Rice cooks up light and fluffy and has a nut like aroma and taste. Glutinous– also called sticky, sweet or waxy because of the texture, not because it contains gluten. Sizes of Rice Sold By Case Categories of Rice Long Grain—best choice for side dish or as a bed for sauces. Medium Grain—shorter and plumper, ideal for paella or risotto. Short Grain—almost round and slightly sticky. Perfect for rice pudding. Amylopectin—breaks down during cooking, becoming sticky. Amylose—does not break down during cooking and retains shape. Arborio Rice– best rice for pudding or a very creamy/sticky risotto. Brown Rice—retains the bran around the kernel. Chewy, nutty and nutritious. Calrose Rice—generally known as a medium grain California rice. Carnaroli Rice—best rice for risotto. Known as the “King of Rice's”. Converted Rice/Parboiled (Easy Cook)—tan in color, tastes like white, but has more nutrients; rice is steamed under pressure before milling (in the husk); making the grain harder and reduces the risk of over cooking. Enriched Rice—white rice to which vitamins and nutrients have been added. This rice should not be rinsed. Not as nutritious as brown rice. Golden Rice—genetically modified rice. Instant Rice—precooked and dehydrated, white rice. G L Paella Rice– Bomba or Extra. Risotto Rice—Carnaroli rice if you want traditional al dente, Arborio (or Vialone Nano & Baldo) if you want a creamier texture. Superfino—largest grain size for this type of rice. Example, superfine Arborio would be larger in size than regular Arborio. O Vialone Nano—round, short grain rice for risotto. White Rice– bran removed, very tender and delicate. Wild Rice—technically not a rice, but a grass. Also called Canada rice, Indian rice or water oats. A S S R Y ** special order item 5 Rice continued... Acquerello Carnaroli Rice—the “king” of rice. Estate-grown on the Colombara farm in the heart of Vercelli, Piedmont, Italy. Acquerello is the result of tradition and innovation. Traditionally produced without chemical fertilizers, the du Puy lentils are higher in nutrients due to their volcanic terroir. The soil also makes them darker green in color and gives them their mineral-rich taste. They are tiny and finer than regular green lentils (domestic or French). Harvesting them takes more time too as picking them too early prevents them from ripening properly. They are calibrated so that they cook up evenly and because they have less starch than other lentils, they cook up more firmly not mushy. You can see the difference when the lentil is dry and especially when it is cooked. Acetaia San Giacomo, located in the Reggio Emilia region of Italy, is where Andrea Bezzechi oversees the production of his aged balsamic vinegar. With great respect for the tradition and strict adherence to the true methods of production, the San Giacomo line is the true balsamic. The balsamic begins with only one ingredient, the cooked grape must of local Lambrusco and Trebbiano grapes. The grape must is cooked over open fire, and traditional wooden barrels of decreasing size and of different types of wood are used for the aging process. Acetaia San Giacomo has been recognized for their superior quality and pure line of balsamics. “Essenza”, their 8 year balsamic was awarded the silver Sofi in 2011. Orleans method can take from 30 days to several months or more and is aged wood barrels, leaving behind some of the “mother” for the next batch. Though these vinegars are not heated, they are diluted with water to balance their acidity (generally 5-7%). These vinegars are richer in flavor and color than commodity vinegars. Static Superficial or Naturally Oxidized is a truly artisanal method and goes steps beyond Orleans. First the vinegar is aged a minimum of 9 months, but typically around 1 year. No heat or water are ever added and the mother is not necessarily used in the next batch (that decision is up to the maker). Sometimes, even, the mother is removed during fermentation because it blocks contact with air and can cause unpleasant aromas and flavors. Because of this, each batch has its own identity. These vinegars are neither pasteurized or micro-filtered. All of San Giacomo’s vinegars are Static Superficial. Balsamic Reductions Balsamic Glaze—a good value balsamic flavored “sauce” thickened with added sugar, starch and color. Natural Rice Vinegar is made by the alcoholic fermentation & subsequent acetous fermentation of the rice grain by saccharification and adjusted with water to the specific strength. Rice Wine Vinegar is made from wine, then into vinegar. Seasoned Rice Vinegar has added salt, sugar and possibly msg. Banyuls vinegar is made from a fortified wine of Banyuls. Eighty grams of residual sugar per liter have been retained by adding neutral grape alcohol to stop the fermentation of the wine. This Banyuls of high quality is aged for 4 years in wood vats which are outdoors exposed to the climatic variations. This type of aging gives a wine with a burnt topaz robe and a woody and spicy nose, and it develops the famous "Randolf" aroma (fresh walnut and mint) that will be found also in the vinegar. The acetification transformation of alcohol into acetic acid is done by acetic bacterium carefully preserved in our vinegar factory for years. In order to get the reaction a great quantity of oxygen is required, which explains that the traditional Orleans process is called "of surface". Bacterium develop on only a few millimeters on the top of the liquid. This reaction is very slow. The process developed in Banyuls finds its inspiration in the Orleans process but the development of bacterium inside the liquid is accelerated thanks to a stirring system. The acetification takes place in one month. The whole difficulty of the operation consists in preserving in the vinegar the aromatic richness and the residual sugar, while at the same time presenting the regulation acetic degree of 6%. The minerals that have been removed are used for other commercial products like vitamins. “Kosher salt” gets its name from the term “Koshering” meat. The size of the grain is slightly larger than table salt and is uniquely light and flaky. A perfect, consistent salt for the kitchen hot or cold line. Because it is lighter in weight than table salt, you will actually use less. Some chefs prefer the taste of Kosher salt as it is not metallic like table salt.
