salt. Break the eggs into a bowl and gently pour the eggs in the boiling water, one at a time. Poach the eggs for 3 minutes over medium heat. Remove the poached eggs from the hot water and place them in a casserole dish on top of the ham slices. Top with cream sauce, place the eggs into the oven and broil. Garnish with diced apples. Heat butter. Add shallot. Pour the mussels, apples and ice cider, and then cream, salt and pepper. Cover and cook 10 to 15 minutes. Sprinkle with maple sugar and serve. Season with salt and pepper. Bake in oven for 15 minutes at 350ºF, then keep the pork ribs warm. In the same fryer, fry the French shallots, deglaze with wine or cider and half of the maple syrup. Reduce by half, add in the remainder of the maple syrup, a pinch of mustard and incorporate the butter while whisking. Serve with a half-apple caramelized in maple syrup.
