THE HEART-J BEEF STORY
Beef production has been a tradition at Sylvan Dale Ranch
since the mid 1960s, when Maurice and Mayme Jessup
bought their first herd of cattle. In the years that followed, they
developed a breeding program with registered Saler and
Gelbvieh bulls, resulting in a unique herd well-suited to the
grasslands of the Rocky Mountain foothills. Recently we
introduced Red Devon and Lowline Angus breeding stock,
known for more tenderness and higher weight gains on grass.
Today, our cattle free-range on adjacent forest land, as well as
our 3,200 acre ranch, over 80% of which is protected by
conservation easements. Our rotational grazing practices
stimulate vegetation regrowth and also help prevent build-up
of fuels on the forest floor thus reducing the risk of wildfire.
We are extremely proud of our herd and the quality natural
beef it provides. We invite you, by appointment, to tour our

Our bulk prices are based on actual package weight, so you know
exactly what you pay for. Unlike many beef producers, we charge by
actual weight of beef packages you take home. In the past, we also
charged by “hanging weight,” which is the weight of a side of beef after
slaughter, before it hangs in the curing room for 14-15 days. Hanging
weight prices appear to be low, but that’s because when the bone, fat
and trim is removed from the carcass, the weight of remaining beef
ranges from 62% to 69% of the hanging weight. For example, from a
side of beef with a hanging weight of 290 lbs, you’d get between 180 to
210 lbs of packaged meat. If you paid $4.32/lb hanging weight, plus
processing fees, your price per lb of take-home meat would end up
being between $7.05/lb and $8.18/lb. Given this variability, it makes
sense to price our beef by the actual package weight you take home,
which includes all the processing fees.
